They are very inexpensive and a little pouch does my for two meals. Very bland though, no need to cook them just rinse them under hot water. No cal. no carbs. no sugar. My aunt passed away from complications from Type 1 diabetes, working with difficult people and pressures from work. Your menu looks pretty good regardless. wow, that was possibly the best stir fry I've ever made. Red cabbage, edamame, broccoli, green peppers, red peppers, bok choy and onion. I stir fried some tofu and threw it all together with some szechwan sauce. awesome. very spicy. my 2 y/o absolutely loved it. Please accept my deepest sympathies. :hug: Zeffryn and JerseyGirrl, the shiratake noodles can usually be found in the refrigerated section of the supermarket. I think most every grocery store in my area carries them. If you can't find them in your store, ask. I had to work late, and the girls and I went out for Chinese after gymnastics. I did very well, having steamed vegetables w/ shrimp, and some baked spinach & cheese thingy. :) murphmitch 02-25-2009, 11:17 PM Meat free chili. I won't cook tonight - the kids'll have pizza and DH and I will have leftovers. I've got the soup, some Taco Bake, and chicken chili to choose from, yum! Mine will be nacho pizza - refrieds, chorizo, rf cheese, jalapenos and DP will go more traditional with fake sausage, shrooms, cheese. I picked up some baby lettuce salad mix to have with it. Surprise! I liked it. I spread hummus on a whole wheat tortilla, then put sliced lite provolone cheese on top, then slivers of red bell peppers, then olive oil. I am thinking of manking your curry recipe(or using it as my guide, I can never follow a recipe exactly!) for lunches this week... CyndiM 03-01-2009, 09:06 PM :o Snagged! I actually use Fantastic Foods falafel mix, I buy it in bulk. I cut it 1/3 with soy granules so it isn't so high carb for DP. I'll have to check that recipe out though I admit falafel is one of my easy dinners. I made Kalyn's balela today and can't wait to try it. I'm letting it marinade overnight. murphmitch 03-01-2009, 10:02 PM Turkey chili, large side salad, steamed cauliflower, broccoli & zucchini. rdw1 03-02-2009, 02:16 AM Cyndi- I didn't realize that falafel was made from chic peas or I probably would have bought that mix before! do you bake it or pan fry? let me know how the balela turns out- I was thinking of making some fresh tabouli but may try that instead! sounds delish and I would prefer to use garbanzos :) Breakfast was 2 eggs, wilted spinach and veggie sausage Lunch was stirfry with shiratake noodles, broccoli, and asparagus with tamari and sriracha sauce Dinner was soup and salad- made creamy broccoli and cauliflower soup with a pureed white bean base sprinkled with rf cheese!
