Default quick question about spaghetti squash

I bought a spaghetti squash 2 days ago after reading so much about it here You guys are a good influence!

Anyway, I made it for the first time and it's YUMMY! I microwaved it, forked it (heh) and then put it in a bowl. Made a serving and a half of sauce (I love sauce too much so this is holding me back) and topped with parm and am in heaven.

But before i go ANY further, how much squash is a serving? I cut it unevenly (to thin on one side, too fat on the other) but didn't know what really constituted the serving itself!

Sorry, since losing me job I've kinda taken up photography (apprently) so I took some pictures!

I love spaghetti squash. The daily plate breaks it down into servings of 1 cup. So is it one cup crammed full? The sometimes give weight as well, so I guess you could weigh it. If i remember correctly they said it was like 63 calories in a 1 cup serving?

Let me know if you figure it out.

It's pretty low cal compared to real pasta. A serving is a cup but I'd be inclined to splurge on more than that. Yummy!

Since these are so low in calories, I usually eat 1/2 of one for a serving. I don't buy the large-sized ones though, since I'm the only one eating it.

what is this spaghetti squash pizza!??! as for the serving, I was under the impression that spaghetti squash fell under "vegetables" which would make it unlimited. at least that's how i eat it! although i can really only eat about half of a half of a medium sized one. (with plenty of sauce, of course!)

It's listed under Phase I veggies so I would think it would be unlimited too.

I wish I found it as yummy as you all do, I've tried cooking it longer but no matter how I've made it I don't like the texture. But if I did, I wouldn't worry about serving size.

Judy I cooked it just UNDER and it reminds me of pasta al dente. Not really mushy at all.

Thanks all. I guess it's the sauce I should worry about!

No matter what I do, it still has a crunchy texture, nothing like al dente pasta (which is how I like pasta). I've tried under cooking and over cooking. Maybe I'm still not cooking it long enough, I don't know. I just gave up since I didn't like it.

The spaghetti squash pizza is under phase1 recipes, entrees, I think. It's very yummy!

I cut in half and cooked for 8 mins with 1/4 c. water but microwaves vary -- anywhere from 7-10 minutes for a small/med one.

Judy. Maybe make it ahead of time, stick it in the fridge and reheat? I took the other half out tonight for a side with dinner and reheated with a bit of olive oil, salt and pepper (no sauce) and it was much softer!
