Chicken on the rotisserie, orange cauliflower (have you ever seen an orange cauliflower? Walmart had a huge bin of them. Looks like there is cheese already on it!), and mustard greens.

barbeque pork in the crock pot, leftover sweet potatoes, corn and lima beans, maybe a small salad. Mashed potatoes for the honey if he wants it.

At the farmer's market last summer they had a big pile of orange cauliflowers and also purple ones. They were pretty, but too expensive. Do they taste differently than white?

Salmon cakes tonight I think. That's as far as I've gotten.

Schmoodle -- I'll let you know about the cauliflower's taste after dinner. At Walmart, it was the same price as the white.

Jumping in on this...Some tasty sounding meals out there, esp the capri chicken, thai chicken stir fry and navy bean soup. I'll have to check out the recipe forum.

For me it's Indian spiced chicken with spinach, rice for the DH but not me :).

Orange cauliflower -- maybe a little stronger than white. Not too much difference. DH and DS still said YUCK. Everyone else liked it fine.

I didn't notice much of a taste difference with the colored cauliflowers -- excet the green which is supposedly a hybrid of broccoli and cauliflower. It's great!

We had moroccan chicken - it was full of chickpeas, tomatoes, peppers, onions and chicken. Very flavorful and tasty!

Well, I posted earlier and i think it went into cyberspace...
DH wanted more italian tonight so I made him linguini alfredo-definitely not on my diet!!! and I made a HUGE salad and then some broccoli soup with a cauliflower base for me.... turned out pretty good... used about 2oz lf cream cheese in the whole thing and thats it besides water and boullion! Had to be healthy! till I topped it with an ounce of rf cheddar- but for the whole dinner it wasn't a ton of calories and I am still lacking for the day coming in right at 1000... Going to weigh in tomorrow... EEK~

The bean stew experiment was really good. I'm going to do my best to come up with an actual recipe and will post it when I do. It was a Tuscan sort of stew with plenty of veggies.

Tonight will be late with a 5:30 meeting at my office. We will either have leftovers or Co-op take out.

Rikki- watch those calories! It really is true that if you go to low you stop losing. You also might not feel so great energy wise.

Tonight we're head to my sister's for her bday bash, and they're serving pizza. So, I'm not quite sure yet what I'll be doing for dinner. :shrug:

meatloaf for us too, mixture of ground turkey and sirloin. Veggies on the side - don't know yet, but I've got a bag of spinach, a cauliflower, and a head of cabbage.

Cyndi- looking forward to the soup recipe, I am wondering if its anything like the italian one I made... seems tuscan to me too ;) and I ate about 150 more last night and to stay at 1000 isn't normal for me, I don't do it regularly... I have been trying to stay at 1200 though, and figure I probably go more about 1300 if I missed entering anything during the day! for now it seems to be working, if I stop losing or increase exercise I will definitely play around with those numbers!

Not exactly sure about dinner tonight, possibly veggie burgers with sides... lunch will probably be stirfry with cabbage "noodles" or some kind of cabbage soup! (can you tell I need to get rid of some cabbage?!)

Last night- Parmasean-crusted tilapia w/ LF creamed spinach (threw in some artichokes too, just to mix it up)

Tonight- Turkey sausage & peppers & onions.

Thinking I might roast a chicken this week, and use to carcass in a soup... could definitely use a warm bowl of soup!!!

Tonight I'm making Parmesan crusted catfish, "fried" zucchini, and a green salad. I'm excited because I made some homemade ranch to dip the zucchini in!!!

Just got back from a trip and the house is devoid of fresh vegetables and dairy... shopping is 20 miles away, and I am deluged with work. But SB has become top priority for me, so it's off to the market I go this morning, work be buggered.

Last night I made do with pantry stores and did fine... shrimp with peppers, celery, onion and home-canned tomatoes over brown rice. Would have loved a salad, but that will have to wait for today.

Dinner tonight will be salmon sauteed with herbs, Asian salad made with cabbage, peppers and spring onion, and steamed green beans. And SB is still new enough to me that I actually look forward to the ricotta cheese with lemon zest for dessert. ;)

We're trying to decide if we're going out with FIL or having him in.

If we have him over, we'll be having pork chops in the crockpot with autumn veggies (sweet potatoes, squash, carrots and onions) with brown rice and broccoli on the side.

I had planned on a spinach frittata but didn't feel like cooking tonight, so we shared a Kashi Thin-Crust Margherita Pizza instead, with carrot sticks on the side.

Cottage - it must be going around. I ended up tossing the sprouts in the oven to roast and sauteing the chard. I just didn't have the motivation to make anything more complicated.

I'm plotting a crock pot dal with cauliflower. I don't have a recipe but how hard could it be?! We have greens to use so salad on the side and maybe some warmed garlic bread type ww pita.

Rikki - I like to have the 100 cal. packs of guac. on hand because we can finish the package before it goes bad. I don't find it to be slimy...

We had egg burritos. Scrambled eggs, salsa, black beans and avocado on ww tortillas.

Zeff- did you have the wholly guac brand? I usually just mash 1 avocado with 1tbs light sour cream some garlic and onion powder, a dash of salt and some about 3tbs rotel... I have about half that and figure its about 100 calories from what I can tell. I love fresh avocados. I just can't seem to get past the texture of the others! dh and I usually split the guac or I half them and use one half one day on a and the other the next... on salads or something! I love to make a WW burrito with lettuce, veggie bacon, tomatoes and avacado and a splash of ranch! mmmmmm!

Rikki - yeah, it was the wholly guac. brand. I love fresh avocados as well, but keeping them on hand without them going bad has proven to be more difficult than I once thought.

I've been having avocados a lot lately, though. Yesterday for a snack before bed I had a tomato and a half avocado with a little balsamic and some salt and pepper.

I made the yummiest lunch from leftovers today! Took leftover chicken and shrimp fajitas, refried beans, and black bean salsa, mixed it with a can of chicken broth, and made soup! I also added the leftover salad (romain, tomato and olives). It was truly delicious.

Tonight for dinner, we are having grilled pork chops, homemade baked beans and coleslaw. YUM!

The soup was excellent - very filling and really good comfort food for winter days. I decided to use half a cup of good, sharp cheddar for flavor and then 3 laughing cow wedges for the other half. The combination worked.

I just can't picture it. I've never even considered freezing avocados.

I've been hungry for Sloppy Joe's ever since someone mentioned them in here, so I'm making it with veggie crumbles for supper this evening, with coleslaw. :T

Zeff ~ Trader Joe's sells frozen bags of avocado halves that can be used just as you would fresh ones. They're really handy to have on hand in the freezer.

Wow, that's an excellent bargain! I'd slice them in half and peel them, then dip them in lemon juice before placing them on a baking sheet to freeze. Once they're frozen, just pop them into a bag. I haven't noticed any change in texture, except they are much softer. If you're going to mash them anyway, it won't really matter. Good luck!

Man, I'm tired. I've been going since 6 a.m. this morning, as my beloved late husband used to say, flat out like a lizard drinking. (He was an Aussie bloke.) It's my busiest time of year, which means I'm chained to the computer for more hours a day than I like. Next week things should settle down a little, and I hope to become more "interactive" here. :) You all seem so nice!

I'm making a chicken stir fry tonight with pea pods, peppers and broccoli over brown rice. For dessert, I'm still playing with ricotta cheese. I found I like it flavored with coconut extract and a bit of unsweetened cocoa powder sprinkled on. Tastes quite like a Mounds™ bar. :devil:

Hope everyone is doing well on their plan! :carrot:

Tonight we had hamburgers. I had mine with spinach and tomatoes on a ww bun. We had roasted sweet potatoes and green beans on the side.

Faux "blizzard" with raspberries for dessert.
