I had to run up to Walmart for a money order this morning and got sidetracked by the Dagum pepperidge farms Distinctive Chocolate Cookies. Grrrrrrr..I couldn't say no. The good news is 2 cookies are 16 grams of carbs & 130 calories. That's about as much as the Southbeach bars I snack on (a few more calories) so if I have this treat in moderation, I'll be ok. BUT, I came homew and what was in the mail? My Mom sent me my FAVORITE Scottish oatmeal cookies from Byrd's Cookie Comapny from back home in Savannah. OMG @ the Holiday temptations I tell ya! I LOVE these cookies and I hardly ever get them because I don't live there anymore. Byrd's is a famous Savannah business. They've been there for years. Sigh.... MODERATION....Keep repeating this!

Okay, I am calm.... hehe...Lemme get to today's menu:
B- Coffee w/Splenda & Cream

2 egg & cheese Omlette
cooked in 1 TBSP Olive Oil
3 slices of Turkey bacon

Glad you all here to start this challenge. I didn't do too good either,with yesterdays lunch.I believe I had too much sodium along with not control my portions. Today I back on program

I'm cutting back on my coffee - I usually have over 10 cups a day with milk or cream! I think I had 5 cups today, but skipped the dairy in it. I def. need to drink more water, probably only had 40 oz - 96 oz is impressive Beach Bum!

Good Morning Ladies:)

Lost some of my weight from the Luncheon on Monday. Hopefully most of it will be gone by Sat. W-I. I have to watch the sodium intake.

I heard on the Biggest Losers last night that the guy on the red team was having to much sodium so Jill told him that if he wanted to lose he has to keep sodium to a limit[300 mg per meal].Now I'm thinking that he heavier than me and is a man,what if I count down my sodium intake also. As we being woman we have to watch as it retains lots of water. Did anyone here see the show.

LAURA-I never had problems drinking my water as I don't ever use soda at all. I sometime put lemon aid crystal lite in to my water for taste but that on rear occasion since we go our Blueberry Home water purifier.

I like this - seeing everyone elses menu gives me some good ideas for new items! I tend to get stuck in a rut eating the same thing over and over...

B: 1 egg omlette w/ cheese and 2 peices bacon
S: nuts, 2 oz. of cheese
L: 1 can tuna, slice of onion, little mayo on celery sticks
D: Baked chicken with brocolli

I think I made to 80 oz of water today...I'm swimming :o

Good Morning, missed posting yesterday. Gramps has been in the hospital so life interrupts! But he is doing much better now.
Yesterday was good

L green salad w can of white tuna mixed w mayo & mustard on top of it -yum
D chicken breast evoo w shrooms, broccoli and little cheese
s schwann's fudge bar
lots of water, some w flavor packet and some without

L ordering out w/the girls at work, maybe chicken wings & salad?
D burger w grilled onion and maybe a slice of cheese, veggies du jour
S Fudge bar!! maybe some olives or a pickle too.

Did so good yesterday . . . UNTIL accompanied one of my members to the emergency room . . . there until 5am - very stressful so what'I do??? You got it - junk foooded myself.:(

Hi Ladies:)

Wasn't feeling well this morning,so I slept in again. Don't know what it is,just that I caught it from Leo. Its more like a mild flu and I have some of the symptoms .Hope it gone,by the time we head down to NY for our Christmas holiday.

Leo went to the doctor yesterday for a physical and the results come in this morn and all is fine.

I'm finding something strange about lowering carbs. & I losing nicely.I used to watch strictly not having more that 45 carbs a day w/o losing or stalling month after month.Than I said thats it,no more low carbing for me,and I notice that the scale was going downward.I'm now add back grain carbs like oatmeal, bread, starchy veggies,burritos & nachos on menu below and its not effecting my weight. I'm tracking my menu on fitday and the grams of carbs are reading well over 100 grams. Maybe I don't have to watch them so closely like I had to before. I'm now counting calories instead.

My carbs were WAY high today. I hope this doesn't affect WI on Monday. O'well, I gotta have a carb day at least once a week lol! I DO miss my sweets.

My embarrassing menu:

Instant Oatmeal - 2 servings
Progresso- Garden veggie soup-Low Sodium - 2 servings
Crackers, saltines,about 7
almonds- roasted-salted - 1 serving
Frozen Mixed Veggies- 3 Servings

Meh..I had a work function to go to tonight, planning my meals today was a little challenging, since I didn't know what they would be serving:

B: 2 oz smoked salmon with strawberry cream cheese
S: nuts...
L: Low-carb bar and 3 slices of prov. cheese
D: Slice prime rib, 2 shrimp, green beans, a little stuffing and 1 bite of chocolate mousse cake.

I def had more carbs today - but still well-controlled, considering. My perspective has changed. I looked at the slice of cake/mousse in front of me and thought "that's atleast an hour on the ellip., def. not worth it".

So I just took a taste!

Hi Ladies:)

We're having a windy blustery day again,but this time the winds are howling.

With all thats on my mind I forgot to W-I this morning.Will do it tomorrow.

So,lets get back to dieting.

I'm now on a calorie counting board and they are doing the ZIG ZAGGING THE CALORIES from one day to another. They say it can work and any phase or calorie counting diet. This it what I found,zig-zagging has a few benefits. First, it keeps the body from getting too used to any one calorie level so It stops plateauing. And Second even better, having those 2 higher calorie days in there allows to plan for parties, dinners out, or simply days when you want to splurge a little and not feel so much like your dieting.

So I'm thinking if it works for calories Why can't it work with carbs?? Going to try and see if it works.

Sorry I haven't posted...I got home late Friday and was out most of the day yesterday. My menu has been erratic the past few days - I get so busy during the day that I don't eat much, then just eat dinner. And I made up the calories with a few drinks :(

Friday's menu
B: Low carb bar
S: Half of a cucumber, nuts, 2 slices prov. cheese
D: Steak tip salad w/ blue cheese dressing (2 drinks, 1 beer)

Saturday's menu
B: Low carb bar, 4 slcies of bacon
D: Buffalo chicken and fried calamari (2 drinks, 1 beer)

I need to go to the market this morning so I can plan a better menu for today!

Didn't do to good on the W-I this morning went up 1 lb.I guess it was all the stress that I was having, over my two friends.Nancy being in the hospital and now my dear friend Pat is going for heart surgery after the holidays. Don't think I can handle the Christmas Challenge anymore.I'm thinking of pulling out of it.Whats the sense,I won't be able to watch what I'm eating under sadness & stress.

awww beachie - what sad news.:(:hug: Don't feel doomed girl . . . concentrate on how healthy we're all getting regardless of w/l, ya know? Even on my worst days - I'm so much better off here with you & the gals than I was mindlessly binge/carbie/junkie eating my way thru life & I've got the blood tests to prove it!:D

Have to add a few things to my menu from yesterday - I spent the Wee Hours cooking last nite - A "Deep Dish Quiche Pizza" and two pans of "LC Egg Bread" - just too heavenly to resist! Had two pieces of each between 3-4am - catching up on my "Survivor-China" tapes. Determined to get my fiber up as a result today - I'll revise this as necessary - but here's the Plan:

Beach Bum - I'm sorry to hear you're having such a rough week. Life interrupts. Try to keep up your spirits...

I'm with you with the Challenge progress - I'm up a pound :?: But I'm trying not to get disscouraged. I'm excited that I've been so disciplined to get to the gym 4x a week and am def paying much more attention to what I am eating.

And I've altered my approach a little so I am not a slave to the scale...I find victory in many other aspects of my progress - I lost this week from measures of my waist, thigh and knee. I'm in a notch on my belt (albeit a little tight) and I am really looking forward into fitting in to the jeans I haven't been able to wear in 2 years.

Now if only I could control the weather!

For today's menu:
B: 2 eggs, 3 slices of bacon
S: Low carb bar
L: 1/2 zucchini with a tbsp humus, celery sticks with a tbsp peatnut butter

Have to add to YM:

TWO more slices of the Yummalicious "Deep Dish Pizza Quiche" at the last break (10:35pm:dizzy:) - OMGosh it is SO good & totally IMPOSSIBLE to tell its an egg crust . . . gotta print out recipes even for some NON LC'ers at work!:p:cool:

ONE slice of egg bread w/ cream cheese heated in the micro @ bedtime.

Had MEGA stress last nite and am so proud that I just continued on glugging the water and eating OP. Only got a short Power Walk in but so far so good on doing something every day of Dec.

TM:

B: Another lc yogurt-protein shake (I've been putting a splash of heavy cream in with the crushed ice & zipping it in my Magic Bullet - really makes it more satisfying & yum.)

L&S: 2 catfish fillets
more salad with olive oil

Finishing off the cauliflower thru out the evening - may have another Egg Bread at some point - prolly with the fish.

Staying OP pretty well, last night had chili instead of pork chops, but only the beans were unfriendly.

L: 1 small raw zucchini with humus; a few celery sticks with 1 tbsp peanut butter
D: 4 low-carb recipe jalapeno poppers (did I mention how much I love them!)

Wednesday:
B: 2 eggs (hb) 4 slices of bacon
S: low carb bar
L: Celery and humus
S: 2 oz cheese/pepperoni
D: Grilled steak tips and port. mushrooms, CarbSmart ice cream bar

'Morning All & Welcome to the Challenge akcher!:carrot: Concentrating on how good I feel staying OP during this Holiday Carb-Overload Season. Much better than the sluggish - bloated feeling I'm forcing myself to remember in detail when I used to pig out at Holiday Buffet Tables!

Finally made the Turnip Fries - and enjoyed! I didn't go with the baked version - deep fried them - most shook up in parmesan but the last batch plain. Think I actually enjoyed the plain (but salted) version the best. The last batch had soaked the longest in the heavy cream/ice water mixture and tasted the most like real french fries/turnip taste leached out. Thinking these will be more of a "at home" kind of snack food - didn't do well (soggy) when I re-heated - just like "real" fries.

So adding to YM:

turnip fries

Have no idea what I'm having today/tonight yet . . . but getting a real energy boost from starting my night shift day with the protein/yogurt smoothie . . . just not hungry when I wake up but don't have the urge/cravings if I make an effort to get something in my stomach for breakfast, ya know?

I had a BAD BAD BAD Food day yesterday. It was like I was possessed or something, so I went and edited yesterday's menu post because although I had good intentions, that's so not what happened. I think I may have gotten it out of my system though...hopefully. Basically I had a binge eating episode. Thank God that doesn't happen very often and I can't even begin to explain why it even happens at all. I was in good spirits yesterday...Owell.

Today's menu

B - Special K & 1 c.Milk 2%
L - Mixed veggies
1 TBSP Olive Oil

S - Almonds

D - Stuffed Flounder w/Crab meat
Squash & Zuchinni Sauteed in Olive Oil.
Totals
1297 Calories
109 Carbs
90 protein

OMG! Lemme tell you, The Stuffed Flounder we had for dinner tonight was awesome! I am gonna post the recipe for y'all.

The only thing we did different was we didn't use the sauce or the parsley and he made his own Lemmon pepper sauce w/butter and pour it over the top. It was SOOOOOOOOOOOOOOOO Good and very fulfilling! Also for you lowcarber's, it's pretty dagum low carb too!

BAKED STUFFED FLOUNDER

2 lbs. flounder fillets (or 12 pieces)

STUFFING:

1/4 c. chopped onion
1/4 c. butter
1 (3 oz.) can mushrooms, stems and pieces
7 1/2 oz. can crabmeat
1/4 c. saltine cracker crumbs
2 tbsp. snipped parsley
1/2 tsp. salt

In skillet, cook onion in butter until translucent. Drain mushrooms, saving liquid. Add mushrooms, crab, crumbs, parsley and salt to skillet. Mix. Lay flounder, skin side down; divide stuffing among fillets. Roll up. Place in baking dish, seam side down. Preheat oven to 350 degrees. Prepare sauce.

SAUCE:

3 tbsp. butter
3 tbsp. flour
1/4 tsp. salt
1 1/2 c. milk
1/3 c. dry white wine
1 c. (4 oz.) shredded Swiss cheese
Paprika
Reserved mushroom liquid

Melt butter in saucepan over low heat. Blend in flour and salt. Add milk to mushroom liquid, add wine. Cook, stirring constantly until thick and bubbly. Add cheese. Pour over fillets. Bake 30 minutes. Check doneness and add paprika to top. If sauce is too thick, add tiny bit of milk and place n oven until heated through. Fish should flake easily. Serves 8.

D: Steak tips (left overs) and shrimp w/ low-carb cocktail sauce

Of course...now it's Friday and I am almost out of food! :D I don't know what I will plan for today's menu. Probably tuna.

Good morning, heat wave here in northern NY. It's 14 degrees, yesterday was below zero.

B same as yesterday (which I forgot to post) L & F yogurt

L big salad w grilled chicken and a little feta, also a couple pieces on Chicken in Marsala sauce (maybe a 1/4 c) today same without the Marsala

D last night was grilled sausage (local butcher makes one w peppers and onions mixed in, it's yummy) and broccoli au gratin from Linda's recipes. I did not have enough broccoli so mixed in asparagus with the broc, was good too)

Tonight is DH Christmas party so not sure, likely a piece of chicken and some raw veggies w dip, it's a buffet, usually most of it is too high carb) I can't eat it even for 1 night, if I do I fall off the wagon for at least a week and crave carbs.

Snow and freezing rain this am, temperature is a balmy 21!!

Supposed to be lots of snow showers and ice this week. Will at least make the outside decorations pretty but the roads will be for crap!

I was good for the party Friday night, stayed OP. Yesterday not so good, made Christmas cookies, ate Christmas cookies (about 6 including the unbaked dough I ate too) then made a huge chicken dinner, ate a spoonful of corn - which was not worth it, so left the rest of that, also ate a small serving of mashed potatoes w gravy and stuffing both of which I finished.:o I am up a pound which serves me right. Back on plan today.

Yup, it's been very ugly here too. Between the Holiday gatherings, eating out, and just the basic Holiday temptations, I am having a very hard time. I feel like I should just remove myself from this challenge. I have that little devil on my shoulder that say's, it's only one time a yr, enjoy yourself, blah blah, blah... LOL! :dizzy: I've actually gain 3.6 lbs in this last 2 weeks, so what does that tell ya? I guess I'll just wait for TBL challeng in January and enjoy myself for once. I am tired of stressing this, counting every calorie and carb, only to be disappointed in myself or feeling deprived because I couldn't partake in whatever everyone around me did, because I have found that that just leeds me to a major binge. Sigh....

I did a little better staying on track yesterday and I am fixing to workout right now so hopefully I can get my big ole butt motivated to continue losing in Dec or at least maintain.

I thought someone else would have started the reg weekly chat thread. I didn't want be a "thread starter Hog" since I am pretty new to this part of the forum, so I left it up to someone else but I reckon I'll go make it now, hehe. :dizzy:

I made some Christmas cookies [Cinn. Stars]from the food network. The main ingredients are ground almonds and confectioners sugar. Going to look in the Linda's web site for others.

DIVA-sorry for all the difficulty your having at the holiday festivities. I've gone up 3 lbs last week from having too much sodium and than I lost it. Can't seem to move that ticker downward. Be careful not to overindulge,you don't want to feel sorry later.Tonight I'm going to watch the Biggest Loser. Hope the blue team does lose today.or they gone.


AUD-Can't believe the regulars are not posting. I guess they're busy shopping. I'm going out tomorrow and see what goodies I can get for the family.Don't like to shop in crowds. I might just go locally.

Not doing good in the challenge,I think I'm adding back too many carb,now that I'm counting calories instead of grain carbs.

Haven't touch any cookies that I baked,saving them for my DD & the DGC,but the scale still isn't showing a lose.

Laura-I heard about all the people being stuck on the highways,because of the grid-lock. I think I heard that they let all the people leave at once instead of staggering the time. Sorry that you got caught in that mess. I was OK the singers director called and told us she called the nursing home to tell them that we will sing for them another time.

Going to get another storm on Sunday,don't know if its rain or snow accompanied with a no'easter.

Not too sure about today - starting out with the usual LC Yogurt/Protein Smoothie and going from there.

I keep forgetting to post here!

With al the stress yesterday I didn't eat much at all. Consumed all of 642 calories the entire day, but the days before that were equally as bad but on the High carb/calorie end instead of low. My body is prolly freaking out. LOL! Trying to get it straight today. :hug: haven't weighed myself cuz I am scared.

Hey!!! If there a prize for WHO GAINED THE MOST THIS DEC. CHALLENGE

I would take it as I gained 5 lbs in one day[have no idea why]and than an additional 4 at my DD's.

Hope you right AUDthats it water weight,that I can loose easily.

Well today I was back OP. I am totally figting the urg to go into the kitchen and find some chocolate but I WILL be strong! I've been running to the dang bathroom ALL day because I have been drinking water like a mad woman trying to clean my system out. THAT was my exercise, lol!

Menu:

2 Egg, ham and cheese omeltte
1 Slice Whole grain wheat extra fiber
teaspoon butter

Apple
Almonds

Half turkey sandwich on Wheat ^
A little Conola helman's mayo
1 cup corn .5 tsp butter

Here's my numbers:
1455 Calories
101 Carbs
89 Protein

Hi Ladies:)

Not starting the low carb until Wed 1/2,that my new W-I day as well.

Hope you all had a wonderful Christmas with family or friends I did. The only thing that troubled me was my weight gain of 9-lbs,but fortunately it was just temporary as I lost 5 lbs of it.

Going to change my ticker to read correctly for the New Year.
