what about quinoa and other grains?

I am new to MRC (and this website) and am a vegetarian, while my husband is vegan. He is not on the plan, but we do like to cook together.
I am wondering if anyone knows how to factor in things like quinoa, polenta and cous cous. I love these foods!
I am only in pre-conditioning, and my counselor told me to bring in the nutritional info of these foods so they can see how they fit into the plan.
I just thought I would put up a thread to see if any other MRCers had experience with doing this vegetarian. Any tips??
