South Beach Diet - Phase 1 Chick Check - August 11 Onwards

Sorry Moderators, I didn't notice any new thread for Phase Oners this week and if I'm out of bounds posting another one, I apologize in advance.

So, I'm on Phase 1, day 1, (for the 3rd time) and I did pretty well if I do say so myself. However, I would like to post my menus for anybody to critique and give me some constructive criticism.

Breakfast:
2 eggs scrambled in 1 teaspoon Smart balance margarine
2 slices turkey bacon
6 oz v8 juice

Snack:
few sticks of celery and 2 tablespoons garlic hummus

Lunch:
Salad with chopped deli turkey
2 tablespoons peppercorn ranch

Snack:
2 stalks of celery with 1 tablespoon of Smucker's natural PB (ingredients: peanuts and salt)

Dinner:
serving of Taco Bake (I added a can of tomatoes with chiles to it instead of the can of chiles in the recipe, and some powdered cayenne pepper)
2 tablespoons of reduced fat sour cream
3 tablespoons chipotle salsa


So now I'm full and really don't wish to eat anything else... oh crap. I just realized I have had no dairy today... the sour cream doesn't count, right? And the cheese on the taco bake is in a different group.

What should I do? I'm full right now. How are the rest of you Phase Oners doing?

Hanging in there! Day three of week two for me, following the book meal plan exactly but now that I have the hang of it I think I might start making some substitutions around my own personal tastes. So far feeling really good and very happy with my weight loss thusfar.

Mel, I usually drink a glass of milk with dinner, and since I've been home drinking it with lunch to get my dairy in! It also helps me to eat less at those meals! :)

For awhile I was buying cottage cheese and eating that plus the milk but a) it's cheaper just buying milk and b) when I add the sugar free jello to the cc I find Myself eating way too much dairy! oops!

Lunch Salad with Tomatoes and 4 slices LF Turkey and 1/4 cup lf cheddar
Dinner
if I eat at home
Big "chefish" salad
If i eat out (girls night)
Grilled Salmon Salad or Roasted Veg Salad

Loriann, it's a good thing that I love skim milk. Last night before I went to bed, I drank about 1 3/4 cups of skim milk because after posting my menus I realized I had skipped the dairy for the day. I like cottage cheese; but mainly just with pineapple, and I can't have pineapple... wah. :p


Hi KO, how is that tzaziki? I saw some in the hummus section the other day, made by the makers of the hummus brand I like (Cedars). It looked really good, it was cucumber and garlic I think. I got the hummus though because I wasn't sure about it. I think I'm going to go get some tzaziki today because I really want to try it. Your menus sound really good as far as I can see. Yum!

Me: I'm eating breakfast right now, 2 strips of turkey bacon and 2 scrambled eggs cooked in cooking spray, and am about to go get my 6 0z of v8 juice. So nothing new there. I'm gonna make some coffee and use nonfat dry milk as my 'creamer' and some liquid skim milk to get some dairy servings in.

Nonfat dry milk is okay, right?

Actually wait, I'm gonna make some chocolate custard and have that for dessert, but I can still do that and have my milk in my coffee.

I have a question for you phase one ladies. I know you can have sugar free Jello, which I've been eating a fair amount. Would sugar free pudding work as well? I just happen to have a box in the cupboard and thought it would be a nice switch, on the label looks ok to me but haven't heard much about it....

Hi AutumnRose, I was very sad when I find out I could not have sf pudding on phase 1. However, there is a great chocolate custard recipe that I've been making to kill the cravings. It's pudding like, but a bit difficult to cook to perfection, but tonight I did very well. I'll post tomorrow if you're interested.

KO that dip sounds really good.. oh man, I wanna try it.

My menu for today, Wednesday: (Any critiques are gladly welcomed)

Breakfast:

2 scrambled eggs and 2 slices turkey bacon
6 oz v8


Snack:

Celery & 2 tablespoons garlic hummus

Lunch:

Salad w/ sliced deli turkey, chopped tomato, 2 tablespoons peppercorn ranch, and a serving of peanuts on top

Snack:

Piece of cheese

Dinner:

Pork stirfry with porkchop strips, broccoli, and onion (Stirfry sauce was homemade with soy sauce, ginger, garlic, vinegar, and sesame oil)

Dessert: bowl of chocolate custard (eggs, skim milk, hershey's pure cocoa, and splenda)


But I'm hungry right now, what to do, what to do!

Last night I did well I had salad with Roast Beef Luncheon meat and Swiss MIL gave me a big bag of the deli cold cuts I won't spring for $ wise
and And And! I made a version of the PB cookie! sooo good! I brought it for a snack today!
thus far this is todays Menu
Breakfast
Salad with2 slices swiss 3 LF turkey and salad with Salt pepper and some rf parm cheese
Coffee with Lite van soy milk
Lunch
Salad with Swiss and roast beef
Dinner
Turkey burgers topped with warm spinach salad (a smattering of toasted walnuts, feta, and garlic)

Potential Snackage
Cottage cheese
Celery with either LCL or the above CC
2 choc PB cookies
string cheese

I know I'm going over my nut limit a bit, I may eat 1 pb cookie not 2 it depends or I'll save it for dessert
I've been eatign so much cheese lately I'm afraid I'm going to turn into cheese
and I keep forgetting to HB some eggs!

for faux chocolate pudding that is phase 1 friendly -

I mix plain, nonfat yogurt with splenda and cocoa powder. You can top it with sf ff whipped cream if you like. DS and I had this last night with blueberries on top (I'm on phase 2) - delicious!

KO - I made the cookies but they are a little dry and crumble easily. How did you change the recipe? I added a little cocoa powder but they are not very chocolaty. Do you think an extra egg would help?

They are definitely crumbly
1 cup PB
1 egg
1 tsp of vanilla (the org recipe calls for 1/2)
1/4 cup splenda
1/4 cup cocoa powder
Bake at 350 for 8-12 min depending on size
mine took 12 and made 15 cookies

They are definitely dense I want to get some SF flavored syrup to try in it to see if it makes it stick together more

I have SF syrup. It didn't occur to me to use that. (I have hazelnut) Now I am out of PB since I only had a small jar in the first place. It does seem that even though they are dry I have more of them than I should so maybe I shouldn't explore this too much! I may have to wait a week or so before making them again.

Yum KO, your salads all sound good (swiss is like my favoritest cheese ever) (yes I know favoritest is not a word hehehe), and the spinach salad sounds savory, I must try that.

Thin4good, that sounds like a good treat, I'll have to try that sometime. It sounds easier than custard; custard tastes just like pudding but it's so easy to curdle. I made some last night which is virtually perfect except for some slight curdling that I missed, every now and then there was a small egg particle mixed in (eww), but for the most part it turned out well. The cocoa yogurt sounds much easier to do though.

Mm, I love simple and easy PB cookies, I made some a few weeks ago with just egg, PB, and splenda, and even BF liked them. They were indeed crumbly but I found that to be delicious. I wonder if a tablespoon of healthy margarine would solve that problem, but I dunno.

Okay, I was really hungry this morning, so I've had like 3 egg whites scrambled plus one whole egg scrambled together with a slice of cheese, 2 slices of turkey bacon, v8 juice, and then 2/3 cup of the chocolate custard.

the salad is super easy!
toast the walnuts for a few min in a nonstick pan shaking it
set aside
spray /Oil pan I use the bag of frozen spinach dried minced onion if I have it italian seasoning salty pepper minced garlic to taste thenmix in crumbled RF Feta sometimes parmesan too

restarted this morning (kinda half-heartedy, tho) with two soft-boiled eggs and tomato and lo-fat mozz. ummm and two lf milk capuccinos.

melanie- this is my third time around, too! time to move out of the fat fat pants

the PB cookies sound delish..PB is my fave veggie/fruit u name it :)
KO that salad does sound scrumptious, will try and work it in.

There's plenty of room. Yum lowfat milk cappuchinos sounds good... The best I can do is instant coffee with skim milk, splenda, and a bit of hershey's cocoa to make a chocolately coffee drink. Hmm, I should probably post that in the recipe section, it is really good if you're craving Starbucks or something.

I agree, it really is time to move out of the fat pants! I can't wait.

So are you a native of Germany or a foreigner residing there? I've mainly just seen American & Canadian chicks here, one chick who lives in India, and I saw one Irish woman and I don't know where she went off to. I think it's pretty cool to converse with people from other countries who have like interests.

I messed up this week :( but I Messed up on purpose... it was my one year anniversary and I had a smallish peice of french bread, and half a peice of chocolate cake, two glasses of wine (should have stuck to 1), and a bite of potatoes au gratin...

Does that mean I have to start over phase 1? I can do it, no prob. it feels like a breeze now. I feel like I could keep eating this way forever... I felt like I owed it to myself to indulge... the restaurant was a five star restaurant and we've never spent that much on dinner before... plus it freaks Jacob out a little bit that I've changed so much in the last three weeks... he might have died of a heartattack if I turned down that cake... and then it would be four years for nothing :)

I'm actually amazed that the cravings didn't come back full force after I had chocolate cake... that's my first chocolate in 20 days.... I thought it would ruin everything. but it actually wasn't very good cake, not very rich...

Anyway, should I start over?

Glad you had a great Anniversary! Life does go on despite South Beach. No, don't start over - just keep on trucking with a pure Phase I but remember to transition into Phase I.5. Sticking to Phase I is not sound nutritionally for more than 2-3 weeks.

Phase I.5 is easing into Phase II by adding just one thing for a week - e.g. a serving of berries. And then the next week add a single serving of something else.

Nope - eat berries (or whatever fruit or starch you choose) for the whole week. Then continue to eat the berries or starch the next week and add another choice from the Phase II list.

sciana-congrats! and about the chocolate cake..isn't weird how we'll indulge in somehting we used to luuuurve and it's just not as yummy as it used to be??? (my disappointment was reeses pieces..just can's stand up to the sb pb cups..)sbd really "opens up" your palate in a good way!

So how much is a serving of blueberries? (referring to starting ph 1.5 with berries or something) I bought some fresh blueberries, they were reduced so got them for .99 cent for each little tub, and stuck them into the freezer. Anyone ever tried making a blueberry milkshake or smoothie? I thought I could pull out the blender and put in some fat free plain yogurt and the blueberries when I started ph 1.5.

I'm back to day 1 again... won't bore anyone with the details, stuck in church all day and forgot to eat breakfast, leading to a sugar binge, well, at least thefact that breakfast is one of the most important meals of the day was definitely reinforced! Breakfast is definitely important and NOT skipping meals is DEFINITELY important not only in Ph 1, but in all. Just thought I'd mention this because I am realizing, through my screw ups, what triggers really bad binges. It's good that I'm learning to realize this... because in the end it really helps.

I had for breakfast, 2 eggs scrambled with a splash of fat free milk and a few slices of reduced fat cheddar AND salsa. Ran out of v8 so figured the salsa would 'veggie up' my breakfast, plus had the 2 slices of turkey bacon.

snack: celery and hummus, lunch: deli turkey salad with one serving dressing and serving of peanuts thrown on top

Dinner will be the Chicken Divan bake, although I'm cutting out the mayo part. Uh, I need to have a snack.

i am totally with you on this one! it may sound redundant but brekky really is the most important meal of the day-at least for me. just like in ur case missing brekky triggers my sugar cravings and usually the whole day is pfthllp!
so welcome back to p1! recognizing ur unheathy eating patterns is def a huge step forward.
re: blueberry portions-3/4 cup. i make my smoothies with lf buttermilk- sometimes add a jigger of agave nectar.(only on phase 2, of course :) )
re: exercise-went on a 2 hour hike yesterday in the rhine valley. the gorgeous scenery and lasting impressions made the ardrous physical part of it so worth it!

Okay, my menu for yesterday was as follows, if anyone sees an area where it's lacking please let me know:

breakfast:
2 eggs scrambled with salsa, 2 slices turkey bacon

snack: celery and hummus

Dinner: chicken divan on top of broccoli



This morning I have eaten a BLT ranch salad: lettuce, tomato, chopped green pepper, cucumber, 3 slices chopped turkey bacon, ranch... still hungry, gonna drink some FF milk.

I tried the V8 yesterday... I had to force myself to drink it! I couldn't stomach it again this morning.

Your breakfast sounds good to me but I would make sure to add more veggies in as the day progresses. I'm going to have chicken broccoli stirfry for lunch, gonna go marinate the chicken in soy sauce, garlic, ginger, sesame oil until then. Yum!

Yup! More veggies to all. Salsa is OK but, unless it's sugar free, it's really just a condiment unless you eat a half cup.

Luckily I had at least 1/2 a cup, (if not more because the stuff poured out too fast), the eggs got really soupy, red and tasted more like salsa than egg. Sugar free, luckily. I didn't realize it was a condiment though, so next time I'll just chop up some veggies and throw them into my eggs, then maybe top with salsa as the condiment, for flavor. I'm glad I know now though, I might have ended up using salsa in place of veggies and that would have messed me up and then I'd be back to re-starting ph 1 again.

I definitely need to get more veggies in. I'm hungry for broccoli!

Hey everyone, I know I have been gone for awhile but I'm back on the beach. Today is my first day on South beach...Im really going to be strict with Phase 1 because I have found myself at 230 pounds at only 5'1 which is not cool..so far my menu has been:

B: 2 eggs scrambled with broccoli
Snack: 2 cheese sticks
L: Turkey Burger, broccoli
I am planning on having some yogurt for snack and than some beans, broccoli and chicken for dinner. I know its sounds bland and boring but I really need to program myself to eat right and this is the easiest way for me to do it effectively. Im looking forward to getting this weight off..thanks for the support.

Well, I fell off phase 1 last night, really sad too because it was my 11th day... I had a peice of chocolate cake :( the end peice. I barely stopped myself from going to the store on my lunch break and sugar bingeing myself into a stupor... then I had a shot of tequila when I got home... I had pretty much given up at that point but it was the worst thing in my kitchen.

But this morning I was down to 153. And I felt horrible for breaking down... I even felt like not posting but I made myself.

So here it is, hidden at the end of the chick check in . Today I had two hard boiled eggs with molly mcbutter and a glass of 1% milk. For lunch I am having a black bean salad. For dinner I am having my pizza soup (veggie laden and oh so yummy)

And I'm going to find time to transfer my playlist to my mp3 player so I can use it for emotional support tonight at work and block out the nearby workers who are talking about what yummies are in the break room (always happens)

What I am glad about is that I didn't eat the cake on an empty stomach... I ate it right after dinner. So I'm hoping it didn't spike my insulin too much. I don't want the mad cravings to come back... I can feel the difference between now and before. I still have cravings but they have less substance...

Can I have the recipe for the Pizza soup?

OK, so I want to tell you all how strong I was today (I'm amazing myself!)
I took the kids to Chuckie Cheese for their last day home. (For those that don't know what that is, pizza place with games) . Anyway, I got the salad bar, loaded up on lettuce, veggies, kidney beans, egg. I quickly ate my salad while waiting for the kids pizza to be cooked, hoping I would be full before the pizza came. I ordered the kids a personal size pizza because I knew between the 2 of them, they would finish it off. I shared my salad with the kids while we waited. When the pizza came, I divided it between the 2 of them and I was actually full!!! My daughter never eats her crust, and I of course always used to eat hers, but today, I LEFT THEM ON HER PLATE!
I even resisted the Starbucks drive-thru on the way home!! YIPEE! I am so darn proud of my self!

Just had to share. This was huge for me! Now that I did this, I am hoping that I can tell myself the rest of the day "Don't cheat, you didn't pass up the pizza to blow it at home!"

Also, v8 juice makes a fantastic soupbase. I made meatball soup a week ago or so using v8 juice, water and boillouin as the base. Rich and filling.

Sciana, just keep going, you were on day 11 so you were almost there and there's no need to quit or give up. You're doing great. And I understand the feeling. Yesterday I did so well, we went to McDonalds and I had a salad with grilled chicken! I was proud, I resisted the southern chicken sandwich with pickles and the Spicy Mcchicken and the Big n' tasty. But I must say, that mcdonald's salad was not very filling.

THEN we went to damn Dairy Queen and I don't really care for anything from Dairy Queen EXCEPT the Mocha Moo latte... so rich and chocolately and coffee-y and icy... bf got me one and got a LARGE to boot.

I felt like I had ruined my whole day but, I'm back OP today. I'm realizing my trigger points, when I skip snacks and breakfast and such, I binge and eat pure crap. And when I'm stressed, even if I'm OP, if temptation is practically shoved in my hands then I cave.

I'm probably gonna have beef steaks with sbd mashed potatoes and maybe a side of spinach or something tonight. Gotta take the beef steaks out to defrost in the microwave.

Today I had 2 eggs and 2 slices of bacon and v8 for breakfast, and I started having some crazy sugar urges! I don't understand that.

Lunch, was leftover SBD "mashed potatoes" and green beans.

Dinner will either be turkey parmesan (turkey cutlets 'breaded' with parmesan cheese, baked, then baked some more with tomato sauce and mozarella poured on top) and veggies, or grilled lime "butter" salmon with veggies.
