Gotta know what you're planning for dinner this week. As the weather gets colder, I'm looking forward to more warm and toasty foods.

Tonight we're going over to friends, but I'm cooking dinner. Making a chicken & veggie stir-fry, sesame Napa cabbage, and rice (for those who will eat it).

I was wanting to make the fireside white bean and sausage soup(vegetarian of cours) but I don't have any white beans... so that will come later in the week I suppose... I am now thinking about making some 7layer taco dip and eating mine atop a nice bed of lettuce

I am making grilled eggplant with some ff ricotta & mozz cheese w/ sf tomato sauce and fresh basil. I am really looking forward to it. It's chilly here today!

well, dh just had a burrito for lunch so taco dip is out... Thanks to Marathon mom I am having what she is having! Sounds soooo good and I already have all the ingredients here! YUM!

LOL. Third and FINAL post regarding dinner tonight- but yall already know what I am having the next two nights!!! lol

I just made vegetarian chili and topped with cheese and sour cream.
Dessert will be the brownies I made last night. yum

We are having the broc/cheddar soup recipe from this site. With a side salad and whole wheat dinner rolls with flax. Dessert is the pumkin bread from this site too. Can't wait, I am starving!

I was in the mood for a peanut sauce so sauteed kamatsuna, broccoli & tofu and tossed in peanut sauce. Considering I made up the peanut sauce recipe on the spot it was yummy.

I decided to make some legal dumplings for my chili- Made them out of garbanzo flour and eggs... turned out pretty yummy! I will post the recipe now :)

Yep - we had gumbo. It was good, but I'm not a huge seafood gumbo fan. It gave me raging heartburn so I didn't eat much...I'm starving now.

I'm not 100% sure about dinner tonight. I was hoping to have some leftovers to finish off, but that didn't happen. I gave DH the choice between greek pasta and beef enchiladas.

ETA: Beef enchiladas it is!

I was going to make soup in the crockpot, but I had some ground beef left over from Sunday that I had to use up, so I made Jake a hamburger casserole instead. I'll have a piece of leftover butternut lasagna before I freeze the rest of it.

I am thinking WW pasta mixed with spaghetti squash and a salad.
I have some mushrooms and peppers I need to use so I might roast those and add them to the sauce too.

This morning I put chicken in the crockpot w/ Mole sauce. I'll have that w/ a salad. DH will have tortillas.

I couldn't resist another serving of garbanzo dumplings... last one though for a while I promise :) I would really think they are about the same to digest as hummus if not a little harder?!

Rikki - because they are made with a bean flour and not mashed, cooked beans - it will digest faster. Why? No idea. ;)

yeah, I know but they were sooo good! I am resisting them though until next week when its actually "legal for me to have them"... I guess i was thinking in terms of them being processed and plain in hummus and then compared to being bonded with egg and such but I will just believe the science that that is the way it goes... lol

Tonight was eggplant and zuchinni lasagna! with a salad that just didn't taste right for some reason... anywho...

Geez...I guess it is Italian night in everyone's home!

If anybody wants a killer enchilada recipe...let me know. It is totally indulgent and totally not on plan...but oh so yummy.

I never use a recipe for chili.This one had peppers, onions, eggplant, & garlic sauteed in evoo. Add 2 cans of black beans, 1 c of pumpkin, 2 c chunky tomatoes, and a whole lot of spices (exotic chili mixes & cumin mostly). Right before it was done I tossed in a box of Fantastic Foods taco mix. The whole thing was done in an hour. Everything is flexible - that's just what I had in the house :) DP ate hers with a little rf cheese & greek yogurt, I just added some hot sauce to mine.

Thanks Cyndi- I don't ever really use a recipe for chili either but dh won't eat onions or celery or peppers(all the veggies I like to add to mine basically) I was wondering where the pumpkin came in if it was canned or chunk or what? Thanks! I will definitely try the pumpkin in my chili next time! I like the fantastic foods sloppy joes too!( I haven't tried the taco kind yet)

I cooked a pie pumpkin last weekend and have been enjoying it - in ww bread, chili, yogurt & leather. Now I want to pick up a few more :)

Tonight I'm finally trying this, African Inspired Crockpot Soup with Peanut Butter, Chiles, Brown Rice, and Lentils, http://kalynskitchen.blogspot.com/2008/10/african-inspired-crockpot-soup-with.html. Will let you know how it is!

Thats cool Cyndi- so do you have a dehydrator that you make the leather in? I can't keep up with who all dries fruit and stuff around here... lol

tonight i am going to try to make some chicken breast nuggets with flaxseed breading???? with green beans and i want to try a new dessert....we'll see!

Tonight we had cabbage, onions, boca brats and carrots cooked in the crock pot... Made some potatoes in there for dh too... It was yummy once again! But not as good as last time, that is one thing about my cooking- I never follow a recipe and nothing ever turns out the same!!! Thats what DH says anyway! It was pretty good though, now to have a black bean brownie for dessert!

Edit:
I was thinkking wishing I could have some ice cream with the brownie, and thought- DUH- I had a fudsicle with it! yum!

The soup was good - very nice flavor. I prefer my soups a little thicker so next time will use twice the lentils in the recipe. I don't think that will have a negative impact on the flavor. Just remember 6- 8 servings (I would say it makes 8-10) because there is a whole cup of peanut butter :)

Lean beef filets cooked in olive oil, garlic, onions, peppers and mushrooms. It was yummy. Spinach salad on the side.

I just put on a crockpot full of that Peanut Butter, Lentil and Chili Soup that Cyndi recommended for tonight. I sneaked a taste of it, and it's out-of-this-world! I can't wait until suppertime! :T

I'm taking advantage of late season produce whenever I can so I think a frittata with chard & lf feta is on our menu with a side of butternut squash and maybe some roasted brussels

I'm going to have to try that lentil and peanut butter stew...even though the title makes my stomach turn.

Tonight we're having roast with mashed potatoes, garlic wilted spinach, and salad.

My gosh that Butternut Squash Lasagna is good. Had it last night and am planning on cleaning up some of the Broccoli Cheese soup tonight ... unless I decide to have Lasagna again. Oh it was so very very good.

7 layer taco dip with rf beans, lettuce, tomato, cheese, jalapenos, guacamole, sour cream. I will have mine over extra lettuce with some sf taco sauce! YUMMY! I am starving- off to throw this together!

We're having leftover Peanut Butter Lentil Soup with RIKKI'S "cheese crackers". :drool: That soup is DELISH!

Man...so many new recipes floating around that sound good. The butternut lasagna sounds right up my alley these days.

For our Halloween/Fall themed meal tonight we're having: Roasted butternut squash and ravioli stew (ww 4 cheese ravioli and a few ww butternut raviolis), Spinach salad, ww rolls and caramel apple salad.

I had the white bean pesto soup with spinach & red pepper ala PEARSHAPE last night. This was a wonderful recipe! My husband and I both had seconds. :T

Since we're expecting a houseful for supper, I'm making a turkey dinner with all the fixings today for them. For myself, I'll have a big helping of the spinach salad w/cranberries and pecans, and some roasted veggies. For dessert I'm having some SF ice cream sprinkled with pumpkin pie spice.

Tonight we're having chicken spaghetti with lots of veggies and ww pasta. string beans on the side and apple crisp for dessert.
