I tried this recipe tonight that I randomly found online and my fiance and I both thought it was FANTASTIC. We found 12 oz. of frozen uncooked shrimp at the local grocery store for $5. :) However, on days we can't find it on sale we're going to substitute for chicken.

Ingredients:
4 tbs. water
2 tbs. ketchup
1 tbs. soy sauce
2 tsp. cornstarch
1 tsp. honey
1/2 tsp. crushed red pepper
1/4 tsp. ground ginger
1 tbs. vegetable oil
1/4 cup sliced green onions
4 cloves garlic, minced
12 oz. cooked shrimp, tails removed

Directions:
1. In a bowl, stir together water, ketchup, soy sauce, cornstarch, honey, crushed red pepper, and ground ginger. Set aside.

2. Heat oil in large skillet over medium-high heat. Stir in green onions and garlic; cook 30 seconds. Stir in shrimp, and toss to coat with oil. Stir in sauce. Cook and stir until sauce is bubbly and thickened.

This took under 10 minutes to make from start to finish. It's an EXTREMELY easy recipe. With a 1/3 of the recipe and 1/2 cup of grown rice I had under 350 calories with this meal.
