Breakfast Ideas - Phase 1 - St Patricks Day (Wearing The Green) Quiche

Preheat Oven to 350
3.5 cups cooked spinach (or canned) Drained
Minced Garlic to taste
1 cup whipped cottage Cheese
1/4 cup Parmesan
6 eggs
salt and Pepper to taste (dried minced onion would Also be super yummy and some mrs dash italian)
Beat together spinach, garlic and cottage cheese ( I used my Kitchenaid mixer) then gradually
Add in Parm Cheese Salt and Pepper
Check the taste
add in 1 egg at a time scraping the bowl as need be

Spray Pie Pan glop in and bake for 40-45 min yield is 4 big slices

I made this b/c it was what I had in the pantry and its been really good
You could top it with some other cheeses to make it prettier
