This thread is used to share dinner ideas for those of us who like variety and/or are sometimes not motivated to make something new. Please share what you're making for dinner.
Tonight we are having balsamic glazed salmon, grilled asparagus, and a large green salad.

Tonight we're having pulled buffalo chicken with celery and a little blue cheese crumbled on top wrapped in lettuce with broccoli dipped in hummus.

Taco Bake from the freezer and a huge salad of garden greens! Maybe some broccoli soup if I get it made in time.

I was thinking of make chicken with a pesto that I made and froze (made from spinach instead of basil,olive oil, pine nuts,and lots of garlic), with spagetti squash and mabey a salad....but this depends on if the chicken defrosts in time :)........

Shrimp stir fry (shrimp, broccoli, celery, onions, mushrooms, bamboo shoots, water chesnuts, bell pepper, garlic, ginger, sesame oil, sesame seeds, olive oil).

A nice big chopped salad with arugala, tomatoes, cukes, red and yellow bell peppers, onion, chicken breast, a little olive oil and balsamic, salt and pepper. Yum! I can hardly wait! :)

Curry chicken with Rattatouli (my own version using eggplant, carrots, squash, zuchinni & onions + tomato sauce, garlic, salt, and pepper). :)

It's a tossup between stroganoff (made with turkey and veggie meatballs, onions, peppers and lots of mushrooms and served with whole grain egg noodles) OR chicken coconut curry made with light coconut milk, red curry paste, peppers, onions, and chicken served with brown cilantro rice.
I have both pretty much prepared in my fridge, it's just a matter of heating and assembly (and obvious rice/pasta cooking). It all depends on what DH wants when he gets home from work.

Brian and I are having ham, cranberry sauce (made with Splenda), deviled eggs and three bean salad. Fast and cool.

My supper was boring, but tasty. I had a Boca Bruschetta Burger and a tossed salad with Ken's Light Northern Italian dressing. Shortly, I'll top it off with a slice of sf, ff strawberry yogurt pie. :T

I decided to try making the SBD Cola Chicken, it's simmering right now, and smells so good. Mashed Cauli and salad to go with.

Fat Melanie your lasagna bell peppers were really good. i had just bought 2 peppers, so had lots of stuffing left. tomorrow i am going to get some noodles and make a lasagna and freeze it for when i go on p2.

Tonight I'm planning on making a WW pasta dish with chicken, mushrooms, swiss chard, & Parmesan cheese. I'll probably bind it all together with some FF half and half and white wine.

I made the cheesecake bites for my husband's birthday dessert the other night, and they were so yummy. The only bad thing is that you want to eat the whole thing in one sitting :D
I also made a recipe called "Big Easy Shrimp", it was basically shrimp, lots of peppers, onions, celery, simmered with tomatoes. It was really, really good, but I'm going to up the spice next time I make it.

Well after much searching I found the Boca Bruschetta burgers Cottage mentioned earlier (I am so suggestible!) so we are having those tonight and, since it's CSA night, fresh summer squash sauteed with onions and sage over a small scoop of brown rice. I might also steam the cauliflower if I can't wait a night ;)

We had the "Mixed Up Casserole" with a couple of modifications, green beans and a salad. Yummy!!!! And I have enough casserole left over to have on top of some lettuce tomorrow. I'm thinking almost like a taco salad for my lunch. Makes me drool thinking about it!!

We had Cola Chicken over sauteed red cabbage. It was divine! I didn't realize until after I added the cola that it was cherry-flavored, but it didn't seem to affect the taste. In fact, it was even better!
How did you like the Boca Brushetta Burgers, Cyndi? I think they're pretty yummy.

Grilled pork tenderloin, deviled eggs, cooked turnip greens (fresh out of the garden!), cooked squash, and baked sweet potatoes.

I made it and it was great! I loaded it up with veggies, like tomatoes, green peppers, black olives, mushrooms, and turkey pepperoni. I'll definitely be making that one again!!
Tonight's dinner is herb crusted salmon, spinach stuffed mushrooms, and some sort of bean (haven't decided on which yet).

Tonight we're having lemon-basil chicken with sauteed spinach and onions and salad.
The spinach and the basil are fresh from our garden. Yum! I can't wait!!

cola chicken sandwiches on ezekiel buns (I'm making my cola chicken in the crock pot, works really well!), broccoli slaw and apples with cinnamon sprinkled on top.

I love it when I invent a recipe and it works out :) Tonight was a chick pea, chard, cauliflower curry and Quorn roast. The curry was so yummy I skipped the roast. It will make good leftovers but I really wanted the spicy food.

I made ww linguini with hot Italian sausage, crab and shrimp. I didn't eat the sausage, and the sauce was loaded with tomatoes, peppers, onions and black olives, so I had my share of vegetables. Delicious!

Tonight I had baked chicken breast w/ avocado & mozzarella cheese and cucumber, red onion, & tomato salad. Very light and fresh.

today will be red beans and rice along with salad. (Brown basmati rice)
yesterday was turkey cutlets with lemon and capers, broccolini and salad.
