Default What did you have for lunch today?

I just had a slice of low-cal, whole wheat bread topped with Laughing Cow swiss, 2 tomato slices and basil, toasted in the oven....YUM!!!! I had a huge serving of raw veggies with 2 tbs low-fat ranch with it all for 175 cal/6 g fat.

Just thought I'd share...my mom used to make toasted tomato and cheddar that I loved growing up (on regular bread, and TONS of cheese) so I was soooooo excited when this tasted EVEN BETTER!

Don't you love it when you find something that fits your plan and is deliciously satisfying?

I'm having a salad with arugula, romaine, spinach, pecans, Goddess dressing, lemon juice and black soybeans.

This sounds really good. We had toasted tomato sandwiches but Mom always put sandwich spread on it. I am going to have to try your sandwich.

I made all my salads for lunches on Sunday, so I just grabbed one out of the frig this morning to take to work. Huge pile of spinach, broccoli slaw, shredded carrot, grape tomatoes, red onion, orange pepper chunks, 1/10 of an avocado, a few roasted sweet potato chunks. I took 90 calories of chicken breast and BBQ sauce in a separate container, so I could heat it in the microwave before I dumped it on my salad and shook it up (hate cold chicken).

I had leftover shepherds pie from last night, plus leftover cabbage sauteed in olive oil. The shepherds pie is vegan (I'm not, but I like the food.) I've had the recipe for years, it has lentils, barley, carrot, onion, tomatoes, seasonings and mashed potatoes for the top. Yum! Really low cal too, something like 261 cals per serving.

Let's see . . .

mixed bean soup with some parmesan
smoked ham and turkey
apple
fruit salad

The ham/turkey is because I'm trying to raise my protein intake, and I've still got soups in the freezer. Once the soups are used up it would likely be a wrap made with a whole wheat tortilla, a little mustard and cheese.

I had leftover pasta with steamed veggies...
Whole wheat pasta with chicken broth and skim milk, herbs and garlic with asparagus, sugar snap pea pods, broccoli...YUUUMMMMMMY!

I had a SlimFast meal on the go bar, 8oz of non-fat apple cinnamon yogurt and 2 Tbsp of dry roasted peanuts...plus 1L of water.

Tomorrow is SlimFast Shake, 2 slices weight watchers WW bread, 1 tsp low fat mayo, 3oz non-fat turkey, lettuce, and 1/2 banana for dessert

I usually have my whole week planned in advance...but I've only got as far as Wednesday this week...LOL...that's what I get for going to scrapbook retreat all weekend and not grocery shopping yet!
