Default Pea question

Why are split peas, snow peas and snap peas allowed in phase 1, but not green peas? Aren't split peas just dried green peas?

It's because dried peas having a lower GI - that is they raise the glucose in your blood much more slowly than the fresh ones. Sugar snap and snow peas are fine but not the fresh green peas.

I'm glad you asked that question Lyn, because this is something I wondered about too - not enough to ask though, since I'm not a fan of frozen or canned green peas.
