Hello everyone,

I'm 45 and have been on Weight Watchers since 10-2-01. I've lost 31.8 pounds and would love to hear from other Weight Watchers. I tryed the Buddy section but I think that following the same diet would be more helpful. My meeting/weigh in day is Tuesdays. I have about 20 pounds more to lose to make the goal that Weight Watchers endorses for my height and age, and then of course there is maintenance. I began this diet with the intention of making long term changes to my eating and exersize habits that were doable for the rest of my life, not just to fit into a certain size or for some special occasion. (I've had my share of ups and downs along the way where I lost my focus and determination) If anyone would like to buddy up, I also use yahoo messenger and icq so we could chat if we happen to be online at the same time about Weight Watchers, or life in general. If anyone is interested in this type of support, let me know.

Hey, I'll buddy up with you! I am 40 years old and have been a WW member since 1994, got to goal in May of 1995, continued to lose until August of 1995; a total of 120 lbs. I now work for WW as a receptionist but am over goal by about 23 lbs. (for WW) and about 35 lbs.(personal goal). My weigh in day is Tuesday, too!

I would love to give you a hand with your weight loss efforts. I am a WW Leader in the UK and have been now for 9 years. If you want to buddy up it would help me too as I still after 13 years of being a Lifetime member still struggle with my weight. I do have bad times like everyone else.

Hi to all :)

Not quite sure if I'm in the right bit,but saw that a WW buddy was required. I too think it would be better to have someone who is on this eating plan to chat and swap ideas. I try to get my inspiration from my meetings and monthly mags and it would be great if I could keep in touch with someone.


I have 73 Ibs to lose (I have lost 7 Ibs in two weeks) and would like to achieve this by the end of this year.

So look at my profile ( it's a bit short and sweet - not much room to write loads) and if I sound ok maybe we could start getting slim together!

As I reported to ChicagoMs privately, my loss at yesterday's weigh in was .4 -- not great, but I'll take it! I didn't do well last night though, with eating out for dinner. Today I have had 3.5 points for breakfast and will make sure I stay within my range the rest of the day. I also will do some type of exercise today; maybe the new exercise dvd I got.

I am brand new on this board. I am 32..live in NJ, USA. I have a 13 yr. old son. I just rejoined WW a week ago WED. Okay, buddies, I gained this week. :( I had a very stressful weekend and I'll admit that I used it as an excuse to overeat. I was up 1 lb. at my weigh in yesterday morning. I know that I will not have any time to exercise until Friday, but hopefully then I can get back to it. I NEED to lose next week!!

Hello all... great thread! I live in Toronto, Canada and am 28 years old. I joined WW in April 2001 and have lost 49.8 lbs to date - I have a goal of losing 0.2 lbs by my weigh in on Saturday so that I will (finally) reach the 50 lbs lost mark. After that I have another 50 lbs to lose. I hope to do that within the next year.

Great nickname Little Engine, welcome!

I've been having a little too much of everything the last few days, I have to get my focus back. It started with a handful of walnuts and some craisens that I didn't count, and then a cup of polish sausage with saurkraut and potatoes..flavored with bits of bacon... a high fat meal that I haven't had in 6 months and don't even want to imagine the points of. I also had some popcorn made with oil. I'm undermining myself, maybe I'm afraid to weigh less. Tuesday's weigh in is coming up and I'll see what damage I've done.:(

Need another buddy? I just happened upon this thread and thought it was just what I need right now :) I have lost about 40 pounds on WW but still have about 35 to go. I have been at a major stand still with my weight loss for about a year now. Actually, I have put about 10 pounds back on. Maybe I could get some motivation from all of you to help me get things moving again. And, of course, I will offer all my support and encouragement to you guys also :) I'll be weighing in tonight (Monday) and will let you know how I did. Thanks for letting me join!

Hello all... just wanted to update you on my progress. I weighed in on Saturday and made my 50 lb lost goal... squeeked by with a loss of 0.4 lbs, actually, for a total of 50.2 lbs lost. I've got another 49.8 lbs to go!

You'd think that having gotten over that little hurtle I'd be right back on track and ready to get the second half of things out of the way... but no... I had the worst weekend food wise. Oh well... it's Monday, a brand new week. I still have time to get to the gym and make better food choices to correct the mistakes I made over the weekend. I *will* lose for a 3rd striaght week!

Congratulations on your latest loss! It does feel so good to have a loss each week; even if it's just a little one, they add up, as you've discovered!!

I didn't have a good weekend either, unfortunately. We went out to eat twice and although I did great the first time, that second one (Chinese buffet) was just too much for me. I continued to make some not-so-good choices for the rest of the weekend, although I could've done worse.

I think I really need to focus on my hunger because I find myself eating just because "it's time". Or if I have points left at the end of the day, I have a snack even if I'm not hungry. Today I only had 2 slices of toast for breakfast because I just wasn't that hungry. I hope I can keep it up!

I am happy to report that I was actually down .8 this morning! I almost didn't get on the scale because I was so sure I'd gained. BTW, did anyone read the information about Wendie, the woman who varied her points every day and got off her plateau? She'd stay at the low end of her range for most of the week (19 one day, then 20 or 21) and then she'd have a "super high point day" where she'd eat 33 points. It all averaged out over the course of the week, so she wasn't really going over her range. I do know that some weeks when I have a "bad" day but get right back on track the next day I do better at my weigh in. The theory is that it keeps your metabolism guessing. Has anyone else tried this?

There may be something to the varied points theory. My last 3 or 4 weigh ins my losses were all under a pound and I was eating the lower points in my range. This past week I ate in the higher points of my range, I even had a meal that I was afraid to add up as well as a little slice of lemon merangue pie that my sis brought over. Surprising enough, my weigh in showed a loss of 2.6 pounds! I'm all for tricking my metabolism as long as I don't go so far as to gain. This week will be especially difficult because I'm invited to an Easter dinner at my nieces. I will try to bank some points for that day and be mindful of what I'm eating.

Wow, I am impressed with your loss!! You must feel on top of the world right now. I am having Easter dinner here for my whole family and it will be a challenge for me, because that type of stress always causes me to binge.

Gee, thanks Chocolate, after you lost 120 and made it to goal, my loss doesn't seem impressive at all. I do get excited when I hit those 5 or 10 pound marks though, and my most recent loss did get me down 35.8 pounds total.

But ChicagoMs, when I was getting to goal, my weekly losses were usually between 1 and 2.5 lbs. Even though I'd have loved to lose 5 lbs. a week it never happened that way (except for 6 the very first week). I would be so thrilled to have one of those 2.5 lb. losses now! BTW, since I did very badly for the last 2 days I am going to try very hard to keep my points to 18 or 19 the next three days. I'm hoping it'll work like the varied points theory!
Also, since I've been horrible about exercising for over a week, I am going to walk up to the post office today to mail a package. It's not far -- probably under a half mile, but at least it will be something.

Hello everyone,

How are your weigh ins? I weighed in today with a loss of 1.2 pounds, total loss 37 pounds. I wasn't sure how I'd come out because my family celebrates Easter with a dinner at my nieces home, consisting of ham, polish sausage and saurkraut, pierogi (cheese, potato and saurkraut), buttered mashed potatoes and asparagus baked with olive oil and sprinkled with kosher salt. She also had a lamb cake, Kolachky cookies, pecan brittle, and various other desserts. I did not count points during the meal. I had a little of everything I wanted, including the desserts, so that I wouldn't feel deprived. I stuck to the program the rest of the day and the rest of the week and it turned out ok. I'm trying to go to an aerobic kickboxing class twice a week so that all this loose skin might firm up. My wrinkles are showing, but I prefer them to regaining the weight. Spring is late in coming in the Chicago area, its still in the 30's and 40's. I'm looking forward to warmer weather so I can get outside walking and gardening.

Way to go, ChicagoMs!! Sorry I didn't report in on Tuesday -- I went to W.VA with my husband on very short notice and just returned last night. So I didn't have my weekly weigh in this week, although I'm sure I would have had a gain after Easter. I always host our family Easter dinner and it's a lot of stress on me, so I usually respond by eating way too much. I actually did okay at the meal; it was the day before that I did really badly. Then we went away and I did okay for breakfast and lunch, but dinners were the pits. You know, I realized that I'm always waiting for the perfect circumstances to lose weight -- "When I'm not going away" or "Just as soon as all the fattening food is out of the house" or "Next Monday" etc., etc., and IT'S NOT WORKING!! My new mantra, as of today, is JUST DO IT! -- no more excuses or waiting for the right phase of the moon or whatever. The temptations are always going to be there and I'm just wasting my life waiting for the perfect time to get back on program and stay there. My knee hurts so badly right now from all the weight I've gained back (I think it's arthritis) that I don't even know if I can exercise, but I am going to try today, even if it means just 15 minutes on the treadmill. I NEED to start seeing some progress.........

I hear you chocolate, and its funny you should mention the phases of the moon because just before I started weight watchers, my horoscope did say that anything I started within a few days of the 2nd full moon last September would be successful...I started WW on 10/2 and I feel pretty successful this time around with my diet.

If you have Excel on your computer, check out the downloadable excel program that Anna put on her web site, the url is www.onmyweigh.com

I use it to track my weigh ins, you put your starting weight, weigh in day and goal weight on tab one, the program she wrote creates a great sheet on tab two that has all your subsequent weigh in dates where you enter your weights. The program then automatically calculates your weekly loss, your average loss, your body mass index and it puts a graph of your progress on tab three. It really helps me stay motivated.

Thanks for the link. I will be sure to bookmark it so I can spend more time there. She sure looks good! The smallest size I have worn in my adult life is a 10, but I think if I'd been able to firm up I could've worn an 8. Went out to dinner tonight at a buffet restaurant and I really tried to make smart choices. I had a baked chicken breast (but forgot to remove the skin), steamed carrots, green beans and a little stuffing with gravy. For dessert I had a small helping of hot fudge pudding with whipped cream and 2 bites of my daughter's cookie. Believe me, it was a victory, because I usually go totally out of control at restaurants. I have another dinner tomorrow (at church) and the menu is lasagna, garlic bread, coleslaw, applesauce and gooey frozen desserts. HELP!! I may just take my own WW meal.

I am 57. I've been back and forth to WW and love their program. The point system really makes it easy. I lost 30 pounds at the end of last year and reached my goal.

I returned yesterday to lose the 10 pounds I gained. My problem is that I love to cook and make different recipes. I must have 200 cookbooks. And of course love to eat. If I were younger, I would have gone to culinary school to become a chef. But what I think I will do now, is to edit some of my most favorite recipes to make then fit in our point system. I cannot stop cooking and will not eat the same boring foods over and over.

So if anyone out there has suggestions, please feel free. I learned from yesterdays meeting that there is a PowerBar Pria out there. I got some at Trader Joes and they are certainly a great substitute for a Mounds bar And only 2 points as opposed to the 6.

2002 is our year!!!!!!

Nice meeting you, welcome to this board.

Cutting fat and increasing the fiber in your recipe's sounds like the way to go. Personally, when I prepare a meal from a cookbook I really hate to count up the points in all the ingredients, measure the finished product into servings (what a mess) and then divide the points up by the servings.

I don't cook often, but when I do, I limit my serving to one cup of whatever it is I made. That way I get a good taste without going overboard.

That is a great idea...That way you can eat whatever you want by in moderation. Just hope I can stick to the "one cup" and pile up on the veggies.

I am going to try a Muffin that I found on the message board. Now in Points and I hope it is filling and flavorful.

I think that the "one cup" rule would also be a great idea for when you're eating at someone else's house, a restaurant, or whatever and you just don't know how many points to figure for a dish. Of course that would have to be one cup total; not one cup of each thing that looks good!!

Have you made any hardy NO fat Muffins.... 1 or 2 pointers? I made one today that I got from the website and it really wasn't what I expected. I didn't fill the muffin tin up since I thought they would rise. I got about 16 instead of 12. I used strawberries, but it really didn't raise like a normal muffin would. I had one out of the oven and it tasted ok, but not like you get from a Nature Store selling no fat muffins. Any suggestion? I am going to give the Duncan Hines Apple cinnamon a try maybe this week. I will add the applesauce instead of the oil and have eggbeaters too.

This is the one...Although the Kashi muffins are very good, my friend created this recipe for a l point muffin. The muffins are big and very filling.

Dawn's Blueberry/Peach One Point Muffins

2 cups 100% Bran or All Bran
l/2 cup oat bran
l/2 cup whole wheat flour
l/4 cup sugar
l cup fat free buttermilk OR l cup ff yogurt
2 egg whites
l/2 cup applesauce
3/4 cup blueberries
2/3 cup peaches, diced (you can use canned packed in its own juice - but drain well)
2 tsp. baking powder
l/2 tsp. baking soda
pinch salt
l tsp vanilla

Makes 12 muffins - 110 calories - 5.4 fiber - .6 fat - l point

Mix bran, oat bran, buttermilk, applesauce, egg whites, vanilla and sugar. Let stand 2 to 3 minutes. Mix flour, salt, powder, and baking soda. Stir into wet mixture. Add fruit and mix well. Line muffin tins with paper cups or spray tins with non-fat spray. Bake 15 to 20 minutes at 400. Muffins are done when they spring back when touched. DO NO OVERBAKE as they will dry out.

Note: Since I don't like berries, I replaced the blueberries with 3/4 cup diced banana. Quite good. Enjoy.

Hey, I was just thinking about muffins today! Bought a package of the WW blueberry ones, but they're too expensive to buy very often. Just as soon as I get the cereal in the house I'll try your recipe.

Oooo thanks for the muffin recipe, I'm going to try making them over the weekend.

I've been buying a fat free muffin mix and baking them, but they are small. The mix comes in cranberry or cinnimon/apple. I also tryed adding a can of pumpkin to the recipe to increase the volume or number of muffins without increasing the points since pumpkin is considered an unlimited vegetable. The muffin mix makes 2 point muffins.

Another trick I use is to add a can of pumpkin to Jello brand instant fat free - sugar free chocolate pudding mix. A whole cup of the pudding with a tablespoon of Fat free cool whip is two points.

Well I had my weekly weigh-in and it wasn't good. :rolleyes: Over the two weeks since I last weighed in I gained 2.8 lbs. Sigh. I knew it wasn't going to be good, but ugh! that was BAD. However, I am still sticking with my "just do it!" mantra and it seems to be working for me. I didn't eat the last of the cookie bars that my daughter baked "just to get them out of the house" and I HAVE been counting my points almost every day. I am not going to give up -- I WILL get back to my goal!!!

I bought these little chocolate KAT cookies at Trader Joes yesterday. 15 cookies for 2 pts. They will be the answer to my 3pm chocolate craving. Also the Power Bars have a new bar out called Pria.... I like them alot too. Only 2 points. Found out about these from the WW meeting. Contact me at this address if you need a boost!!!

We don't have Trader Joe's; at least not in Ohio. I've heard so much about it-- wish I had one nearby. BTW, I had a lightbulb moment of my own the other evening. I had made cookies for my husband, who was going out of town (and thus removing the temptation!), and after I'd eaten 4 of them (2 pts. each) I realized that no matter how many I ate I wasn't going to be satisfied. Some foods are just like that for me; I can eat the entire box, bag, whatever, and I still won't feel "done" with it. So I just stopped!!! Every time I felt like eating another, I told myself that I KNEW it wouldn't taste any better than the first one and it was pointless (no pun intended!) to keep eating. That was a miracle for me; to be able to stop a binge before it started!!! Of course when I woke up yesterday I felt better about myself and was able to stay on program all day and even exercise some!

This is what our WW leader tells us. Take the first small piece of cake and be done with it. The rest of the cake tastes the same.

I am going to WW meeting in just a few minutes. This will be my first week. I am a lifetimer and need to lose those 10 pounds. I had hoped to lose 3 for a start but I have my doubts.

Zuppa di Verdura
The two types of potatoes in this hearty country soup serve two different purposes: Delicate Yukon gold potatoes fall apart easily and are used as a thickener. Firm red potatoes retain their shape and roast wonderfully. For a more assertive flavor, substitute an equal amount of chopped basil for the parsley, in the style of Veneto.
Makes 8 servings
1. cup baby carrots, halved crosswise
6 garlic cloves, peeled .
1 green bell pepper, seeded and cut into chunks
2 medium zucchini, cut into chunks
2 celery stalks, cut into chunks
1 leek, cleaned and cut into chunks
1/4 pound green beans, cut into chunks
2 medium red potatoes, peeled and cut into chunks
5 1/2 cups vegetable broth
2 medium Yukon gold potatoes, peeled and grated
1 large tomato, peeled, seeded, and cut into chunks
1/4 cup packed chopped flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper


1. Preheat the oven to 400°F. Combine the carrots, garlic, bell pepper zucchini, celery, leek, green beans, red potatoes, and 1 cup of the broth in a baking dish. Roast until the vegetables are fork-tender, about 30 minutes.
2. Transfer the vegetables and pan juices to a saucepan. Add the Yukon Gold potatoes, the tomato, and the remaining 4 1/2 cups of broth; bring to a boil. Reduce the heat and simmer, covered, until soup thickens slightly, about 15 minutes. Stir in the parsley, salt, and pepper.
100 Calories
1 g Total Fat
4 g Dietary Fiber
4 g Protein

Points per serving 1-Source –WW Simply the best Italian

I added some okra about 8 minutes before it was done.

Okay, buddies, it's Tuesday! I weighed in this morning with a 2.2 lb. loss since last week. Hurray!! I stayed away from the scale all week, so I had no idea how I'd done, but was pretty sure I'd lost a couple of pounds. Now if I can just KEEP it going! How did everyone else do?

Hi Chocolate!!! I lost 1.4 pounds for my first week. I was thrilled and feel I have my cravings under control. I am cooking alot of new low point recipes and enjoying my meals so much. :o Of course, they are all prepared and thought out ahead of time. If I can share any of my recipes, let me know.

I have fallen in love with those Skinny Cow Sundaes...only 2 points. They are a real treat for dessert. Yes, I am a chocolateholic!!! Have you tried the NoPudge Brownie Mix? AWESOME!!!!

Keep up the great work and we will compare notes after Saturday for me.

I totally agree about the sunshine. As soon as Spring arrives each year, I find it SO much easier to eat right and exercise. Seriously, I think I might have SAD (Seasonal Affective Disorder).

No, I haven't been able to find the No Pudge brownies OR the Skinny Cow sundaes, although I can get the S.C. ice cream sandwiches.

Here's what's been keeping my cravings under control lately: for breakfast I microwave 1 oz. of old-fashioned oatmeal with some artificial sweetener, a sprinkle of Molly McButter, 1-2 t. of unsweetened cocoa powder and 3/4 c. water. Cook for 2 minutes and then stir in 1 scant T. of peanut butter. Yuummm!! Tastes just like "No-Bake Cookies", if you've ever tried 'em, but it's only 4 points and keeps me full all morning. Ever since I read the article in Prevention magazine about eating peanut butter to lose weight I'd wanted to try it. I think sometimes I cut so much fat out of my diet that it leaves me craving EVERYTHING! This seems to be helping.

Congratulations on all the weight loss this week!!! Let's see if we can keep it going!

I love hearing of your weight loss shouts!!! We can do it...
I love peanut butter too. In fact, today I was venturing to the park during lunch in center city Phila. Since it was 94 degrees I thought PNB would be the perfect lunch. I had that with a little jelly on low fat bread, yogurt and a piece of fruit.
I was sooooo hungry all afternoon that I almost went off program, But I didn't. I don't feel that hungry when I eat my salads, Lean Cuisines/Weight Watcher's meals?????

Do you think it was the PNB?

Chocolate, I will have to try your Oatmeal. Have never put chocolate in that, other than cookies....LOL.

Actually my experience has been just the opposite. If I have a sandwich, fruit, yogurt, etc., for lunch I stay full til dinner time. When I eat a WW dinner or Lean Cuisine it seems I'm starving just an hour or so later. And would it really hurt them to throw a few more veggies in those things?! :)

Hi Chocolate...

Isn't funny how our bodys are so different!!! I lost 1.5 on my second week. I am please. We went out to dinner last night and I wasn't good, but I will get back on track. My daughter is taking us out next weekend.... for our 33rd anniversary... How can I say no?... LOL.

We know what to do, we just have to be aware...We are not going to be perfect, but that is OK> :o

Talk to you later. Oh, I heard at the WW meeting that the Skinny Cow products have a Fudge Bar ( like a Dove Bar) for only 1 point. I am currently looking for them. The instructor said that they are only 1 point because they have fiber.... And I came back to her and said, Oh, we have to eat the stick too!!!! :lol:

Hey, nobody's posted anything here for awhile! How is everyone doing? I admit that my eating got out of control again and I gained back what I'd lost. However, I joined a newly-formed group of WW staffers-just four of us- and we're meeting weekly for support. We just had our second meeting yesterday and I lost 3.2 lbs.!! I even did my treadmill 3 times last week and I committed to 3 times this week too.

Hey, you are doing fine. We all have days like that!!!

I just got a recipe from a WW leader, a friend of mine. She knows my passion for Chocolate.

Here is a Chocolate Muffin she raved about:

1 box of Choc reduced fat cake mix 170 calories- 2.5 fat grams . She thought it was Pillsbury but was not sure.

mixed with a 15 oz can of plain pumpkin...not pumpkin pie filling..

That is it.


Makes 12 big muffins at 3 points each.

Now, I have not tried them, but they are on my list to make... But I trust her judgement.

Keep that exercising going. That is my problem . I have all that exercise stuff, but don't like to do it. :dizzy:

Hello buddies

I think the entire month of April I lost only a quarter pound, but I'm hanging in there. One week everyone at my meeting thought the scale was wrong because we all lost more than we thought. We believe they didn't callibrate the scale that week, and the next week everyone who lost showed a gain...so they must have fixed the scale. I missed this past weeks weigh in but it looks ok according to my home scale.

I'll just keep on keeping on, everyone hang in there!

I am not in a rush. This is going to be a lifetime program. So when I gain, I just am more careful the next week. If it comes off slow, so be it.

But I do feel more healthy and that is what counts.

So hang in there and just take one day at a time. :^:

Yes, I have to keep reminding myself that this one of those for-a-lifetime things.

I've done horribly over the past week; actually it started with Mother's Day and went on from there. I haven't journaled, exercised or drunk my water. Today I decided that enough is enough! I did my journal and haven't had a single bite between meals.

If only I knew what keeps throwing me off track then maybe I could fix it. I've been under some stress, but hey, who hasn't?? Maybe I just use it for an excuse? Oh well, I am OP again and I guess that's all that matters.

I need to work on not using food as a reward. As Dotti from dwlz.com says: Eat to Live, don't live to eat!!

Thanks for all the support! Actually I didn't do as badly at my weigh-in as I thought I would. It was only .2 gain, instead of the 5 or more lbs. that I was imagining!! I re-committed myself to exercising this week, so that should help too.

Hello everyone. I am new here. I have been on the WW Points Program in the past and lost 36 pounds. I then got pregnant and went off. My daughter is 16 months old now and I kept putting off coming back.

I went to WW last Friday and joined again. I would like to have some buddies who are OP as well, as it really helped me last time.

Welcome, A Smart Blonde! We are pretty much all in the same boat here -- just trying to get to (or back to) our goal weights. I had a good weigh-in today; down 2.2 lbs. since last week. Now if I could just do that EVERY week........I had my treadmill maintenanced (thanks, hubby!), so I have no more excuses for not exercising. Keep us posted on how you're doing!

Well, I weighed in on Friday and lost 6 pounds! I know from the past to expect a good loss in the first week and then it slows down, but I am very happy with this start! Hope everyone is doing well.:D

Helle everyone. I have been following sugar busters for almost a year and I realized I really needed to learn portion control so I joined WW last Monday. I have yet to weigh in but I can definitely see where I have been eating WAY too much food. I weighed 260 on Monday,and that was a high for me :( BUT I am very determined to lose this weight. My goal weight according to WW guidlines is 162,so that is almost a 100 lb weight loss. Definitely a little scary to think about. My first 10% is 26 lbs. I hope to reach that by August 1st. Wish me luck!!!

We must be patient with our weight loss. We didn't gain in overnight and it will not come off overnight.

I think the most important thing I learned from WW is that it is so crutial to vary your diet. Don't get stuck eating the same old foods because you will get bored with it and you will stop the program... Yes, you are right with portion control too. But be creative with planning your menus and you will be just fine. I have always sat down and planned my weekly menus and got the foods needed for the week. I always like having something with low points in the frig so that when I get hungry there is something there and I don't have to binge on calorie filled foods. So preparation is very important too. I like having a big bowl of Ratatouille in the frig.

Here is the recipe. I got it from one of WW magazines

Ratatouille

1 small 3/4 pound eggplant, chopped
1 tsp salt
1 TBSP olive oil
2 med zucchini, chopped
1 red bell pepper, seeded and chopped
1 onion, chopped
1 carrot, peeled and chopped
2 garlic cloves, crushed (or to taste)
One 14 1/2 oz. can diced tomatoes
2 TBSP shredded basil
1/4 tsp freshly ground pepper

1. Put the eggplant in a colander in the sink and sprinkle with 3/4 tsp of the salt. Let stand 20 minutes, then rinse under cold water and pat dry with paper towels.

2. In a large nonstick saucepan, heat the oil. Add the eggplant, zucchini, bell pepper, onion, carrot and garlic; cook, stirring, about 1 minute, then add 1/4 cup water. Reduce the heat and simmer, covered shaking the pan occasionally, until the vegetables are softened, about 5 minutes. Stir in the tomatoes, basil, pepper and remaining 1/4 tsp salt; simmer, uncovered, until the liquid is evaporated, about 25 minutes. Cool to room temperature.

Pointer: Salting and draining the eggplant extracts the bitter juices, which may interfere with the flavor of the dish. If you need to press the eggplant, try this method; Fill a sealable plastic bag with water and set it over the eggplant. Its shape will conform exactly to that of the eggplant.



This makes a wonderful fast meal. I make this ahead of time and also cook the pasta and refrigerate both. When I come home I simply take some pasta , top it with this ratatouille and heat for about 3 minutes. Sprinkle with some parm cheese and you have a nice healthy meal.

Hello old friends and new!

I've not visited the board for a few weeks, I had gotten tired of paying my weekly fee to Weight Watchers and only having a loss of .2 or .4 so I decided to go every other week for awhile. That backfired because I gained .2 and then 1.2. I'm back to weekly weigh ins for now. I had a 5.2 loss this week but it was more because my 85 yr old Mom took ill due to the hot humid chicago weather, high ozone, high pollution and she overexerted herself on the worst day of it. She has air conditioning but wouldn't use it. She ended up calling 911 because she was having cardiac symthoms. She spent two nights in the hospital while they ran tests and changed her medicines. When there are little crisis I tend to nibble but when there are serious crisis I forget about food. She's home AND using the air conditioning now! Hope everyone is doing well.

Wow, you ARE under a lot of stress! I'm like you; I don't eat much at all when there's a crisis going on. Mild stress, like having company over, makes me eat like crazy, though!

I am not proud to report that I haven't really done much at all over the course of the last few months. Oh, I lose just fine, but then I go on a binge and gain it all back. I am very addicted to sugar and I know that until I can say goodbye to it for good I am not going to see the results I want on the scale.

I know it all boils down to me deciding what I really want for myself -- sugary desserts or my goal weight??
