Default What's for Dinner, 2/8-2/15

We're grilling outside on the BBQ grill today! I'm going to try grilling some marinated tofu, along with grilled butternut squash and brussel sprouts. I was tempted to try the Butternut Squash Mole, but I'm just a tad reluctant to try chocolate on my squash. At least today, anyway. But I will try it soon!

I'd love something grilled but there's still too much snow on my deck so I'm having a meatloaf from the stash and a broccoli, cauliflower and carrot salad. I will be using the mandolin to slice but promise to use the guard!

Im cooking some italian white bean soup with barley and veggie meatballs! I was soooo bad yesterday I am determined to do soup and salad the next couple of days!!!!

Barbequed chicken on the grill (eastern NC...so vinegar based, it was excellent!), homemade cole slaw, green beans, baked apples and WW roll.

This makes 4 servings and the tomatoes with green chilis were too spicy for Tom so I wrapped the other 3 in foil and will reheat during the week. It was like I went out to dinner! What a fabulous recipe! I took the pizza cutter and cut in fourths (triangles) and topped with a little sour cream and it was heaven!

Do try! Very easy!

Tonight will either be leftover spaghetti squash made into the deep dish pie or grilled veggie burgers and veggies. I may not be able to resist cooking on the grill its sooo nice again! LOVING THE WEATHER!!!
