South Beach Diet - Tackleling Tuesday

View Full Version : Tackleling Tuesday

12-11-2007, 07:35 AM
Good Morning, it's Tuesday already!

It's too dark outside still, to see what's happening. I think we're supposed to have cloudy skies but temps in the 50s. I can live with that. :)
SOSO around here today. Laundry, more cookie baking, and tackeling my kitchen floor - it's filthy! The girls and I are going to start working on their gingerbread house after school today. For supper, I'm trying a new recipe from another board, pumpkin chili. I'll let you all know how it turns out.

Kim, make room for me, I've decided to revisit Phase 1 after the New Year too! I imagine there's going to be a lot of others joining us. ;)

Morning chicks... I have a few minutes before I take the wee ones to the bus stop. It is cloudy and dreary here today as well. I have heard we are going to be getting Ruths weather from today tomorrow... snow and then freezing rain. I hope they are wrong.
Cottage- I have decided that I am not baking this year for xmas. I have a couple pies in the freezer and I am going to have some cheese and crackers and veggies and fruit but I am not making cookies. I will stay strong. lol. But I am going to be joining you all on PH 1 in the new year. I am not even sure if I will make my goal of staying the same for dec. I have been on the worst eating beinge lately.
Well gotta to dash DD's are on there way to school and must give out hugs and kisses. I will try to pop back in later.

:coffee: sllllurp , ah.....Morning Gals!
Cottage: :hungry: Lots of good chatter bout that pumpkin chili...sounds interesting! Let us know !

LC: No baking here either... maybe when we get to NJ me and MIL will make poppy seed bread but thats it!

URG! I took a tumble late Sunday night, and boy am I sore! thankfully nothing broke, but I'm stiff as a board... ah nothing that a few Alieve and ice wont help so I'll power through it. Yesterday, I was in bed most all the day but I think it only makes me more stiff, so I will hobble about!
Hope everyone has a garrrrrreat day!

12-11-2007, 08:34 AM
I do have to say, despite my grumpiness toward my scale, that this Phase 1 has been exactly what I needed! It's almost like I've forgotten the awful way I was eating before this. My body feels better. My attitude is better. I just feel cleaner, if that makes any sense. If you gals commit to do the Phase 1 bit in the new year, you won't regret it!

Linda, pumpkin chili sounds really, really interesting. You'll have to let us know how it turns out!

LC, hope your kiddies got off to school OK!

I made the broccoli soup in the Phase 1 recipes tonight and it was EXCELLENT! I had made an eggplant bake yesterday, which of course ended up being watery, so I just dumped the water into a pot and made it "vegetable broth" for the soup! I used broccoli and cauliflower and tomatoes with green chilis and did use the cream cheese at the end. Even Tom, the cauliflower hater of all time, loved the soup and had a second bowl!

Tom's yelling that something good is on TV so I will end here. Have a lovely morning!

Good Morning Ladies
Cottage Have a great time baking and building the gingerbread house.
LC Stay warm. I hope your DH's father is feeling better.
Schatzi I hope you start feeling better from your fall.
Kara Have a great day.

Me My boss is out of town today so it should be relatively quiet at work today. I think it's interesting how slow the airport is right now but give it another week and it will be insanely busy. Day 1 of Phase 2 went well and I think my sniffles are packing up an moving on. Have a great day.

12-11-2007, 08:44 AM
Schatzi, get your rest and heal up quick-like!

Dawn, have fun running about with your boss out!!!

12-11-2007, 08:45 AM
Morning and humid and terribly muggy here this morning. yuk.

Cottage, enjoy your baking and let us know how that chili turns out...sounds very interesting!

Chick...take care with that nasty weather coming your way! And you can do it on the phase 1..I'm sure you'll feel much better.

Schatzi...ouch on your spill!! A very hot soak in the bath may help. Excedrin makes some back and body meds that are very good for all over aches if you are able to take it. I use it for my back when it flairs up.

Kara, have fun watching your show...good idea on using the eggplant "juice" for soup!!

Kind of a busy day here as usual. Have a lot of stops to make after school which will put me behind getting back to work. Grocery store and then post office, then to restaurant supply place to get some good cake pans and 3 "gravy boats" for dressings for my dinner party on Sat. night. It will be a late night of working..sigh.

**Thin..we were posting at the same have a great day of peace and quiet with boss gone!!

12-11-2007, 08:52 AM
Femme Don't work too hard and have fun at the restaurant supply store. I just used my immersion (sp?) blender for the first time on Sunday and thought of you.

12-11-2007, 09:01 AM
Good morning, Early Chicks. I'm becoming a real slug in the mornings. It was after seven when I woke up this morning.

Cottage, temps in the 50's!!!!! Send them north as we are going to make it to a balmy 30 today.

Little Chick, sorry to send you our weather. I really hate freezing rain. The Ice Storm of '98 was enough!

Schatzi, as Ellis would say, what the hoodywho were you doing? You don't have ice down there. Take it easy today and do use the Aleve. I love that stuff and have to do another drug run across the border soon.

Thin, airports will be zoos next week. At least it'll be spread out a bit with Christmas on a Tuesday. Enjoy the peace while it lasts.

Tara, we have to solve the watery eggplant problem. Is it one of our recipes or your own? Let me know and I may be able to figure out something.
This morning Claire and I will start wrapping toys for the Toy Drive. Her diningroom looks like Santa's Workshop and needs to be clear for the weekend company. Aside from toys, we have lots of cash but have nominated Rob and John to brave the crowds at WalMart to buy more gifts. They don't have kids but love shopping for them.

Now my BIG NEWS! I got a date for my knee replacement - Jan. 24. I'm just delighted as, last time I checked, I was told "no sooner than the end of March". By the end of March I intend to be back in complete working order. Now to really focus on exercise and maybe even some weightloss!

I hope everyone has a great Tuesday.

12-11-2007, 09:01 AM
Cat, good luck getting all your things done today! Sounds like you have a lot on your plate, so to speak. Ha! That pun wasn't even intended!

12-11-2007, 09:03 AM
Cat, we were posting at the same time. I adore restaurant supply stores. Have you ever used the silicone baking pans? I love them.

12-11-2007, 09:08 AM
Congrats on the knee surgery date, Ruth! That is wonderful news! How did the gym go yesterday?

I invented my own eggplant dish, but I never have luck getting eggplant (or zucchini) dishes to come out without the watery bottom layer. I've tried pre-baking the eggplant on cookie sheets (which took FOREVER because Korean ovens only have one very small rack) and this time I tried pre-salting the eggplant slices and letting them sit for about an hour. Using the "juice" for soup actually worked out splendidly, though, because I can't find a vegetable broth without sugar here, so I would've had to make my own anyway since I was craving some soup. If you have another trick, though, I'd be up for trying it. I didn't like eggplant before but now I guess I rather fancy it...even the kids ate up the eggplant dish I made last night, which, by the way, went something like this...

layered in a casserole dish and baked for about an hour:
one eggplant, sliced into rounds
one large can of diced tomatoes
one 16 oz. container of part-skim ricotta mixed with an egg and some salt, pepper, and basil
one large package of raw baby spinach, "de-veined", and sauteed with a ton of minced garlic (maybe five cloves' worth - we love garlic!)
sprinkle of mozzarella, provolone, parmesan, romano, and asiago cheeses

I haven't figured out any of the nutritional info so I haven't posted it in the recipes section, plus I figured it's a lot like the eggplant "lasagna" so I don't know if I'll bother. It was delicious, though!

12-11-2007, 09:11 AM
Morning chicks, SOSO for me too today. Except there is a town council meeting I should attend tonight, if I can motivate myself.
Schatz, sorry about your boo-boos.:( Better watch your step!
cottage, I have tried a pumpkin chili recipe and it was good.
kara, I also love that broccoli soup. Mmm, i need to make that soon.
Gray and foggy and drizzly here again today. It's been at least a week since we've seen the sun, getting old now.
littlechick, wish I could avoid the baking, but DD has signed me up for three dozen cookies for the holiday gift shop and she also has a cookie exchange party, so I'll have to do some. I plan to try the Chocolate cherry truffles from the SB Taste of Summer Cookbook, and I've got a recipe for walnut and fig balls that DH loves that I think I can SB-ize, or mostly make it legal. The trick will be to not overdo!
Thinby, have a peaceful day before the storm!
Cat, don't have too much fun at the RSS!

12-11-2007, 09:13 AM
Simulposting with Ruth! Great news on the knee!

12-11-2007, 10:02 AM
Good Morning Ladies! I am in a much better mood today! Yesterday was just a pisser (sorry no other word for it) between this darn dreary weather, the fact it was Monday, and TOM (sorry tom) showing. So today is a new day with a new attitude!

Cottage I have always wanted to make a gingerbread house, someday maybe!

LC Be careful in the weather. I really can't complain about ours there sure are alot of people dealing with ice right now!

Schatzi Take care of youself!

Kara I had the same problem with my eggplant concoction this weekend to, I don't know the answer either. You asked yesterday if my daughter runs, no she is just hyper and has this new theory she is the next broadway star or american idol. Heaven help me she needs a reality check! She called me the minute I walked out the door this morning and was singing to me, but these are the times I will cherish!

Thin Enjoy your day boss free, wish mine would disappear for a spell!

Ruth Glad to hear you got your date earlier than expected!

Schmoodle I'm right there with you on the weather, come on spring!

Alright I have vowed I will make up for slacking yesterday at work so I better get to it. Have a great day ladies! Check back later!

12-11-2007, 11:17 AM
Terrific Tuesday morning to everyone!

Cottage: Good, I'm glad there will be a bunch of us "oldies" mixed in with the "newbies" for P1! Hope your day is better than so-so! Can you come do my kitchen floor next?

LC: I hope it's not too cold and icy for you! Stay warm and safe if that weather does move in!

Schatzi: My goodness! No more tumbling for you! Hope you're able to move about less stiffly today and that the soreness subsides quickly!

Kara: So what was the thing on tv? Not that it really matters, but I am curious! I'm glad P1 is going so well for you! I have to admit that I love the clean P1 feeling as well. I'm almost antsy for Jan. 1 because of it!

Dawn: Yep, I sure am glad we're not required to fly this holiday season. I bet it's going to be a madhouse! Have fun with the boss out!

Cat: I, like everyone else, hope you enjoy the restaurant supply store. I'm completely envious of you having one so close! I received my Williams-Sonoma catalog last night and have dog-eared half of the pages. I bet I'd get a much better bargain at the supply store! I hope you're not up too late with work!

Ruth: Yay for a surgery date! I'm glad that it's all set and you can not worry about when it will be! Now's the time for some focus on you!

Schmoodle: Sorry your day is looking so-so! I hope that it actually ends up better than so-so!

Pacer: I'm glad you're having a better day today than you were yesterday!

Me: Well, today didn't start out as clean as I planned it to, but I didn't stray to badly. I was planning on a P1 day to make up for my work lunch yesterday, but I woke up too late for eggs, so it was a bowl of instant oatmeal with strawberries for breakfast. I actually picked up a cheese danish and put it on a plate, but put it back after staring at it for a moment. It was a triumph in my book! The rest of the day will go as planned for meals and snacks.

Stepped on the scale again this morning - I just can't stay off! I was expecting to see an increase from yesterday, but I'm down another 0.5 lbs! Wahoo! I figure that with a great day today my W-I for my competition will definitely be down from last W-I.

Other than that, DH and I have plans for another movie night as long as Netflix gets delivered today. I also need to do a load of laundry and straighten up a bit. Oh, and I can't forget my WATP dvd after work!!

12-11-2007, 12:43 PM

12-11-2007, 01:26 PM
I had my physical yesterday and it went well. My cholesterol and weight are higher than last year but my cholesterol is still normal which is great. I did get back on the Pill so I shouldn't have to worry about being 8 weeks or more late. My weight is up but some of that is eating off plan and some of that is from TOM, I'm sure.

12-11-2007, 02:49 PM
Hey Ladies:
WHY WHY WHY do I watch food porn? Martha Stewart should be illegal! Thenagain I was Planning MIL's cake last night when I couldn't sleep I'm going to replace the fat and water in my recipe with crushed pineapple and pineapple juice. I'm not sure If I'll do layers or not But I was a sneaky girl just to doublecheck that she likes Pineapple and said I was making it for my Mom's party "I love Pineapple" SCORE! do you all think it goes with coconut?
I'm not giving any more porntastic details I apologize!
I got my new shmendy protein powder. and added it to my coffee a lot less filling than the atkins and a better protein punch for the caloric buck.
I went to the dentist and have a new cap! so all I have left is 2 fillings and I'm home free from dental work. Except for 2 wisdoms.
Barb I'm glad you're still in the good zone!
Gonna You'll get back on track!
Kim Woohoo on the scale victory and on just saying no to the danish!
Steph Sings "I'm Feeling Good from my head to my shoes, Know where I'm going and I know what to do. . .Ooh Ooh OohOoh Ooooh I got a new Attitude!" My Mom and I put on floor shows in the kitchen :)
Schmoo I hope your day gets better!
Kara your recipe sounds Nummy what was on TV was it in Korean?
Ruth Hurray on the surgery date!
Cat I want you to adopt me so I can go to the restaurant supply too!
Cottage let us know on the chili!
Schatz take it easy
Thin that is the best kind of day!
Ok gotta run

12-11-2007, 03:02 PM

little chick
12-11-2007, 03:15 PM
Good lord, my head is going to explode.... the weather here is gloomy, no snow or freezing rain as of yet but the kids are so wonky it is not funny..... I am cranky as TOM is here and I am feeling bloated and nasty..... I am hoping dh will take me out to the Walmart before the storm hits as I have not taken the new suv in traffic yet. I really just want to drown my sorrows in a big bowl of ice cream..... and that is not even my favorite thing. I wish is were 5:00. lol
Ruth- how did you weather end up for the day... and I hope we never have another ice storm like 98. That freaked me out. I am glad you have your date for your knee. You will be doing the jig come march. Take care.

Well so much for posting to everyone two are fighting and crying so there goes my moment of sanity..... take care I will try to get back in later if I can.

12-11-2007, 04:52 PM
GonnaBe:  I can't pretend to know what you're going through, but I know it's not easy. I hope your holiday season brightens up.

Barb: I'm glad everything went well at your check-up. You definitely need less things to worry about!

Kier: I know how you feel. Sometimes I think I should just block Food Network altogether!

LC: Sending some :dust:, stat!! Cheer up, honey! DH should take you to Wal-Mart AND run you a bubble bath tonight!

Me: Even though Netflix still hasn't delivered, it's been a good day! DH got his new Cowboys jacket in the mail and I got my "Christmas Ring". This year I picked a 4.3 ct Lemon Citrine with 0.102 ct Diamonds surrounding it in white gold. DH reasoned when I ordered it that the Christmas Rings were, "Five golden rings", but he let it slide. I'll try and take some pretty pictures tonight and post them in the morning. I've got it on right now even though I'm wearing red. I love it!

12-11-2007, 05:06 PM
Barb glad the doc said everything is on track

KO & Kim thanks for the words of confidence I can use all I can get.

LC you poor thing

Kim do try and post pics if you get a chance

I think I am feling a wee bit better this afternoon, been trying to focus on other things like my eating and getting better so I can get my energy back and get back to working out.

Hope everyone is having a safe day!

12-11-2007, 05:20 PM
Hi Everyone

Ruth Congratulations on the surgery date. That's great news.
:wave:Schmoodle I'm not having much luck with motivation myself today either.
Pacer Hope today is working out better for you.
Kim I'm glad the scale is moving for you.
Gonna:hug: I truly feel your pain. I miss my dad too. Hang in there.
Barb Great news about the cholesterol.
KO I completely agree about Martha. She and the Food channel are my downfall.
LC Hope you're able to maintain some sanity today.:)

So I thought it would be a nice quiet day without the boss here. I kind of neglected to remember that without him here I'm the boss. Darn, that means back to work for me. Hope everyone is having a great day.

12-11-2007, 05:42 PM
I almost dove off the wagon! instead my day is more Ph 1.5 than 1
I had 2 protein shakes (would have just done 1 but was going to the dentist and didn't know if I'd be able to eat when I got back. 1/2 cup cottage cheese 6 oz tuna with 1tbsp RF Mayo and some old bay
I'm sore so I wanted to eat (gotta love coping!)then I ended up having a tbsp of natural PB but that didn't kill the craving I litterally put a piece of bread in my mouth bit chewed and spit it out (Bread is my downfall!) I remembered I had special K Protien Plus in the pantry closet. So I had some of that (its pretty sweet) sprinkled with cinnamon
So not bad and I still have 400 calories left for dinner Just not the noncarbtastic day I was hoping for!
LC I hope you get to wallyworld and maybe DH can give you a headrub!! Be safe in the storm!!
Kim your ring sounds STUNNING!! can't wait to see it!!
Gonna just remember eating well and working out are things you do for you!!! You deserve it.
Dawn can you hide under your desk?
Ok goign to do some writing since that was the 1 ME thing i wanted to do today
:grouphug: because we all need them today!

12-11-2007, 06:05 PM
Well I weighed on Monday, but I gained a pound. Its becuz i'm sick. Been sick now for 2 weeks. Finally went to the doctor yesterday and they pumped me full of IVs and did ex-rays. In the IV they put antibiotics (which has severely messed up my stomach) and steroid anti-inflammatories (great more weight gain)
Its not the flu its not pneumonia. They don't know what it is. All I know is I'm achy, drained, stuffy/congested, and I feel like poop. :( Going back to work tomorrow. I have to make it til the 20th and then I can rest. I can do it. Well ladies...have a great week.

12-11-2007, 07:53 PM
Schmoodle, did you go to your town council meeting? I hope so! There must be stories to share from those meetings! I used to attend school board meetings, partly just for the fun of watching the silliness.

Stephanie, hope you day improved over yesterday! It sounds like your daughter has a lot of fun with herself. My sisters and I were always a hoot, putting on fashion shows and plays we had written ourselves and singing competitions... My poor parents. We're still goofy when we get together!

Woke up this morning and weighed and I'm back at ticker weight. I still have no idea what caused the weird gain, but it's gone now. Hopefully more will follow.

12-11-2007, 08:06 PM
Kim, hope your movies arrived in time for your movie night! Folding laundry in front of the TV is much better than all by yourself in the laundry room!!! Mike Rowe was on TV with a bunch of cockroaches - yuck!

Gonnabe, get those fluids in and get well soon!

Barbara, glad to hear your physical went well.

Kier, I don't really care for pineapple in baked goods but I do like it plain, so I really can't comment on whether it would be good in the coconut cake. You could try a combo of applesauce and pineapple to cut down on the flavor of the fruit.

Silly, I am sending serious get better vibes your way. Heal up!!!

12-11-2007, 10:58 PM
Kara, yes I did, just got in - almost a 3 hour meeting. Yeesh, small town politics is not pretty at times! Didn't have time for my after dinner yogurt and I'm hungry, but at this hour probably best to just go to bed. Have a great day Kara and
