Question are celery root and parsnips ok?

Hi all, I was just looking thru December's "All You" magazine and saw a sidebar about root veggies and could not find either on the enjoy/avoid lists. I've never had either so I won't know what I'm missing anyway. The celery root is supposed to taste like celery and parsley which I think I'd like. Thanks!

Let me start by saying I am definitely NOT an expert. I'm still pretty new to all this but I thought I'd give you my opinion. I think celery root is fine. I think it is more like celery than a root vegetable. I would say parsnips are a definite NO since they have a glycemic index number of 97 which is higher than a regular potato or a doughnut for that matter. Hope this helps.

parsnips are listed in the Good Fats Good Carbs book as Very Limited. One half cup has 15 carbs, 4grams of sugar and no fat. That said, I do use them occasionally in a stir fry that my son loves but I am well established on phase 2. I would not get near them on phase 1.

Celery root isn't listed in the book.
