1. Combine all ingredients except cooking spray in a large zip-top plastic bag; seal bag, and
marinate in refrigerator 8 hours or overnight. Remove steak from bag, reserving marinade.
2. Prepare grill or broiler. Place steak on grill rack or broiler pan coated with cooking spray,
and cook 5 minutes on each side or until desired degree of doneness, basting frequently with
reserved marinade. Cut steak diagonally across grain into thin slices.

1/2 cup flat ale
1 tablespoon brown sugar
1 tablespoon red wine vinegar
1 teaspoon dried thyme
1 teaspoon beef-flavored bouillon granules
Cooking spray
Freshly ground pepper -- optional
Thyme sprigs -- optional

Make-Ahead Tip: Marinate this steak while you work or sleep. When you're ready to cook,
dinner is on the table in 10 minutes. Serve with Crispy Onion Rings and Garlic-Basil Squash.

1. Trim fat from steak; set aside.
2. Place onion and next 6 ingredients in a blender; process until smooth. Pour ale mixture into
a zip-top plastic bag, add steak. Seal and marinate in refrigerator 8 hours, turning bag

Roasted Corn Salsa
4 cups corn kernels -- frozen

2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
2 scallions -- sliced

1. Prepare a gas or charcoal grill.
2. In a small bowl, combine paprika, chili powder, cumin, mustard, salt and pepper. Rub into
both sides of steak.
3. Grill steak, 3 to 5 minutes per side for medium-rare. Transfer to a cutting board and let rest
for 5 minutes. Slice thinly on the diagonal, across the grain.
4. Divide Roasted Corn Salsa among 4 plates and arrange steak on top. Garnish with scallions
and serve. Makes 4 servings: 335 Cal per serving: 32g Pro, 8g Fat (3.1g Sat Fat), 40g Carbo,

Roasted Corn Salsa

1. Heat a dry cast-iron skillet over medium heat until hot. Add corn and bell pepper; cook,

serving. (The salsa will keep, covered, in the refrigerator overnight. Bring to room temperature

2. Preheat broiler. Lift meat from marinade. Discard marinade. Place meat on broiler rack.

4. Remove meat to cutting board. Let stand 10 minutes. Thinly slice across grain on a

1 teaspoon coarsely ground pepper -- (1 to 3)
1/2 cup ready-to-serve beef broth
2 teaspoons cornstarch
4 ounces sliced fresh mushrooms -- (1 /12 cups)
1/4 cup sliced green onions
1 tablespoon brandy
1/4 teaspoon salt

1. Sprinkle both sides of steaks evenly with pepper. Set aside. In 1-quart saucepan, combine
broth and cornstarch. Stir until blended. Stir in mushrooms, onions, brandy and salt. Cook
over medium heat for 3 to 4 minutes, or until mixture is thickened and translucent, stirring
constantly. Cover to keep warm. Remove from heat. Set sauce aside.
2. Spray cooking grid with nonstick vegetable cooking spray. Prepare grill for medium direct
heat. Place steaks on cooking grid. Grill, covered, for 10 to 12 minutes, or until desired

1/4 cup soy sauce, low sodium -- cut in strips

2 tablespoons soy sauce, low sodium
3/4 cup water
2 medium tomatoes -- cut in wedges

1. Combine soy sauce, ginger and garlic. Add beef and marinade for 2-24 hours.

2. In large non-stick skillet or wok sprayed with cooking spray add 2 tablespoons soy sauce and 1/4 cup water. Add beef and cook until done.

3. Add vegetables and all but 2 tablespoons water. Cook until tender crisp, about 10 minutes.

4. Mix enough cornstarch with remaining water to thicken 'gravy' (no more than 1 tbsp is needed usually less). Add to pan and cook until thickened.

5. Add tomatoes and heat through.

1 teaspoon cracked black peppercorns
1 pound boneless top loin steak, trimmed
2 teaspoons olive oil

2 teaspoons unsalted butter -- or margarine
1 tablespoon grated shallots or red onion
1/4 cup dry red wine
1 teaspoon tomato paste
1/3 cup low-sodium beef broth

1. Using your fingers, press 2 teaspoons of the green peppercorns and the black peppercorns into the steak. heat a medium nonstick skillet over medium-high heat. Add the olive oil; let it heat. Saute the steak, turning only once and salting the cooked side, 1-2 minutes on each side. Transfer the steak to a plate.

2. In the skillet, melt 1 teaspoon of the butter. Saute the shallots until wilted, about 1 minute. Add the wine; cook, stirring, until it evaporates about 2 minutes. Dissolve the tomato paste in the beef broth and stir in with the remaining teaspoon of margarine. Quickly return the steak and any accumulated juices to the sauce; reheat about 30-60 seconds. remove and slice the steak. Serve with the sauce.

VEGETABLE COVERED STEAK
12 oz. boneless beef round steak
2 tbsp. all purpose flour
1 tsp garlic powder
1 tsp. black pepper
1 14 oz. can Italian style stewed tomatoes
1/2 cup zucchini
1 cup carrots
2 tbsp water

I added:
package of sliced mushrooms **
1/2 onion, sliced

Spray an unheated large skillet with nonstick spray. Trim fat from beef. Cut meat into 4 serving size pieces. Combine flour, pepper, and garlic powder. Using notched side of a meat mallet, pound the flour mixture into the meat on both sides. Preheat skillet over medium heat and brown meat on both sides. Transfer meat to a 2 quart square baking dish. Combine stewed tomatoes, carrots, zucchini, and water; pour over meat, Cover the dish with foil. Bake in a 350 degree oven for 1 to 1-1/2 hours or till meat is tender. Serves 4.

**I sauteed the mushrooms and onions in a little water and poured them over the meat, then added the stewed tomato mixture.

A VERY filling dinner! And my husband LOVED it (always a plus) :)

1/2 pound thinly sliced roast beef
1 large red bell pepper, cut into thin strips
1 large green bell pepper, cut into thin strips
1 medium to large onion, cut into thin rings
Non-stick cooking spray
4 steak rolls

There are two ways you can cook this, depending if you like crunchy or tender veggies:

Crunchy veggies - Spray non-stick skillet with cooking spray. Combine roast beef, peppers, & onion in skillet. Cook on medium-high until meat is heated through (5-10 min.) Split steak rolls & warm. Divide meat & veggie mixture into four equal servings. Place meat & veggies in steak rolls.

Tender veggies - Spray non-stick skillet with cooking spray. Combine peppers & onion in skillet. Cook on medium-high heat until veggies are tender & slightly browned (about 15 minutes). Add roast beef & continue cooking until meat is heated through (about 5-10 minutes). Split steak rolls & warm. Divide meat & veggie mixture into four equal servings. Place meat & veggies in steak rolls.

Yields 4 servings

Creole Roast - 4 Points

2 pounds Beef tenderloin -- or any lean roast
1 tablespoon worcestershire sauce
1 teaspoon dried parsley -- crumbled
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon celery seeds
1/4 teaspoon ground red pepper
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
1/8 teaspoon ground cloves

1. Trim off any excess fat from the tenderloin.

2. Rub meat with worchestershire sauce.

3. Combine remaining ingredients, sprinkle over meat and rub in.

4. Cover the meat and let stand at room temperature for 1 hour or over night in the refrigerator.

5. Preheat a covered grill to medium (if using coals arrange them around a drip pan).

6. Cook on the covered grill for about 45 minutes to 1 hour (depending on doneness desired) or for rare (45 minutes) until meat thermometer reaches 140 degrees F; for medium (55 minutes) until the meat thermometer reaches 160 degress F; for well done (1 hour) until meat thermomemter reaches 170 degrees F.

Beef Bourguignon

1 can FF Beef brother
1 cup burgundy or other full bodied red wine
1/2 cup water
1 envelope (1.2 ounces) plain brown grave mix, (I use Knorr)
2 teaspoons bottled minced garlic
2 bay leaves
1 teaspoon dried thyme
5 slices already cooked bacon (I use turkey bacon) not crisped
1 large onion (about 1 cup chopped)
20 baby carrots
8 ounces already sliced fresh mushrooms
2 pounds beef cubes for stew (trim fat)
1 bag (16 ounces)frozen small whole onions (you can also use a drained jar of onions) Just don't use flavored onions
Salt to taste
3 Tablespoons cornstarch

Pour the beef brother, wine and water into the crock of a 4 1/2 quart or larger slow cooker. Pour the powdered gravy from the envelope into the broth mixture, and whisk until any lumps disappear. Sprinkle the garlic, bay leaves and thyme over the broth.

Cut the bacon into 1/4 inch pieces. Scatter the bacon in the crock.

Scatter the chopped onion pieces, carrots and sliced mushrooms evenly in the crock. Place the beef cubes over the vegetables and press down and stir as necessary to make sure most of the beef is submerged in the broth mixture. Add the whole onions to the crock. (If using onions froma jar, drain them first).

Cover and cook on low 8 hours. (The stew can cook on low as long as 9 hours).

Before serving, remove the lid and stir it well. Remove the bay leaves, taste the broth and season with salt, if desired. Mix the cornstarch and 3 tablespoons of water in a jar that has a lid. Shake well until the misture is smooth and no lumps remain. (The stew needs to be hot when you do this). Stir well, continue stirring until stew reaches desired thickness, about 5 minutes. Serve in bowls. Serves 6

I usually serve this with a spinch salad (spinch leaves only) with FF bottled Italian dressing and a side of sliced apples.

Got this from a great webside www.desperationdinners.com. Has a ton of quick and easy to fix dinners.

You can do this in the oven. Place covered casserole in a 275 degree oven. Cook 4 1/2 hours to 5 or until beef is tender. To thicken, place on top of stove, bring to a boil and stir in the cornstarch mixture continuing to stir until thickened.
