I am embarrassed to admit that I don’t really like vegetables. My husband likes to munch on carrots and celery but those almost make me sick. I try to eat veggies as a side with dinner but I really would like to eat more of them during the day. What do you guys do to up your servings of veggies?
I'm not a huge veggie fan either, but I do like some and I make the most of those and eat what I can of the rest...surely theres some vegetable that you like...do you eat salads? I can usually eat some of the vegetables I don't like if they're mixed in a salad. soup for that matter too. Or you could just make an effort to add vegetables to whatever stuff you're alreading eating, like if you are having a sandwich put some greens and tomato on there, something like that?
I am not a fan of veggies either. What I try to do is have a salad with most meals as often as possible. I have also started eating steamed broccoli with dinner, I add spray butter and pepper and have truly enjoyed it! Good luck!!
Have you tried eating veggie burgers? It's not a good way to get all your veggies, but I like to throw them into the mix sometimes. I also like to snack on snap peas with a little bit of sauce mixed in or for dipping, especially Thai peanut sauce.
do you like V8? If you're really having issues with drinking veggies as well you can always drink the V8 fusions!

When you make spaghetti...put carrots in the meatballs (Ellie Kreiger recipe).
Just take veggies and hide them into normal dishes, you'll never taste them.
I love vegetables, but since you don't you might try "hiding" them in things like spaghetti sauce and soups. You can also puree cooked veggies and add them to most anything (even sweets.) I try to throw a handful of spinach in nearly everything I make. It's so good for you.
Also, try different methods of cooking vegetables. It cook be you just don't like them prepared a certain way. When I was a kid my mom overcooked veggies and I didn't really like them (they had all the flavor cooked out of them.) As an adult I've learned that crisp tender veggies are delicious!

Mostly what you all said is what I'm going to say. I eat a lot of salads...shredded lettuce with Feta or romaine with low fat cheese and grilled chicken are my favorites. I also like broccoli and every now and then french green beans. Mushrooms and cucumbers are good plain or with salads. If you don't like any of that...I think the suggestion of drinking V8 is great advice.
I also can eat tomato if it's diced up in a salad or soup or toasted on bread with low fat cheese....trick yourself into eating it and you might just find out you like some veggies. Hope this helps! Good luck.
I tried jicama for the first time two weeks ago -- I was enticed by the description of it (a vegetable... sweet like an apple... crunchy... sounds good, right?). It was terrible. I couldn't get the taste out of my mouth all night! :/ But I hear a lot of people love it, so I'll be quiet now :zip:
A portobello burger might be better that you expect.
As for the pasta sauce you don't have to add only carrots -- you can steam any veg until tender and then puree them (with some broth or tomato if needed), then add them to the sauce. You can get TONS of veg packed in that way. Add some garlic and oregano and viola!
I won't eat carrots and celery unless there's somethign to DIP it in!
So I buy light sour cream and the Hidden Valley ranch Dip powder---- it gets me to eat my veggies (I also eat raw cauliflower and broccoli) with having semi-guiltless dip along with it! YUM!
Thanks for all the suggestions! I should amend my statement I do like some veggies (bell peppers, tomatoes, green beans, cucumbers, etc) I just find that theses are harder to just snack on. I usually grab fruit. I do like salads too but if I have them more than twice a week I get sick of it quick. I am going to make it my goal to work some into EVERY meal. Good luck to me!
I put spinach in everything I can. Everything. Soups, stirfrys, salads. I CRAM it in my breakfast smoothie. Sure, it's green (if I don't use blueberries), but you can't taste it.
