Default Spinache and garbanzo crustless quiche sort of

Since this could be an appetizer, side dish, or entree I'm just posting here rather than in a specific category.

I was messing around today and created a dish that turned out really well, so I thought I would share. I'm definitely going to try this with different seasonings, but it was really yummy. I was meaning for it to be creamier, but it turned out more like a fritatta or quiche filling. I think I will try this again without the eggs, or using one egg or adding more milk. I think that the milk and egg ingredients can be adjusted quite a bit and the texture would change, but I think it would be good with any combination (I'll update the thread with results of future experiments). I think for a main dish, I'd also add a second can of garbanzo beans.

1 lb package frozen cut spinach
(I used the Walmart bag of spinach, not the boxed spinach, I think if you used the box, you'd have to thaw and squeeze out the excess water)
1 can garbanzo beans, drained
1 med. onion, diced small or grated (I grated it, because it was quicker and I wanted to make sure the onion would not be undercooked)
1 cup skim milk
1/3 cup instant dry milk
2 tablespoons melted butter (optional, I'm sure)
1 tablespoon of curry or masala powder, preferrably a good one (I used a masala mix from the oriental grocery store)
2 eggs, slightly beaten


I melted the butter, and stirred in the seasoning powder, then the milk powder, the milk and the eggs. Then folded in the spinach, beans, and grated onion. Baked for 30 minutes at 350.

Very yummy.

I love spinach w chic peas..

I mix them with tomato paste and brown rice. Its delish!!!
