Default low fat sugar free p'butter pie

Hi,
I'm new,and just read some new recipes.I thought I'd share one of my favorite's. It has the diabetic exchanges with it

.Peanut Butter Pie
Serves 8
Exchange:1 bread/starch 1 meat

1 low-fat graham cracker crust
1- 8 ounce fat-free cream cheese
12 ounce whipped topping, thawed
1 small sugar free choc. instant pudding
1-1/3 cup skim milk
dash vanilla
4- 5 pkgs Equal
2 Heaping TBS low-fat peanut butter
(chunk or smooth)

1. cream the cheese with 2/3 of whipped topping, mixing well till creamy.Add vanilla, mix well.

2. add peanut butter,and Equal, mix till real creamy and well blended.Pour into pie crust.

3. Mix pudding with 1/3 cup milk. Let set for 2 minutes.spread over top of pie.

4. top with rest of whipped topping.Chill for several hours before serving.

I just purchased a bottle of Watkins Peanut Butter Extract. I bet a couple of drops would really enhance the flavor of this pie.

Hi lighter,
I'm familiar with Watkins products, but didn't know they had a peanut butter extract...I bet that would be good. I'll have to look for it. Thanks!
