6 strips of bacon - all visible fat removed & cut in 1/2" pieces
1 green pepper - sliced
1 med size onion - sliced
2 med sized zucchinis, sliced in 1/2" slices
1/2 tsp cumin
1-2 packages of Badia Sazon Tropical seasoning with Achiate & Culantro
salt & pepper
Cilantro (optional)

Render bacon over high heat, add pepper and onions and saute. Add zucchinis and seasonings, cover. Cook over medium heat until zucchini is soft. Serve over rice.

Makes: 2 servings
