This soup is so yummy and easy to make!!


Magic Cream of Mushroom Soup
4 servings

2 1/2 cups finely chopped fresh mushrooms
1/2 cup finely chopped onion
2 cups Low Sodium Chicken Broth (my can was only 14 1/2 ounces)
1/4 teaspoon dried minced garlic (I used two fresh garlic cloves chopped)
1/8 tsp black pepper
1 1/3 cups nonfat dry milk powder
3 tablespoons all purpose flour
1 cup water
1/2 teaspoon dried basil

In an 8-cup glass measuring bowl, combine mushrooms, onion, chicken broth, garlic and black pepper. Microwave on high for 6 minutes, stirring after 2 minutes. In a covered jar or bowl, combine dry milk powder, flour, water and basil. Shake well to blend. Stir milk mixture into mushroom mixture. Continue microwaving on high for 6 minutes, stirring after every 2 minutes.

128 calories, 0 grams of fat, 1 gram of fiber

This does sound yummy. Wonder what happens if you substitute real milk for the water and dry milk. Too runny? And, I wonder if you could subsitute Mushroom Broth for the Chicken Broth for more mushroomy flavor?

And you could probably use this for the traditional holiday green bean casserole, huh?

This might be good with the green bean casserole!
