Entrees - Pasta with Crab and Wild Mushroom Sauce

Ingrediants

3 cups rotini pasta
1 tbsp olive oil
2 cloves garlic, minced
1 medium onion chopped
8 oz mushrooms (white or cremini or shiitake) sliced
1 pkg 8oz crab flavored surimi fish, flake style
3/4 cup dry white wine
1/2 cups of cut green beans (fresh or frozen)
1/4 tsp dried thyme
1/2 cup light sour cream
1 tbsp all purpose flour

Directions

Cook pasta according to package directions, Drain

Meanwhile:
heat oil over medium-high heat in large skillet, saute garlic and onion and mushrooms 5 minutes. Stir in crab, wine, beans, thyme. Bring to boil and simmer 2 minutes until beans are just tender.

Mix sourcream and flour, add to skillet. Cook and stir until thickened. Spoon over hot pasta. Serve with grated Parmesan cheese if desired.

HINT: Use a variety of mild mushrooms for interesting flavor and texture. When using shiitake mushrooms, discard the woody stems
