I'm looking for some great ideas for homemade meat (chicken, beef, fish) marinades. Anyone have something great? Please post both here and in the recipe section.
I love a mix of sugar free or reduced sugar apricot preserves, fresh crushed garlic, soy sauce, dry mustard powder and ginger. I use this on salmon fillet. YUMMMM. I've also used it on chicken. It gets raves from friends and family alike.
I mix balsamic vinegar and dijon mustard and use it on both chicken and pork. It was originally a WW recipe but I could never find the original recipe again.
1-2 tsp basil
1 T lemon pepper
1 tsp salt (which I often omit)
1 tsp pepper
1-2 tsp Italian seasoning
1 T parsley
1 T cilantro
2-4 cloves garlic, crushed
1/3 c soy sauce (this is why I skip the salt)
1/3 c vegetable oil
I put all this in a ziplock and mush it together and then put in the flank steak and marinate an hour or so. I discard the extras.
I combine lemon juice, a bit of olive oil, a ton of minced garlic, a tbsp of dijon mustard, a BUNCH of fresh thyme, and a few sprigs of rosemary. I throw the spent lemon halves in as well. Sometimes, if there isn't enough to cover the chicken or fish I'm marinating, I'll add some chicken broth to get extra volume. Soooooooooo good grilled!
