South Beach Diet - Phase 2 Menu Thread - Mar. 20 - 27

Phase 2 chicks, why don't we post our menus here for support and constructive criticism. I know that posting my menu always helps me to stay on track during the day as I'm holding myself accountable to someone more than just myself!

Today my menu looks as such:

B: 1 slice ww toast; 1 poached egg; water
S: hard boiled egg; celery sticks
L: mexican chicken soup (basically chicken and veggie tortilla soup sans tortillas); carrot sticks; plain yogurt
S: raw zucchini; hummus
D: almond crusted dijon chicken; roasted broccoli; green salad; milk
S: jello

B - V8
L - Curried chicken (leftovers from last night), Spinach salad
D - Pork guisado (I don't know how to say that in English, but I think it's stewed) with steamed broccoli, whole wheat pasta
S - If I'm hungry, SF Jello pudding made with skim milk

Hmmm.... just plugged all of this into FitDay and it says my calories are at about 704. I'll have to play with this a bit.

L -- Large salad with kidney beans and chicken
S -- 2 T peanut butter mixed with sf maple syrup
D -- Chili
Dessert -- Jello with strawberries and coolwhip

Chelby - jello with strawberries is my new favorite! I mix strawberry and orange jello and add fresh strawberries as well. mmmm. I used to make strawberry jello with orange juice instead of cold water.

Is the ww cheese muffin recipe here?

i don't plan what i eat but eat almost the same everyday...i may post in evening after i know but heres a rough plan for today

b-2 eggs scrambled with cup veggies, 1 piece ww toast w/ sf peach preserves and 2 pieces canadian bacon
l-very large salad made with romaine, grape tomatoes, pepper rings, diced up canadian bacon and ff shredded cheese
s-celery with laughing cow
d-(probably) salmon, steamed veggies, sweet potato
s-apple and natural pb

Zeff -- The recipe is here called Muffins 7 Ways. I've made cheddar muffins and banana nut. They were both delicious.

b-high fiber cereal with nf milk, raw almonds and blueberries.
l-grilled catfish on ww sourdough with lettuce and tom, 1c veggie soup, salad
s-sf nf vanilla latte, then later an orange
d-soft taco ww wrap with lean beef ff beans, lf sour cream, nsa salsa, homemade guac, lettuce, tomatoe and onion lf cheese with a few baked tortilla chips and salsa

B - Oatmeal with Splenda, cinnamon, Tbs. almond butter, unsweetened vanilla almond milk, glass of V8
L - Huge veggie salad with 3 oz. salmon, boiled egg, 2 Tbs. SB ranch dressing, 6 oz. FF Greek yogurt, banana
S - RF cheese stick
D - Chicken breast, onion, mushrooms, peppers sauteed in olive oil
S - Ezekial bread with Tbs. almond butter

Alright -- last night was bad, but I am ok'ing myself because I was having one heck of a bad day.

Today is a good day, though.

B: 1 slice ww toast with a small amount of cream cheese, 1/8 of an apple sliced on top and a sprinkle of cinnamon; protein water
S: I probably won't have time for one, but if I do - cottage cheese
L: salad and hard boiled eggs
S: zucchini and hummus
D: tbd -- something with chicken.

B. Blueberry baked oatmeal topped with homemade SF FF mandarin orange yogurt. Odd combo, but so, so yummy.
L. Veggie omelet, 1/2 pumpernickel bagel with light cream cheese
D. Shirataki noodles and broccoli in peanut sauce
S. Not sure, but something chocolately

S: snack mix of dried mango, pineapple & edamame
L: brown rice, black beans, veggies (mostly broccoli & green peppers) & salsa unfortunately with a handful of full fat cheese from the mostly healthy restaurant in Newburyport
S: roasted garlic black olives
D: tomato roasted red pepper soup w/garbanzos

was running all day.

today is:

b-2 eggs scrambled in with veggies and 2 soy sausage links
l-large salad made with romaine lettuce, grape tomatoes, chicken strips, ff shredded cheese and mild pepper rings
s-celery and hummus
d-taco bake (i think...been craving it lately)
s-either jello or sf pudding

Heh, heh, heh..I was kinda bad this weekend (donut and s'more!! Yum!). I normally compensate by doing a phase 1.5.....cutting back on grains. With running, I do better by keeping fruit in

B: omelette with beans, cheese, and salsa
L: black bean and tomato salad (has onions and peppers too)
S: FF yogurt with dried cranberries
D: bbq chicken (vinegar based), cole slaw, deviled eggs, applesauce, and one more undecided veggie...

and I'm trying to work on my water intake by drinking a glass before work...otherwise I tend to have nothing but sipping coffee in the am...

Today was...
B: 2 eggs, 2 veggie sausage links(i usually add about 3c spinach but was out- went to the grocery tonight ;))
S: pineapple
L: leftover taco salad with crumbles, guac, black beans, and tomatoes no cheese
S: sweet potato chips
D: ww stromboli with green peppers, mushrooms, spinach, black olives, greek peppers, veggie meatballs and 2 servings of salad with TJ's RF cilantro dressing It was soooo good!

Calories came in right about 1200 today! Almost done with my water- chugalug...

Today was:

B: 5 strawberries, 15 blueberries, 1/4 cup granola, 4 tablespoons plain FF yogurt

S: String Cheese

L: SKIPPED! Egads!

D: Mexican at a restaurant. I did have a FEW chips but got the Fish tacos, didn't eat the tortilla, no rice, no beans. The fish was a salmon and I had some guac, salsa and lettuce on it. Pretty good. Slight off today. Hopefully no cravings tomorrow. I would normally have given in and had a beer, flautas, more chips AND maybe dessert so I am proud I stopped when I did. :lol3:

Snk - Cabot Cheese slice
Lun - Leftover cabbage casserole
Snk - Diet Dr Pepper (not common for me to drink soda but I was draggin' today :yawn:!)
Din - Mediterranean Chicken w/ green beans
Snk - Strawberries and NF plain yogurt

Having some stomach issues today, so not sure how much I'm going to be able to eat but this is what is planned..

B-Grilled Cheese on WW bread(needed comfort food) with a cup of tea w/ skim milk

S-pear and few almonds

L- turkey and swiss roll ups with green and red pepper strips

S-hummus and celery sticks

D-boneless pork chops marinated in balsamic vinegar with red peppers, onions, mushrooms, and a tiny bit of FF feta on top...spinach..and a salad with black beans.

If I want dessert..maybe a NSA fudgesicle.

Since my mom is in town, it's hard for me to eat when I should...she doesn't eat breakfast and doesn't really eat lunch (yet is quite overweight). I feel bad eating in front of her.

Thankfully her being here renews my commitment to my plan and exercise.

The whole grain brownies were really was really hard to limit myself to just one serving. I don't know if I'll make them again for that exact reason...maybe only on special occasions.

The scale isn't moving at all folks...I don't know what is going on. Someone take a look at my menus and give me some advice, please.

B: 2 hard boiled eggs; sauteed zucchini and mushrooms; chamomile tea
S: 1/2 c. plain yogurt with cinnamon and half apple
L: tuna salad made with a little mayo, celery, radish, parsley and white beans; cucumbers and tomatoes; slice of ezekiel bread; water
S: cottage cheese with cucumbers and celery; water
S: fenugreek tea with skim milk; triscuits
D: greek salad (romaine lettuce, cucumbers, tomatoes, broccoli, red onion) with 3 oz. chicken; greek vinaigrette; milk

Happy Friday all -

Zeff: Your menu looks so healthy, it's hard to imagine you need to change much...I've been thinking about stalls too as I haven't lost lately either. When I look back to the times when I was losing, I was eating Ph1 or Ph1.5 and I was exercising 3-4X per week. Currently I am eating Ph2 and exercising 3-4X per week, and I've really struggled to lose. I went back to Ph1 for 11 days and lost 1 pound (which I subsequently gained back 2 days later :() I'm wondering if going back to a P 1.5 wouldn't be the way to go? Something not as limiting as Ph1, but strict enough that there are limited WW carbs and fruits. There have got to be some gals on here who have been in this slump. How did they move forward??? Well, there is a positive to all this. The positive is we know this will be a great maintenance plan once we get there :)!!!

My menu today:
B - whole wheat toast w/ SF preserve and a banana coffee w/ milk
L - Denver omelette with cottage cheese
D - zuchinni crusted pizza and side salad
S - 2 clementines

Eh, today was really jam packed with running around and shopping. Things were pretty much on plan, but probably not enough.

B: string cheese; ww toast with a little schmear of peanut butter; milk
S: some protein water was all I had time for (I keep a packet of drink mix in the car)
L: big salad with lots of veggies (red and yellow peppers, baby spinach, broccoli, mushrooms, tomatoes), rf feta cheese, almonds, balsamic vinegar; 2 hard boiled eggs; tomatoes, mozzarella and fresh basil; iced tea
D: beef brisket (as much fat removed as I could); tomatoes, cucumbers and red onions mixed with a little balsamic vinegar and pepper; SB coleslaw from kalyn's kitchen; milk
S: yogurt with a bit of grape nuts and agave nectar
