Chocolate Cookies
These cocoa cookies are really more like miniature brownies-each one packed with enough chocolate flavor to ward off the worst craving. And the recipe couldn't be simpler!

Ingredients:
1 cup all-purpose flour
1/4 teaspoon baking soda
4 tablespoons butter, softened
1 cup sugar
1/3 cup unsweetened cocoa
1 egg
1 teaspoon vanilla extract

Directions:
Preheat oven to 350 degrees. Sift together flour and baking soda in a medium bowl. In a large bowl, beat together the butter, sugar, cocoa, egg and vanilla until well blended. Gradually beat in flour mixture.

Drop heaping teaspoonfuls of dough 11/2 inches apart onto a cookie sheet lined with parchment paper or lightly greased with cooking spray. Bake 12 minutes, then cool on the cookie sheet for 4 minutes before removing cookies to a wire rack and cooling completely.

This is actually posted in the weight watchers recipe section...but it is SOOOOO good I have to post it here too!

Cola Chicken

4 boneless, skinless chicken breasts
1 cup ketchup
1 can diet coke

Mix diet coke and 1 cup ketchup, poor over chicken in frying pan. Bring to a boil then turn down the heat and simmer with lid ON for 45 minutes. Take the lid off, and turn up the heat to high until the sauce becomes sticky, and thick. This takes about 10-15 minutes.

This is SOOOOOOOOOOOOOOOOOOO yummy!! It is kid friendly, low in points, tastes awesome, and is SO easy to make!!!!
