Okay, I couldn't remember the exact title of the old thread so hope this will do :)
With all the new chicks around and those of us re-committing it seems like a good time to share meal ideas. So what are you having for dinner tonight?
We are having the crockpot chili lentil PB stew. I made it yesterday but we got back so late we couldn't wait for the PB part and ate something else :) We've been really enjoying salads lately so will probably have a side salad. My current favorite "dressing" is 1 T of homemade eggplant hummus mixed with 1T fat free yogurt. Yum

I made the Deep-dish Spagetti Squash Italian Pie yesterday, so that's what I'm having for my supper. I made a yummy filling for it with red and green peppers, mushrooms, onions and spinach, so it's super-full of veggies. YUM,YUM!!!

I'm going to makes some kind of lasagna layer casserole (with WW pasta, obviously), I'm going to make it up as I go.

Last night was Baked Pesto Chicken from the Quick & Easy cookbook with whole wheat bowtie pasta and lots of broccoli.
Tonight we are having leftover Hearty Bean and Pasta soup with extra tomato juice and chicken broth added to it.

Tonight we're having grilled Chicken, mushroom kabobs, & a green salad. I'll probably have a peanut butter cup (from the recipe thread) for dessert.

I am having spag squash with the phase 1 alfredo sauce while the family has WW pasta. I may mix a little WW pasta into mine as well.
Rounded out with a nice salad filled with cucs, tomatoes and mushrooms!!

last night I made a slight variation of the Braised Kale with black beans and tomatoes. It was so good I had leftovers for breakfast this morning. :) I also had smashed cauliflower with cheese.
I don't know yet for tonight.

Last night i had a big BIG taco salad - homemade refried beans, seasoned boca meat, lettuce, tomato, salsa for dressing, and a scoop of plain nonfat yogurt on top (no sour cream :( ) tonight? I have no idea. maybe I'll do another big BIG salad with pan-fried tofu for protein. I have lots of salad stuff I need to use...

Haven't scrolled through all of the posts yet but could you share the recipe. I make Spag Squash with Turkey Sausage filling a lot but have never made a "pie" version before. Please share... :) TYIA!
As for my meals this week ~ SBD'd Carrabba's Sausage & Lentil soup, Taco Bake, and Turkey Chili are either on the list or already in my fridge. It is FREEZING up here so everything is comfort foods in my house this week. :)

DH got a smoker for Christmas, so we are having smoked chicken with broccoli and cole slaw (very light on the mayo). I can't wait to try the chicken; I've been smelling it all day!

We wound up with Laura burgers on Arnold whole wheat sandwich thins. I sliced up squash like FF and sauteed it in the skillet with EVOO, garlic, and s/p. No one thought they were fries but they ate them anyway. :)

Tomorrow night I'm making a portabello philly cheesesteak sandwich using whole spelt rolls (half per serving). Cheesesteaks are just about the only meat thing that I occasionally crave and haven't found a good substitute for, so I can't wait to try these. With a rich main course we will have some type of dense, low cal veggie - either roasted brussels or sauteed cabbage with garlic & fennel seeds

We're rushed tonight so I'm reheating leftover Cajun Sausage and Beans. Good and easy.
Chelby - It would depend on the ingredients. I have the dining guide at home but I'm in the office today. You might try asking the restaurant what ingredients they use (especially look for thickeners)

Ended up cooking a small pork roast last night so am going to throw it in the crockpot for a while and make carnitas. My resolution for 2009 is to try recipes I've never done before. Thanks to TwinB for mentioning these in the daily.
Tonight I am going to be making white bean and soy chorizo soup... no recipe but I am sure I will figure something out ;)

new here, but not to south beach, tonight was greek rotisserie chicken wraps (whole wheat wrap, ff feta, nf greek yogurt, hummus, roasted red peppers, onion, lettuce) with sweet potato fries in the oven with roasted veggies.

Okay, I'll admit...I'm not exactly sure what a 'carnita' is, I looked it up myself. I guess it's just the filling?
Anyhoo, mine were fantastic!! I put the meat on a whole grain tortilla in the skillet to melt the bit of cheese on it, then added lettuce, tomato, and onion (and a touch o' guac and sour cream!). They were DELISH!!
This was a fairly lean cut of beef I used today, but I'm sure there's got to be a way to make it with chicken too. MMMMMMmmm...

Hi, I'm pretty new here too. I'm back on the South Beach wagon; I mostly eat veggie (some fish) but I've gotten lazy over the years and need to be thinking more about what to eat... came here looking for ideas... was reminded of spaghetti squash and roasted sweet potatoes, mmmm...
Tonight was homemade minestrone soup (minus the potatoes or pasta) and re-vamped eggplant parmesan (baked eggplant slices, no-added-sugar pasta sauce, cottage cheese, sprinkled with parmesan cheese on top). Delicious!
Now to think about tomorrow...

Turkey Chili - no real recipe (I only use recipes for new/complex stuff)
About 1 lb. ground turkey breast
1 lg onion, chopped
1 lg green pepper, chopped
1 tbsp olive oil (in large pot to soften/cook veg & meat)
2 lg. cans crushed tomatoes
2 (14 oz.) cans red kidney beans, drained & rinsed.
Spices to taste (Salt, pepper, cumin, chili powder, garlic powder)
Cooked up meat & softened the veg in the oil. Added all other ingreds once the meat wasn't raw anymore. SO GOOD. Made tons of leftovers too :)

I'm experimenting with a vegetarian, not sweet baked bean recipe (I'm making it up as I go!). I'm not sure how much it will be like baked beans but I'm sure it will be good. I might top it with smart dogs near the end for a smokier flavor. sauteed chard will be on the side.
I'm also thinking about a pot of that curried carrot soup just because I have carrots to use and it will be good for lunches. Gotta love work a home days!

I'm finally trying the deep dish spaghetti squash pie. I'm thinking gimme lean, shrooms, peppers, spinach & feta. Yum!
Last night I invented a baked bean type crockpot dish. I discovered that the extra strong molasses imparts enough flavor for a whole recipe with just 2 Tablespoons (I know molasses isn't actually an SBD sweetener but there is no other way to really get that flavor so I tried to do it with as little as possible). It was fun to have a different flavor combination for our pot of beans.

CindyM - those beans sound good. Hearing you gals talk about baked beans is making me want some. Can you share your recipe? And you will love the deep dish pie. It has become on of my favorites.
I think for dinner we are having shrimp and veggie stir-fry with brown rice.
Last night we had chicken soup with extra veggies and a salad. I have my 6yr old begging for a salad every night now! LOVE THAT! I also found these frozen, whole grain rolls. You pop them in the oven for 10 minutes and they come out crusty and soft, FULL of grains and nuts. I'll find the wrapper if anyone is interested in the brand.

The pan makes like 9 or something. I just crack off a few and cook them on the pizza stone. I make enough for everyone to have 1. If there is leftover bread, I am going to eat it!

I made the spaghetti squash deep dish 'pizza' for lunch. YUMMO!!! Even hubby loved it. Next time, I'll use more spaghetti sauce.
My spaghetti squash was wet after I added the salt, pepper, egg and parm cheese. I let it hang out in a collender to drain some of the excess moisture. It was wonderful! We'll definitely have it again.

We changed our mind and skipped the shrimp tonight. We had grilled chicken breasts, sweet potato "fries", orange slices and a salad. I also served whole wheat egg noddles with the kids in mind. I took 2 forkfuls to taste, not bad.

Jen - bread is one of my favorite things to make. Something about the kneading of the bread is therapeutic and there is nothing that makes the house smell as good as home made bread.

I made Lemon Chicken with brown rice. The recipe called for egg-washing, breading, and deep-frying the chicken, but I didn't want to add all those calories, so I just peppered the chicken breast and put it on my George Foreman grill to cook partway while I made the sauce in a separate stir-fry pan. The sauce is equal parts water and brown sugar, boiled on the stove with slices of fresh lemon (peels on and everything, but try to remove the seeds) until it reduces to a syrup. Then I took the chicken off the grill and tossed it in the sauce to finish cooking and saturate in the sauce a little. Served on top of the brown rice, it tasted just as good as anything you could get at a Chinese restaurant. Plus, according to the recipe notes, one chicken breast (coated with the sauce, but not drenched) and a cup of rice was less than 500 calories. That doesn't sound so great, but it's very satisfying if you're craving something Chinese-ey. Plus, it's super-filling.
I found it in Cooking for Two magazine, which you can find at Walmart newsstands. I like that magazine because everything's designed to result in two servings, which makes cutting recipes down to one serving a lot easier for me.

Cyndi, Isn't that spaghetti squash pie fabulous! I sautéed some spinach with red peppers, garlic and onion, and spooned it over the pie before topping it with the sauce and cheese, and it was so good!
It sounds (sic!) like several of us will be making baked beans this weekend. :D I make mine a lot like Cyndi's, except I use a small can of tomato sauce instead of tomatoes, and add a spoonful of SF ketchup. And lots of onion!
Looks like I am going to have to try the spaghetti squash pie ;) but not this week- unfortunately its apparently going to take some digging for me to find any around here- last like 5 times I went to the store the squash was either gone or crap. oh well...
tonight will be veggie burgers, big salad, and broccoli...

I'm not cooking tonight but wanted to read through the thread to get some ideas for next week's menus. I'm glad we have kept this thread going -- it's a great place for inspiration. We've got an amazing group of talented, inspired and inspiring cooks here! OMG, filet, crabs legs, carnitas, ostrich!! It makes me feel sorry for anyone not on SB or dieters that think they have to eat baked chicken breast and steamed broccoli every night.
Tonight I'm having leftover shrimp stir-fry. I've also got a tray of roasted root veggies ready for the oven that I'll probably hit for lunch.
Also wanted to let you know I tried the soy chorizo earlier this week in a Taco Bake - it's great! Can't wait to try some other stuff with it. Thanks for finding it and posting about it Cyndi and cottage!
I'm glad you all are enjoying the spaghetti squash recipe! I've got a ss in the basement so that's a good idea for next week.
Cyndi did you ever post the curried carrot soup recipe? After thinking I didn't like curry flavors for a long time, I am developing a love affair these days...
freshman, there are so many favorites, it would be hard to send them to you. But usually when we find something we really like, we post it on the recipes section of the forum. Something that is stickied is a tried and true fave, and other ones that have a lot of views or high star ratings are also a safe bet. It will also depend on what appeals to your tastes. BTW, Phase I is short the introductory phase to South Beach, when grains and fruits are not eaten, Phase II is the main weight loss phase, when whole grains and fruits are re-introduced. There are stickies on these in the FAQs section, and if you plan to do SB, try and get a copy of the book to read so you will understand the reason for these phases.

I picked up a cheap bag of pre-chopped collards yesterday, one of those use right away deals. I sauteed them until very tender and then mixed them into the crockpot stew. It worked really well.
Since I'm in crockpot mode tonight I'm going to make a vegetable curry in the crock. I've got eggplant, chard, & garbanzos and might throw the cauliflower in too, just so we have leftovers :) if it is good I'll share the recipe (I'll try to measure this time).

Yesterday I wanted something a little special so I made boneless leg of lamb stuffed with spinach and feta cheese, with greek salad. I roasted a couple of potatoes with the lamb for DH.
The other day I made a turkey "tenderloin" roast from Aldi's. It was pretty good but kind of salty. I've been using it to make a big salad for lunches.
Tomorrow I'm going to make a big pot of minnestrone. The weather is awful, and I really am drawn to soup.
Tomorrow will be my first weigh-in since restarting last Monday. I think it'll be pretty good. I'm a slow loser so don't expect a huge drop, but even a couple pounds will be great:carrot:
