I love love love TJ's lite chevre!
I don't care what kind of cheese a recipe calls for--I use the lite chevre. I've used it in casseroles (both Italian and Mexican), egg dishes, and even in tacos. I also eat it on sandwiches, do the pita thing that gail mentions (with TJ's whole wheat, 130-calorie pitas), and eat it in salads (my favorite is spinach with roasted peppers, chicken, figs, fennel, roasted garlic, lite chevre, and balsamic vinegar). For a while, my Trader Joe's didn't stock it and I thought I was going to starve.
I also love the cute little goat on the package!
