South Beach Diet - Whats for dinner??? September 1-8
Didn't know if there was any particular reason the other thread was closed... its said it went thru the 2nd... alas, I made a new one anyway! Hope thats cool- I love seeing what everyone has for dinners and it gives me new ideas all the time~!!
Today we had quesadillas with WW tortillas black beans and crumbles, and cojack cheese. with lettuce tomato, avacado, black olives, and jalapenos. YUMMY!

I'm having shrimp stir-fried with peppers and onions over steamed shredded cabbage or brown rice - probably cabbage as I've been too heavy on the carbs lately.

I SO copied the stirfry over cabbage idea. We had beef stirfry strips and I decided to make beef stirfry. Sent BF to get cabbage so it's all stirfrying together; homemade asian sauce that I make, to ensure it's sugar free, the beef, cabbage, broccoli, onion, and green beans. Not the same recipe but I worked with what I had, and copied the cabbage part. I wish I had shrimp and green peppers, now THAT sounds delicious.
Rdw1 is right, this thread DOES give you new ideas. :D

London Broil on the grill, corn on the cob (on the grill-off plan I know), roasted veggies in the oven (yellow pepper, onion, grape tomatoes, celery, portabella mushrooms, carrots, broccoli)
(leftover beef and roasted veggies with ff refried beans already packed for lunch tomorrow)

We're having Mexican Chicken Soup from the Quick & Easy cookbook.
Sometimes you have to figure out how to serve the Taco Bake so that your kids like it. Brian likes more beans than meat so I decrease the meat or increase the beans. Certain toppings he doesn't care for. Sometimes he likes it over salad, sometimes in a tortilla and sometimes with tortilla chips.

I fixed the stuffed peppers I found in the recipes section and wow they were supringly good and literally stuff with veggies. Also had a salad along with it. YUM! Such a nice change from all the chicken.

If I can make a suggestion on that....use less liquid! It was so soupy....very tasty though.
Finally I can cook....so long peanut butter sandwiches!
Tonight is chicken stroganoff, ww egg noodles and steamed broccoli.

Grind it up and use it like breadcrumbs....Also, if you quick-saute veggies to put in your meatloaf (it's actually excellent), throw the ground oatmeal in with that, the moist veggies make the oatmeal almost translucent.

I guess it's a no-go on chicken stroganoff - MIL gave us a ton of food that she wouldn't be able to get cooked before it went bad w/o power. It was already unthawed, so I couldn't put it back in the freezer.
Looks like we're having chicken divan tonight - I'll probably still make steamed broccoli though.
tonight was sauteed zuchinni with mushrooms and tofu with sesame oil and hot chili sauce with tamari. Very good...
I probably had too many peanuts today but I was hingry and it was the safest thing at work!
Lunch was a ww tortilla with 1/2 avacado chopped in it with tomato and a bit of ranch with a salad. very good! oh, also some green beans with slivered almonds- I really did have too many nuts today!

phase 1 goodness:
a can of rotel tomatoes with chilies
a zucchini sliced and quartered
an onion sliced small
a can of black beans (rinsed and drained)
can add peppers and/or mushrooms if you like
and the protein of your choice
tonite it was chicken. last week it was ricotta with parmesan.
and enough left over for lunch tomorrow!

We're doing chicken and veggie stirfry over shredded sauteed Napa cabbage.
I broiled a ww tortilla in the oven till brown and crispy- then topped it with black beans and crumblers with lettuce, tomato, black olives- No cheese.
Super yummy- I don't know if I was just really hungry or what but it was FABULOUS!
