Any vegetarian south beachers out there?
Hi, everyone! I am on Day 4 of Phase 1. Yesterday I felt really crappy (learned here that I had the South Beach Flu...who knew?) but today I am feeling much more like myself. I'm just wondering if there are any other vegetarians on this board, just out of curiosity!

Kara is a vegetarian. She's having a reunion with her husband but will probably visit us in a day or so when she comes up for air. I think we have one or two others. Are you getting enough beans? That can make you feel a lot better. I think we have some vegetarian recipes in the recipe section. I know there are some in the cookbooks.

Hey Mary! I'm mostly a vegetarian (I eat meat once or twice a month, so I can't claim to be a full veggie). And I started Phase I again on Sunday. Last night I made Weezle's refried bean soup...yummy!

Thank you for the replies!! I LOVE beans, and have eaten them every night since starting the diet, and for two lunches. I know I need to eat more...they really "cured" my south beach flu last night!

We have been taking about a half of can of V8 and adding to can of rinsed black beans cuz I like em soupy. Very good, we also add a little chili powder, cayenne, cumin, etc for flavor.

What a great idea! I bet that would be delicious with the spicy V8. Thanks for the tip!

Hi Mary! I am, indeed, a vegetarian. I've followed an ovo-lacto diet for the past eighteen years. This is an easy plan to make vegetarian. Do you have any specific questions?

Hi, Kara:
I have also been ovo-lacto for 8 years. I do not have any sepcific question right now, just wanted to see if there were any other vegetarians on this board.
Thanks for the reply!
