Time to start up a new supper thread for the week!

This sounds strange, but it's so good! I had a bowl of leftover roasted Brussels sprouts, delicata squash, chickpeas, onion, dried cranberries and pecans. I dumped it in a saucepan and covered it with veggie broth and let it come to a simmer, then pureed it with my immersion blender. It made a lovely soup that I can enjoy for the next few days. :)

I think we're having chicken cordon bleu with brown rice - haven't thought of the veggies yet!

Hubby has requested a big pot of chili that he can eat on all week. Love it! Too easy!

dinner for me will be cottage cheese & a chef salad, everyone else will finish off the leftover chili ~

supper is pork chops & either steamed broccoli or green beans :)

I eat light on yoga nights so it will be a cup of mushroom barley soup before and a Boca and salad after class. I love the old standard Molly Katzen Mushroom Barley soup recipe with lots of dill.

I am not doing South Beach yet, need to go grocery shopping. However, I am thinking about making the Curried Carrot Soup but I don't have any celery so not sure if I am going to go ahead with it or not.

Turkey Swedish meatballs over sauteed cabbage. Not sure how this will go over with the family, but I am really looking forward to it!

In the crockpot today I'm cooking a carnitas stlye pork roast. We'll have that with black beans and a Mexican salad.

And I made cheesecake bites for dessert this week!

btw....the swordfish I made last night was really simple and tasty. Let me know if you're interested in the recipe.

Tonight will be a big pot of Chili we are having my parents over for dinner so that will be a super easy dinner that is good for all of us! Of course I will be making macaroni for everyone else but will refuse to indulge myself!

Been trying to think of what kind of dessert I could make for everyone that would be ok for me to eat but haven't come across the right one yet- maybe I will make some black bean brownies again hmmm....

Chicken breast marinated in TJ's cilantro salad dressing, saute with asparagus, garlic and fresh spinach, roasted brussel sprouts and field peas.

oooh- is that trader joes cilantro dressing? I am assuming its sbd friendly- wish I wouldve seen it while I was there last week!!! I will have to look for that next time. DH hates cilantro but I really like it so that would be an easy way for me to get it in without him having to suffer ;)

tonight the family had pork burgers and I had a turkey burger patty and smashed cauliflower :) yummy ! left myself enuf cauliflower to have for leftovers tomorrow @ work !
Supper tomorrow night will be a pork roast with the fixins for the family and I am not sure what I will have ? probably some roast and steamed veggies :)

DD1 was here tonight and ordered pizza to share with the kids, so I just made salads for me and DH - lettuce, tomatoes, ham, cheese, edamame, hard boiled egg. It was just what I wanted - and helped clean out my fridge!

I made the Mexican Eggplant recipe posted by Schmoodle under Phase 1 side dishes--very yummy, and with the eggs and cheese I think it has enough protein to serve as a main dish! But since it was my first time making it and I didn't realize that, I had also made a huge salad with roast chicken pieces. DH loved it too.

hmm, i have to work tonite, so my lunchbag will have : salad of chickpeas, sundried tomatoes/ their oil as part of dressing, feta, lettuce, cucumbers, and evoo. cup of plain nonfat yogurt. tofurky and provolone slices. oh, and maybe half an apple sliced thin in the salad.

chicken and black bean bake....it's a combination of brown rice, tomatoes, black beans, corn, chicken, chilies and lots of mexican spices. It smells awesome.

zeff the chicken and black bean bake sounds fab! I will have to try that with some veggie chicken for sure! I just bought some trader joes chickenless and beefless strips instead of the morningstar to try! I hope they are good!

Tonight is black bean patty wraps with leftover chili.

We had veggie night -- pinto beans, cauliflower, green beans and mustard greens. Didn't even miss the cornbread on the side. But, if anyone has a cornbread recipe that's on plan, I'd love to have it! :)

Rikki - as the recipe went, it was just ok. It had a good idea going, though and I'm going to see if I can improve on it. I think the chicken needs some marinating and the rice/bean mixture needs a bit more flavor as well.

We had homemade tomato soup and grilled cheese sandwiches. There should have been spinach in the soup but it looks like I forgot to get that at the grocery store.

SO, barb- how do you make your homemade tomato soup? I for some reason buy probably 4-8 cans of tomatoes a week~ not including sauce, I have decided there is something in them that I crave, just haven't figured out what yet- but rarely buy tomato soup bc of all the preservatives and such- I hear they have a umami(taste recently discovered)and I am pointing to that.... maybe.... who knows...

Rikki - Here is the recipe http://www.3fatchicks.com/forum/showthread.php?t=74721 It's really easy. I just use minced garlic from a jar and frozen chopped onion to make it really easy. I buy a bag of spinach (often baby spinach) and wilt it into the soup after it is cooked. Sometimes I chop the fresh spinach and often I don't. I sometimes top each bowl with a little parmesan too.

Tonight we're having Ginger & Cilantro Poached Salmon w/ stir fried Napa cabbage and veggies.

Tonight we're going to our friends for dinner, but I know we're having grilled chicken, salad, sauteed mushrooms, and the summer vegetable gratin from the P2 side dish recipes. I'll probably also have a glass of wine.

Last night I made a great italian soup with veggie meatballs, I posted in the soups p1 thread. it turned out sooo filling and yummy!

Tonight will probably be the taco salad I had planned for last night, who knows though... this weather is making me crave soups!

i had cocktail shrimp (with the sauce, it had very little sugar) mashed sweet potatoes w/ splenda, cinnamon, nutmeg, and ginger, and a splash of soy milk to make them creamy (oh yes, and topped with ff wc!) and roasted green beans coated in toasted sesame seeds, and dressed with a ranch/wasabi sauce i invented and love. so good! i'm still full 2 hours later :)

Tonight ended up being Fantastic world food burgers made with some ranch seasonings and jalapenos... They were great!!!! But, be warned that the main ingredient is brown rice so they should be used sparingly... I didn't realize it before I was mixing them up or I probably would've made something else... but they were great nonetheless... had that with a big salad and a side of broccoli... yum yum!

last night was boring, I made a steamables broccoli in the microwave then stir fried some cabbage, mushrooms, a carrot, green onions and leftover nature's burger and tossed with the broccoli, soy sauce, chili hot sauce and some black sesame seeds. It was pretty good. I have some soyaki sauce from trader joes but its too much sugar to use totallyover the whole recipe so I put some on the side to dip into. It was just fine that way and I probably only used a teaspoon instead of like a 1/4 cup!

I do the same with my salads most of the time. I dip my fork in the dressing before taking each bite of salad~ a tablespoon goes a really long way~

last night I made aztec beans in the crockpot (black beans & salsa, I added green peppers & butternut chunks), I layered that with a saute of eggplant, peppers, broccoli & chipotle tomatoes and topped the whole thing with TJs rf Mexican cheese blend. Yum

Tonight I'm making Spanish Style garbanzos over spaghetti squash. Maybe with a side salad.

I'm already scoping out crock pot old navy bean recipes for tomorrow :)

Tonight dh wanted pizza so I made some for him and decided to make some progresso lentil soup with garbanzo dumplings for me... there goes the sodium restriction I put myself on today... But better than having pizza, right?!

I sautéed some onions and mushrooms in olive oil, then tossed in some black beans, leftover spaghetti squash, and garlic, and topped it with a little LF Mexican blend cheese. It was OK but could have used a little more pizazz.
