South Beach Diet - Help Me Make This Recipe SBD P2 Friendly

I'm reading Fitness magazine (I love this magazine) and they have a picture of a stack of fruity pancakes and they look so good. They say it's delicious and healthly, but looking at the ingredients it's not totally SBD P2 friendly.

Please transform this for me! Thanks!

Recipe belongs to Canyon Ranch (page 141 in Fitness Magazine May 2008)

WHOLE-WHEAT BUTTERMILK PANCAKES W/ FRUIT

Makes: 6 servings
Prep Time: 15-20 minutes

3/4 cup bread flour
3/4 cup whole-wheat flour
3 TBSP of sugar
1/4 TBSP of salt
2 1/2 tsp of baking powder
1 tsp of baking soda
1 TBSP of maple syrup
1 large egg
1 cup buttermilk
3/4 cup 2% milk
2 1/2 TBSP canola oil
1 cup berries or chopped fruit

In a large bowl, combine dry ingredients. In a medium bowl, combine remaining ingredients except for oil and berries; mix well. Add wet ingredients to dry ingredients; mix until smooth.

Lightly coat a griddle or large saute pan with canola oil and heat over medium heat. Ladle approximately 3 TBSP batter on griddle and sprinkle with 1 TBSP berries. Cover berries with 1 addtional TBSP batter and cook until bubbles form. Flip and cook other side until golden brown.

Nutrition Facts Per Serving: 254 calories, 8g protein, 38g carbohydrate, 8g fat (1g saturated), 3g fiber.

I'd use all whole wheat flour for starters. Whole wheat pastry flour might make it lighter. Then leave out the sugar and maple syrup or sub Splenda and sugar-free maple syrup. Skim milk instead of 2% and then it should be fine.
Somebody posted a SB-compliant pancake recipe on the board not long ago. I haven't tried it but it looked good - it's probably under Ph2 breakfasts.

I posted the other pancake recipe, and it has oatmeal (ground to a flour) with WW flour,and it's awesome. I'd try oatmeal too!

I don't know if any of you have tried this, but I substitute while flour for white whole wheat flour, you can find it in most supermarkets, the brand is King Arthur. It's supposed to have the same amount of fiber as regular whole wheat, but instead of being made out of hard wheat it's made out of soft wheat, which makes it lighter than regular whole wheat. I am also using Agave Nectar as sweetener on most of my pancake/baking recipes. It has a lower glycemic index than honey or sugar, it tastes really good with oatmeal. You can find Agave Nectar on any health store.
