Imma roasting a turkey in the oven right now (I have to plan way ahead with things like turkey or I end up waiting for it to finish cooking at 11 p.m.)! Probably will grill some veggies to go along with it, use the leftovers all week.

Tonight we are ordering pizza. One cheese for the kids, one thin crust veggie for me, and one salmon pesto for everyone. Yum! And salad of course.

I have got to get a grip. Yesterday's dinner, I went way overboard. Note to self: do not order *that much* pizza again. I have to eat something healthy tonight... something low cal... I have leftover cabbage soup in the freezer so I will have that.

Artichoke hearts topped w/ French onion flavor laughing cow cheese YUMMY!
Fresh Strawberries with FF vanilla yogurt

It was all delicious!!!

Hmmmmm.... half of a calzone and a side salad.
There was construction in front of our house (ongoing, actually) and they turned our water off from 3pm to 7pm.
So DH and I biked to dinner. Local pizza place about 5 miles away that makes *the* best calzones, all from scratch. Split one with DH and it was heavenly! Yum. At least I biked LOL!

One of my very favorite meals.........

Roasted Chicken breast, made with tons of spices and garlic and onions. Cooked til it falls off the bone. Incredibly moist and incredibly tasty.
Massive quantities of roasted string beans, brussel sprouts and asparagus, also with garlic and onions.

Tonight I am making something similar to RockinRobin's meal. Not brussel sprouts though. I never could get in to them. I love asparagus and green beans though. I eat them almost every night!

Mom and I went to Bob Evans. I got their lite (senior) breakfast: turkey sausage, egg beaters, sliced tomato, fruit cup and dry wheat toast. Very tasty and less than 400 calories.

Just wondering. Have you ever tried brussel sprouts - roasted? They're a whole other ball game.

No...I haven't. I have tried them boiled :barf: and my friend made them one time for me. I think she sauteed them. All frozen ...I am pretty sure. I pretty much really like all vegetables except those and lima beans.

Do you roast fresh or frozen and how?? I might be willing to give them another chance... ;)

I had some more of that cabbage soup tonight with 3oz ground turkey breast browned and added to the soup. Very good. I also roasted some fresh organic kale. It was SO GOOD. Crispy and salty, mmm.

And I second the roasted brussel sprouts, they are fantastic. I always look those up on allrecipes too.

I roast them fresh. I cut off the little tip, then I slice them in 1/2. I par boil them first. Saves time. I put them in a pot with a bit of water and boil them for about 5 - 7 minutes or so.

Then I place them on a baking sheet which has been sprayed with cooking spray. I sprinkle them with sea salt and lots of fresh chopped garlic and onions and spray them with more cooking spray. I roast for about 20 minutes at 400 degrees, turning a few times, til nice and browned.

We are having a small weenie roast in the backyard with my mom as sort of a Mother's Day weekend kinda thing because we can't fit it in tomorrow. We are using Oscar Mayer 98% fat free 40 calorie turkey hot dogs though.

Thinly sliced tomatoes, red onions and cucumbers in a vinegar, oregano, salt and pepper dressing.

I just put seasoning salt on mine and fry it in EVOO and a little bit of lemon juice. YUM. A dill-yogurt sauce would be good.

I would love to have your recipes for stuffed pork tenderloin and chicken breasts.

Last night was Salmon grilled on a cedar plank, whole wheat penne with pesto, tomatoes, shredded carrots, green onions, diced red, yellow and orange peppers and a little crumbled fat free feta cheese, roasted asperagus and fresh strawberries with fat free yogurt.
