Lightbulb Absorb more nutrients from veggies when you eat 'em with some good fat!

I read an article on RealAge's website today that says studies showed that those who ate salads with dressing made with good fats absorbed more carotenoids than those who ate salads with nonfat dressing!

Put some olive (or walnut or peanut...) oil on those veggies, folks!

Doesn't Dr. A. also say that putting a little good fat on your higher GI foods helps to even out the blood sugar spike?

I've heard that too. Its probably the fat soluble vitamins in the vegetables. You cannot absorb them without the presence of fat.
