Breakfast Salad!!
I think I kind of "invented" a new recipe this morning. (maybe not, but I've never heard of it before!) I decided to do a phase one for a few days since I can't go to the gym.
Put a bunch of raw spinich in a bowl and add green onions, sun dried tomatoes, mozzarella cheese and a little turkey (I had smoked turkey)..or whatever vegs you have around or like.
Put a small pot of water on to boil with a lid and let it come to a very hard boil...then put 2 eggs in the water (if you use a spoon to put them in the water, they are less likely to crack) Let them boil for EXACTLY six minutes, remove from heat and run under cold water so you can handle them without burning your fingers. Peel the eggs and plop them on top of the vegs and then cut up the whole thing with a knife and fork....the yolk from the egg will make a "dressing" for it. Would be good with a little salsa too.
