If you are struggling to get in your calories without being full, I'd suggesting adding small portions of foods with healthy fats...nuts, avocadoes, etc...and cooking your food in olive oil. You also could add some protein in with your snacks (like, for example, a string cheese along with your apple sauce). All of these would add lots of nutrition and good fat while keeping your calories at a more reasonable level.
As for the cholesterol...if you are concerned about it, you could switch to EggBeaters or a similar cholesterol-free egg substitute...tastes more like a whole egg than an egg white, but has the cholesterol removed. Or ask your doctor if it is something you need to worry about. If you don't have problems with cholesterol, it might be OK for you to eat a little more of it (much like, for people without blood pressure issues, going slightly over on sodium isn't as bad as it would be for people WITH blood pressure issues).
