Default What's on the breakfast menu?

With so many new people maybe a breakfast thread would be helpful. Seems like it's the hardest meal of the day to plan, especially in Phase 1. Do you have to eat eggs? Vegetables vs. juice? I know I always come up with new ideas from these threads too! So post your breakfast and whether it's P1 or P2.

Today I had
2 cups broccoli sauteed with salsa over 3/4 c homemade refried pinto beans. I felt decadent and topped the whole thing with Trader Joe's rf Mexican cheese blend.

This is my go to breakfast when I need something warm that will stay with me all morning. Broccoli is loaded with protein so this is a high protein, high fiber meal - great for energy and for keeping everything happy if ya know what I mean Very Phase 1, as are most of my breakfasts.

Refried beans with salsa and cheese is one of my standards too. I'll eat any old dinner leftovers I've got for breakfast. Deviled eggs, mmm. An open faced turkey sandwich with baby spinach (or a wrap) - I got that one from Cat. Occasionally I'll eat oatmeal with fruit, but I usually like to save my grains and fruits for later. If I'm feeling more breakfasty, I like the chocolate cheesecake smoothie, and if I've got a little time to cook, the cottage cheese pancake is great. I eat eggs often, but not usually for breakfast!

today is leftovers from dinner last night! half of a mini stromboli made with whole wheat dough... I was too afraid to eat the whole thing last night even though I only used a half a cup of flour for the whole crust-and then I even took about a third of that and made a pizza crust for another day- topped it and put in the freezer... whoa- went way off topic! sorry!

Two soft-boiled eggs and a glass of low-sodium V8. I keep it simple.

Today I had a simple Phase 1 breakfast - 2 small breakfast cups that I made last night with canadian bacon, tomatoes, green chilis and green peppers. I realized as they were baking I forgot the cheese, but I really didn't miss it! They were delicious for my first try at breakfast cups!

I love those breakfast cups and make them whenever we are away from home. They are so convenient and tasty

I make the cinnamon omelet often. I had it this morning with ricotta instead of cream cheese (cream cheese tastes too heavy) and strawberries. It was a phase 2 breakfast because of the strawberries.

I am ADDICTED to the protein shake that is listed in the Phase 1 breakfast recipes section. I hate making anything for breakfast, so this is perfect. Toss some items in the blender and drink. I am full and completely satisfied.

I made it with orange jello flavour this morning and it was just as good as the strawberry shake I had yesterday!

Yummo!!

this morning was a 1/4 cup granola, 4 straberries, 1/4 cup blueberries and 4 tablespoons of plain yogurt. SOOOOOO good! tomorrow will be turkey bacon and eggs.

Oh yeah, I do V-8 but sometimes I do both veggies AND V-8!

Today I had a large omelet at work filled with mushrooms, peppers, onion and spinach. My usual breakfast is oat bran hot cereal with unsweetened Vanilla Almond Breeze, splenda, cinnamon and a Tbs of almond butter mixed in, with a glass of spicy V-8.

I do cinnamon omelets a lot. today I blended in about 1/3 cup pumpkin. Made it delicious

Also, I have been blending 1/2C FF yogurt, 1/2 cup pumpkin, vanilla, splenda, pumpkin pie spice. Then I add 1/2 cup kashi. It's like a breakfast pumpkin pie (and a super high-fiber way to start may day).

On the weekends, when I tend to "brunch" instead of two separate meals, I do mock heuvos rancheros... heat up some black beans, salsa, and cheese, and top with two eggs. sooo filling.

May I ask where all of you are getting these recipes, like the protein shakes and cinnamon omelets, and are they Phase 1 friendly? I have the old book from when I first did the diet 4 years ago, and I've never heard of these!

So, I make a huge (44oz) cup of coffee with cream, Stevia and Splenda. If I can get this in my little hands early in the mornings it helps me to have practically no appetite, which I want until about 11:30am when I eat a salad. And then another salad at between 3:30 and 4:00. That's it and the weight is just barely and I do mean barely creeping off. It is just crazy to eat this little and loose so little wt. Color me extremely discouraged. But hanging in there amazingly consistantly so far. Sheesh.................
