I just made this and it turned out good so I thought I would share. Goes great on pasta.

Spinach Pesto
4 cups spinach
1 cup chicken broth
4 cloves garlic minced (or if you have the pre-minced type 2 tablespoons)
2 tablespoons olive oil
2 tablespoons lemon juice
2 tablespoons dried basil
1/4 teaspoon black pepper
1/4 cup reduced fat parmesan cheese

Combine all ingredients in the blender or food processor until smooth.

Makes 4 large servings

Yum! I'll have to try this. I bet it would be really good over chicken too!

Wow, thanks for posting! I've made spinach pesto before and it's excellent. I'm glad you reminded me of it. :)
