Default What's for Dinner 2/2 - 2/8

I didn't see that this thread had started up yet this week, so here goes!

Tonight I had planned on making taco salads, but I'm now going to be cooking at the Ronald McDonald house, and I think we're making tri-tip. I don't know what the sides will be, but I'm sure there will be a salad. So I'll probably have a really big salad and a little meat. I'm crossing my fingers that there will also be some sort of green veggie!!! Let's hope!

Meatloaf, yellow squash and mustard greens.

I'm going to try to use oatmeal instead of breadcrumbs in the meatloaf. Hope it's yummy...

tonight I will be making mexican! Salad for me and burritos for dh!
With homemade guacamole for both! yummy!

Now, with the way you guys do meatloafs around here I am expecting a couple more of you to chime in saying thats what you are having too Im going to look for a tvp meatloaf recipe so I dont feel left out next time! LOL

I make a loafless meatloaf which is ground beef/turkey/veggie crumbles in a deep skillet with all the veggies that go in meatloaf!

Tonight is supposed to be Roast chicken with cilantro pesto vegetables, but we'll see if I feel up to it by then. I don't feel much like cooking right now!

No loaf for us tonight, I want to make a tofu stir fry for me and DH, and I was thinking about making a Thai chili lime shrimp soup too, but I am missing a couple of the ingredients. I think the kids will reject the stir fry though, so have to come up with a backup plan for them. DH may reject it too, but I've been wanting one, so they can all suck eggs.

Oatmeal works great in meatloaf chelby, I just like to grind it up fine in the blender first otherwise it's recognizable as oatmeal in your loaf, which freaks me out a little for some reason. Kierie, isn't loafless meat loaf just meat? And RDW, meatless meatloaf would just be loaf!

Scmoodle -- It's too late! The meatloaf is in the oven. I didn't grind the oatmeal, but I did soak it. I'll grind it next time. Hope the family will eat it.
