Well I normally make a chop chop chicken salad, I just ate it a it was fantastic, the idea is to cut everything up into srips, its alot of chopping but I find it relaxing.
2 bell peppers
1 english cucumber
400 grams off Light Feta Cheese
Cherry Tomatoes
Gem Lettuce
3 cooked chicken breasts
all chopped up and mixed (easier if you mix by hand) in a bowl
then add what makes it very tasty,
8tps of Olive Oil
4tps White Wine Vinegar
2 tps English Mustard.
its very yummy....
works out at about 4-5 points per serving. its very tasty

My favo chick salad
chicken breast-I simmer mine in chicken stock
Light mayo
black olives
celery
onion
salt/pepper
sliced almonds
I really dont have exact measurements.I just figure points as i make it because I make a different amount each time.It is soooooo yummy.I do cut my chicken up in small cubes.celery and onion are finely diced.black olives are sliced.
