100 lb. Club - Does anyone have any good suggestions for Salmon???

I know Salmon is very good for me, but the only way hubby likes to make it is pan fried. I like smoked salmon, but can't see myself eating this more than twice a month. I am looking for some good recipes that lets me cook it in the oven. tia cheryl

OK here is an AWESOME one:
Mix together 1/4 cup low-sodium soy sauce, 1/4 cup no sugar added maple syrup, 3 cloves of crushed garlic, and a tablespoon of olive oil, and a pinch of salt and pepper. Put in a glass pie plate. Put your salmon on top of the mixture (skin side up) Put in fridge for 15 minutes and then flip the salmon over for another fifteen (skin down). Take from fridge and put into a 400 degree oven for exactly 20 minutes. Salmon will be perfectly cooked and DELICIOUS!

That sounds great! We're having some friends over on Saturday and we were planning on grilling a salmon. I think I'll use your recipe as the marinade. I think the syrup would get deliciously carmelized on the grill!!!!

I think it definitely would because it gets carmelized just being in the oven. let me know how it comes out! My boyfriend and I just purchased a little hibatchi coal grille and i will have to try it out with this!

Now we eat it about 3 times a month-SO EASY!

Salmon with Fruit Salsa over Jasmine rice.

1 can pineapple tidbits drained
2 TBS olive oil
1/4 finely chopped red onion
juice of 1 lime
finely chopped, pickled jalapenos (to taste)-I use a bit of the juice as well
chopped cilantro (the more the better for me)
salt and pepper

Make this in the morning
Then all you have to do is make the rice
and grill/or broil the salmon (salt and pepper only)

Spoon out rice
place salmon on top
spoon salsa over all!:yes:

This is only a method, adjust ingredients to taste-try strawberries, mango, etc . . .

Wow that sounds really amazing! I'd love to try it but I'm not a natural born chef or anything... when you say 1/4... what do you mean? tbsp? cup? bottle? As soon as I find out I'm getting some salmon to try it on!

A very easy meal is salmon. Take the salmon, mix an egg and some crackers and a little salt and pepper. Make patties. Do not fry them. Just pop them in the oven for a bit, you can bake or broil them for a few min. My daughter makes this sometimes when we are to tired to cook on salmon night. Salmon night is once a week.

Hi Cheryl,

Hubby uses the same basic recipe as Lyndsay, except we use Dijon mustard instead of garlic and olive oil and we broil it for 4 minutes on each side. It does come out with carmelized glaze to it. This is delicious!

I love salmon. We eat it all the time here. Had it today in fact.

I make it a couple of ways.

Crush fresh garlic cloves and spread it over the fish. Sprinkle with Mrs. Dash garlic and herb flavor, some onion powder and paprika. Squeeze the juice of a fresh lemon over the fish. Bake at 350 degrees for 30 minutes.

I spread homemade pesto over the fish and bake it at 350 degrees for 30 minutes.

DH and I don't do anything special for salmon. We grill it on the BBQ and squeeze a little lemon juice on it. I think we just like the taste as is!

I guess I'm a bit of a purest too. I like my salmon to taste like salmon. I could eat it 4-5 nights a week if I could afford it. DH doesn't care for it much tho :(.... anyways, I have a small glass pyrex casserole dish with lid. I add a small amount of water, lay salmon filets (skin side down), drizzle with olive oil (or I use some olive oil spray), a little lemon juice, lemon pepper, garlic, basil & a little sliced onion. Put the lid on and cook it in the microwave intil flaky. (5 min depending on thickness). It is the makes the most moist fish. Works well with halibut steaks too!

I have an awesome spiced baked salmon recipe, but gotta find it - will post when I get to work :) It is spicy, but not much fat at all :)

Okay here you go. I absolutely love this spicy salmon

INGREDIENTS:
4 4 ounce pieces wild salmon fillet
1 tbsp cumin
1 tbsp chili powder
1 tsp paprika
Juice of 1 lemon
Freshly ground black pepper

PREPARATION:
Preheat oven to 425 degrees. Place salmon fillets skin side down on a cookie sheet sprayed with nonstick cooking spray. Combine spices. Sprinkle then pat gently on to salmon fillets. Squeeze with lemon juice.
Sprinkle with freshly ground pepper. Roast for 10 minutes pre inch of thickness, until fish flakes easily with a fork.

I like using Lime instead of Lemon - but that's just my own taste preference.

Orange Glazed Salmon

4 (4 oz salmon fillets)
1/4 teaspoon salt
1/4 teaspoon pepper
cooking spray
3 Tablespoon low sodium soy sauce
3 Tablespoon orange juice
1/2 teaspoon dark sesame oil

Sprinkle fish with salt and pepper. Coat a large non stick skillet with cooking spray. Place over high heat until hot (before putting in fish). Add fish and cook uncovered for 3 minutes per side. Cover and cook 3 more minutes (leave on one side). Remove fish from skillet.

Add soy and OJ to skillet and cover over high for 1 minute stirring to get yummy bits off. Add sesame oil and stir well. Pour over fish.

We live in the Pacific NW and eat salmon at least once a week. My son caught some last weekend, yum. I have tried a lot of recipes, but the two family favorites are:

Favorite:
about 1.5lb salmon filet... put it on a sheet of foil sprayed with Pam, on a cookie sheet. Salmon should be skin side down.
Top with seasonings you like. We often use salt&pepper, a few slices of onion scattered over top, a few sprinkles of lemon juice or some lemon slices, maybe some dill sprinkled on.
Fold the foil up to make a packet and seal all the edges together tightly.
Bake 450 degrees 20-25 minutes. Salmon is done when the center flakes with a fork. This is always moist and good.

Second Favorite:
Rub salmon with lemon pepper, salt, and garlic powder.
Mix 2T water, 2T soy sauce, 2T brown sugar, 1T oil until sugar is dissolved. Drizzle it over the fish to coat all the meat (dont worry about coating the skin unless you eat the skin).
Get your grill ready and hot. Oil the grate. Throw that salmon on a hot grill, meat side down, maybe 6-7 minutes. Then CAREFULLY use wide spatulas to flip it over to skin side down. Shut the grill lid and let it cook about 6-8 minutes or until it flakes easily. Yummy.
