Ok so in the UK they only have regular ricotta cheese, they don't have the low fat kind. In the recipes where it's used to make the ph1 pancakes, can anyone suggest a substitute? Thanks ladies! :D

Jenny, you could substitute LF or FF cottage cheese for the ricotta. If the cottage cheese is too runny, just make sure you drain it well first.

I have often (before starting SB) substituted cottage cheese for ricotta because I don't care for the taste of ricotta... If its something that needs a smoother texture I just spin it for a few seconds in my food processor.
