Default Dinner Ideas....Help!!

So I'm going to cook my boyfriend dinner for his birthday cuz it's in the middle of Mardi Gras and restaurants will be too packed. I'm dieting. He isn't. Does anyone have any ideas of low calorie meals I can make that he won't think is good for him???

Look on the weight watchers web site or look online for low fat recipes.
There are a lot of recipes online to look at. I enjoy cooking 4 chicken breast in 12oz of diet coke or cherry coke with 1 cup of ketchup. Boil for 45 min. Then turn up on high until sauce thickens.
Its a very low fat recipe and my family loved it! I told them how I made it and they couldnt believe it.. lol

Maybe you could make him something that he really likes (even if it's unhealthy), with a bunch of vegetable side dishes. Then, you could have a small portion of the main dish, and load up on the sides. I really like mashed sweet potatoes, and they can be really healthy if you make them from scratch with skim milk. Have fun!

A nice roast chicken is always good. It's simple and healthy (as long as you eat without the skin) and it makes it look like you have put a ton of effort into it. My favorite is Ina Garten's Lemon Garlic Roast chicken:

I make a couple variations, I omit the bacon and use extra virgin olive oil in place of the butter. You can make it with mashed or roasted potatoes and a good amount of veg!

Lemon Pepper Chicken is so easy and good!

Take thawed chicken breast. sprinkle pretty good with lemon pepper seasoning. The easiest way to cook is, put it in a pan that can go in the oven.

Place your chicken breasts in the pan.
Put enough water to cover the bottom.
Place foil tightly on top.
Cook on 375 for an hour maybe 1 1/2 hours depending on how tender you want it.

It will be very tender and it is so good!

Chicken parmesan, baked in the oven... you could even make yours un-breaded to cut down the calories! Use part-skim/low-fat mozzarella, a pasta sauce low in sugar/fat, and serve with whole wheat pasta and some veggies (you could even avoid the pasta altogether and just make it for him, if you're a stronger person than I am, lol).

I use parmesan shake-n-bake and bake it so it's breaded. Just 35 calories for 1/8 the packet and covers a piece of 4oz chicken well!

You can do a southwestern pork loin roast, a side of steamed mix veggies and wild rice. Pork loin is low in calories (~60 cals/oz) but is extra special than chicken breast. The colors from the veggies and wild rice looks beautiful. The meal looks a lot on a plate but lower in calories than most restaurant meals.

Servings per plate
4 oz pork loin roast (~250 calories)
2 cups steamed veg (100 cals)
1 cup wild rice (200 cals)
550 calories

southwestern style pork loin roast
