I'll get us started for the week. DH and I are having Melt-in-Your-Mouth Pot Roast, leftovers from last night, and steamed green beans and salad.

I'm thinking tilapia fish sprinkled with Old Bay Lemon pepper tonight, with side of spinach and cup of 1% milk.

Chicken breast done on the GF grill with mushrooms, red peppers and onions plus steamed green beans with some black beans thrown in for extra fiber

Tonight it's baked chicken breasts, roasted eggplant and salads at my house. The kids will be having baked potato rounds as well.

We're having chicken parmigiana, kind of--unbreaded chicken breasts with mozzarella over whole wheat spaghetti with homemade tomato sauce. Yum!!

M - Taco Pie/Bake w/fresh salsa and guacamole
T - Grilled Bison Burgers with provolone, sauteed onions/peppers, and tomato "pizzas"
W - Shrimp scampi w/ SB mashed potatoes and salad
Th - Fiesta Chicken with black beans, guacamole, and fresh salsa
F - Blackened Salmon with sauteed spinach, sauteed zucchini/squash/onions

Tonight is home made Minestrone soup with tons of veggies and Ceci (chick peas.) We'll also have a salad and toasted whole wheat bread cut into strips with olive oil and sprinkled with parmesan cheese. For dessert, we'll have cantaloupe and watermelon. (only a little taste of watermelon for me.)

Tonight DH is having leftover pasta and since it isn't whole wheat I will have pinto beans mixed with Rotel tomatoes & chilies with lf cheese & dollop of lf sour cream and a little left over Jicama Salad.

I was going to do regular burgers but we'll be having those at Nat'l night out tomorrow
and rice for DH if he's hungry tonight

I have chili in my freezer!!!

Jessie. Thank her for me. I make two recipes twice a month and we eat one and freeze the other. DH can't get enough of it. I'm going out of town next Sun. through Fri., so I will make two Saturday. I'm certain he'll finish both by the time I get home. :D

I'm leaving town Thursday, so I'm trying to use up the fresh ingredients, so it was a concoction.

Grilled ham and cheese sandwich (l.f. cheese, ww bread, l.f. ham)
Zucchini "fries" (zucchini dipped in egg, then a light sprinkling of bread crumbs

Well I missed my dinner, I got up around 10pm. I've been extremely tired lately and don't know why. Sometimes I end up skipping dinner because of this, cause how can one eat late at night and lose weight anyway?

In teh confusion of Donna and her Dh plus going out for teh afternoons, I forgot to thaw the chicken and ended up with a pita pizza with veggie sauce and an Italian sausage. :yikes: So tonight will be chicken breast done on the GF grill with mushrooms, red peppers and onions plus steamed green beans with some black beans thrown in for extra fiber. I will prep everything before I go to do pet therapy 5 to 7. That's the only way to survive on these nights although a glass of milk at 4 would help.
How can I bee so old and so stupid at the same time? :rofl:

Tonight we're having Chicken Kabobs w/ Brown Rice Pilaf w/ zucchini, and green salad.

Made WW shortcakes last night. They turned out ok, but a little dry and dense, tonight I might soak them in a little milk before we have them with strawberries.

Last night I didn't have fish, I ate one of my breakfast cups instead with a side of V8. I had had a few servings (I need to not have this on hand) of cottage cheese mixed with orange sf jello . (I think I'm addicted!)

S0 tonight I have the lazy cabbage casserole in the crockpot. I threw in more cabbage, meat, and tomato than it calls for. I want leftovers!

Chicken breast (I thawed 2 yesterday) done as a stir-fry with the peppers, mushrooms that I prepped yesterday and didn't use. I'll throw in water chestnuts and maybe serve over a bit of ww spaghettini.

Need to clean up a ham steak tonight so will have a side of 3 bean salad and mashed cauliflower. Plums for dessert, don’t think they will last another day.

Well, we're going out with friends to a Middle Eastern restaurant, so I'll have their grilled meat with veggies and cucumber/yogurt sauce, skip the rice, and allow myself just a taste of their fresh (white) pita bread.

Got a bunch of fresh shrimp, so maybe boiled ( or gfilled if i feel up to cleaning them!) if boiled then with no sugar added cocktail sauce. roasted cauliflower or grilled veggies and salad.

thinking about trying the eggplant casserole recipe here, either that or maybe just a lean ground beef hamburger steak with onions and sauteed sugar snap peas with a salad.

Bison burgers at a local dive bar - that surprisingly serves organic, good for you food. I'll probably have some baked sweet potato fries and baked zucchini fries as well.

I experimented tonight and was actually pleasantly suprised!! Made a pork stirfry...cut up some pork loin, bell peppers, onions, water chestnuts, green beans, cooked them, then added a conction of a sauce...EVOO, low sodium soy sauce, red wine vinegar, and a pinch of splenda.....GREAT STUFF!!

Today after we picked up my daughter from summer school, we went to Sizzler for lunch. My DH and I had salad bar but we ordered entrees to eat for dinner.

I was able to stay legal yet enjoy a bountiful of choices from the salad bar. My DH however went a little overboard. He had a bowl full of sourdough bread,spaghetti, ice cream, etc. I've long ago decided he's not committed to the South Beach Way of Life. :lol: The sad part is he thinks he is. Hmmm....

Anyway, I ate my entree for din-din and it was quite delish. I didn't even eat it all. I pretty much let my DD eat it.

Another bonus for me was ordering water with lemon and not soda, beer or wine! :-D Believe me, that's a big bonus!!! :D

I had sauteed bell peppers and onions with bits of lean steak thrown in. I make it like a stirfry and then eat left overs for a few days. Tonight I microwaved a bowlful.
