TGIF! It's finally Friday! This week just seemed all wonky to me. :dizzy:
Today, I'm taking the girls to Dutch Wonderland for the day. I think I should make out handling all 3 pretty well, but I'm debating whether to do the water-park part of it or not. We'll take our swimsuits with us, and just see what the crowds are like once we get there. It should be an interesting day! At least the weather should cooperate, for a change!

I am off to the gym shortly to get my routine re-evaluated by Rasa. I imagine I'll have sore muscles by the time she makes adjustments! Donna will be here cleaning when I get back - maybe she'll run me a hot tub!
It keeps raining so I've not been out in the garden for a while. I hope to get out there later to stock up on veggies - lettuce, spinach, sugar snap peas, zukes and cherry tomatoes are all just waiting! I love my summer veggie garden.

Me, having minor surgery on my big toe today. Don't know how the dressings are going to look with my heels...or if it will affect my gym routine. I have another art gallery opening tonight (not as big as the one a few weeks ago, but still have to make an appearance.) Must find the strength to keep away from the wine and cheese table!

Wow, how did I get in here so early today? I cleaned for 4 hours yesterday and am starting to feel ready for my niece to arrive today. The kids are very excited, we pick her up at the airport at 4:00 and she'll be here for 3 weeks. The younger kids and I have never met her and she has only had a little english in school, so it will be an interesting visit! This morning I still have to clean out the car, and clean DD's room where she'll be staying. Also need to put in some work hours. And think of a good OP dinner that will agree with everyone. Never a chance to breathe around here.
Cottage, I hope you enjoy the park, at least you've got nice weather. Take lots of pix!
Ruth, you must get your garden in early to have all those things ready for harvest already! I'm only now just starting to get some tomatoes, zukes, and peppers, but I planted a couple of weeks later than I should have.

Me: well, all of my family/company etc is gone..daughter will arive in LA today and it is WAY too quiet. My husband is off on Fridays, so we were thinking about going in to New Orleans to a restaurant supply place to pick up a couple of things. I've been wanting some of those big white pasta bowls and I want a big brazier that can be put in the oven. But, I just got an email from a client who will be in N.O. for several days of meetings and we might just skip going in today so we can go in tomorrow to take he and his wife out for a French Quarter tour and some drinks...so it's up in the air. The weather here is horrid..constant off and on rain and looks like it will be that way for several days. yuk!

B. Betty, Didn't realize you were from Richmond! You're probably out in the Fan at your galleries. I grew up in Richmond, miss it like crazy!! We were there two weeks ago for the first time in 2 years. It was wonderful!
Ruth, have fun at the gym! Sounds like not too much fun. I wish we had the space to have a garden. I do go pick up a delivery from a local farm each week so I can have homegrown veggies. When I was little we had a huge veggie garden and one of my earliest memories is being out there with my dad working. Someday maybe I'll be able to pass that experience on to my kids!

We had such a nice night last night. First of all, I made pulled pork in the crockpot and Adam said it was the best thing he can remember me ever making. Quite the compliment! Then we went to a coffee shop downtown and saw one of Adam's friends from high school perform. He was really good, it was more pop than rock which I enjoyed. The guy was very nice and it's always fun to meet Adam's friends from way back. We got home at a decent hour but I am still lagging this morning. Wanted to sleep another three hours or so.

We just got back from seeing "Ratatouille" at the base theater. It was hilarious! I would definitely recommend it if you're an animated movie fan. So cute!
Have fun at the part, cottage. Sounds like the kids will have a blast for sure!
Ruth, an afternoon in the garden plucking those great veggies will be perfect for stretching out your sore muscles!
I hope your toe heals quickly, Betty. Perhaps you should show it off at the opening. Are you ever lacking for conversation pieces?

Me- Another day of babysitting. Yesterday got to be quite long as it rained NONSTOP!! We did go the the library and then all trekked to Meg's appointment. Hopefully they can be outside for a good bit of today, it looks as though it isn't supposed to rain until this afternoon. I would love to get some swimming in this morning if at all possible.
DH is off for 3 days this weekend, so I think we are going to tackle some chores around the house. The garage needs some TLC and we are going to touch up paint in the living room.
Okay, need some more coffee and get this show on the road. :)

Jessie - Pulled pork sounds great, I have never been able to get that down, mine just never tastes as good as everyone elses!

Hello All - chat round 2! That's what happens when you post early, I guess...
My niece is 14 and she's from Marseille. I've been a little stressed about the visit because my DH was supposed to be here to act as tour guide, but he got called away last week on a work emergency. I haven't heard from him yet, so that means the ship's not in port yet. He was only supposed to be gone a week or so, but that's always kind of touch and go. Anyway, I took one week off of work to go on vacation, but she'll be here 3 or 4 weeks and the rest of the time I'm working, so I'm not sure how much sightseeing we'll be able to get in. I don't want her to be bored. Plus, she sees my husband every year, but she's never met us, so I hope she feels comfortable and doesn't get too homesick.
Jessie, thanks for the idea, I'm going to do some bbq pork in the crockpot one day. I've been trying to think of good "american" dishes to cook for her.
Nessa, you look fab! I love that shade of blue and it looks great on you. I always enjoy seeing your pix.
femme, you should offer a 3fc NO tour and act as tour guide! Sounds like you've got lots of experience. I'd definitely come!

Schmoodle..we have a "sister city" in france that does a student exchange every year. My best friend volunteered years ago to host a child that was visiting that was the same age as her son. Bless his heart, he did not want to try anything she cooked (she's a fantastic cook!) She finally discovered he adored MCDonald's fries and that was just about all he ate for the whole 2 weeks. Then he got sick..headaches (I wonder why?). Before he left for the trip, his mother had warned him (rightfully so) not to take any kind of "drugs" that were given to him. Kathy tried to give him some tylenol for his headache and he got all unnerved. They finally ended up calling his Mama in France to get him to take the tylenol. She didn't volunteer the next year.

Here's the pulled pork recipe I used. You will need to sub Splenda for the sugar. Also, it's a fatty cut of meat. You need to leave the fat on while it cook to keep it moist, but afterwards trim as much as possible. Instead of the complicated grilling instructions, this is what I did: made the rub and rubbed half on the pork. Let marinade overnight in fridge. Put other half of rub in vinegar sauce (what they use for basting). Put pork in crockpot and pour vinegar sauce over it, and then cook 8-9 hours on low in the crockpot. It turned out beautifully.
Carolina Pulled Pork with Lexington Red Sauce
Cooking Light, July 2007
Sauce:
1 cup cider vinegar
1/3 cup ketchup
1/4 cup water
2 teaspoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper
Preparation
To prepare pork, soak wood chunks in water about 16 hours; drain.
Combine turbinado sugar and next 4 ingredients (through ground red pepper); reserve 2 tablespoons sugar mixture. Rub half of the remaining sugar mixture onto pork. Place in a large zip-top plastic bag; seal and refrigerate pork overnight.
Remove pork from refrigerator; let stand at room temperature 30 minutes. Rub remaining half of sugar mixture onto pork.
Combine reserved 2 tablespoons sugar mixture, 1 cup vinegar, 1/4 cup water, 1 teaspoon salt, and oil in a small saucepan; cook over low heat 10 minutes or until sugar dissolves.
Remove grill rack; set aside. Prepare grill for indirect grilling, heating one side to medium-low and leaving one side with no heat. Maintain temperature at 225°. Pierce bottom of a disposable aluminum foil pan several times with the tip of a knife. Place pan on heated side of grill; add half of wood chunks to pan. Place another disposable aluminum foil pan (do not pierce pan) on unheated side of grill. Pour remaining 2 cups water in pan. Coat grill rack with cooking spray; place on grill.
Place pork on grill rack over foil pan on the unheated side. Close lid, and cook for 4 1/2 hours or until a thermometer registers 170°, gently brushing pork with vinegar mixture every hour (avoid brushing off sugar mixture). Add additional wood chunks halfway during cooking time. Discard any remaining vinegar mixture.
Preheat oven to 250°.
Remove pork from grill. Wrap pork in several layers of aluminum foil, and place in a baking pan. Bake at 250° for 2 hours or until a thermometer registers 195°. Remove from oven. Let stand, still wrapped, for 1 hour or until pork easily pulls apart. Unwrap pork; trim and discard fat. Shred pork with 2 forks.
To prepare sauce, combine 1 cup vinegar and remaining ingredients in a small saucepan; bring to a boil. Cook until reduced to 1 1/4 cups (about 5 minutes). Serve sauce warm or at room temperature with pork.

Jessie, thanks for the recipe, it sounds wonderful. And it's the vinegar type of bbq like from North Carolina, not the tomatoey bbq. My mom's from NC so I was raised on vinegar bbq. I'll definitely try this. I wonder how it would be with a leaner cut of meat.
Femme, I hope I have an easier time of it! She is, I'm assured by MIL, quiet, not picky, agreeable, easy to please, just the all around perfect child (read with sarcasm). Although most of that's probably true, it's a little hard to take from MIL.

I think I eat enough healthy fats to have a problem maybe... If I eat like a phase 2 SB with a bit more carbs and watch the fats do you guys think that would work?? I know some of you guys dont think Alli is a great assist but I still may want to try it...but I dont want to follow their specific diet. They do give you calorie limits and fats per meal/day etc for week 1,2 and finally 3, which is back up to about 30% fat per day. So what do you guys think????

Jesse - that does sound good. I use the crockpot pulled pork recipe that is posted here. It's really easy since I just use the Kraft South Beach BBQ sauce with it and I can get it started before I go in to work. Yours is probably better though. Does Splenda work for the sugar on the pork as well as in the sauce?
Nessa - Love the outfit! We're not allowed cameras or camera cellphones in our office either. I thought it was tough to get in here (secured gate where I use badge/car tag, turnstile where I use badge, building door where I use badge, next building door where I use badge and number) and there are several places where I can't get in (like where the servers are). Yours is much more difficult. One guy suggested we meet at my office for me to give him something he left at camp. I just laughed and drove to his nonsecure warehouse to drop it off!
schmoodle - Good luck with your niece! I remember being a hormonal 14 year old and I don't think I would have wanted to inflict myself on anyone for that long. Actually, though, most kids are better behaved when they aren't home. Does she have specific interests or things she wants to see? I'm sure there is stuff she can't do at home.
Kara - I felt like I lived in separates for the longest time! I nursed Brian until he was three but the last year or so was just at bedtime. Now I look back on that fondly (but not fondly enough to have another kid ;) ) Good night!
Kiko - Our yard badly needs to be mowed but it just doesn't seem to stop raining long enough! I almost went out and did it on the 4th before the rain started but I just didn't feel like spending a holiday mowing. I saw pictures on TV this morning of the Little Elm bridge (3 inches above water). This rain is unreal! It sounds like it might be better on Sunday for DH's birthday. We're talking about visiting the Ft. Worth museum where they have a Star Wars exhibit visiting.
femme - I love the French Quarter! We used to go at least once a year when DH's dad was alive and living at the Naval Retirement home in Gulfport. Brian loved the aquarium and the zoo was fun too. And I loved the food. That was before I went on South Beach though.
weezle - Have fun at the pool! Remember your sunscreen! My dermatologist told me that freckles are signs of skin damage and increase the risk of melanoma (which I am at a high risk for) I lived in the sun as a kid in Florida.
pacer - Good luck at home! You have my prayers. I'm on my third marriage and know how stressing it is when homelife is not fun.
Betty - Take it easy and let the toe heel. I can remember after toe surgery having to keep it dry and it might be hard to exercise then.
Ruth - This is the first year since we bought this house over 10 years ago that we haven't had a vegetable garden planted. I just didn't have time with preparing for camp. I'll need to work on the weeds in the bed so I can get a fall garden in. It's been such a wet year that it's been hard to work in the yard.
cottage - Have fun! It must be hard to be responsible for more kids than hands but it sounds like you do it so well. I am in awe of you!
Me - I did make it to the gym yesterday. It had definitely been far too long! And with being on phase 1 for 5 days, I am down 3 pounds! I should have gone back to phase 1 sooner. It has made such a huge difference in the cravings that I didn't even realize I had.

That's why I rejoined the gym when I started on South Beach. In a normal summer, it is too hot to exercise much outside in Texas (this summer we haven't had our normal 100 degree days but it's been too wet to exercise outside). Check out city recreation centers as they might be cheaper than a gym.

Afternoon chicks, back from vacation. Had a great time. It is 1:00 and I am still in my jammies, the house is clean and the laundry is on the go. I am just trying to catch up on all I missed. Starting Ph 1 tomorrow, after the week I just had, although I did not gain a pound. Probably from all the walking we were doing. The race was great, the water park was really fun, and did lots of shopping but really didn't buy a whole lot. But it is always nice to be home.

Kiko, Molly had a bouncing baby boy, Jack! He's PRECIOUS! There's a picture of baby Jack with proud Auntie Lisa, right after he was born in February. I'm co-Godmother with Molly's sister, and I'm so proud. He's getting so big now! He must have had his arms stuffed in his face the whole time he was in the womb because even now, he won't put those arms down for pictures!
And Barb, don't worry about the sunscreen. I'll be wearing SPF 30 all over me, and I will reapply often! I was born with freckles, being Irish and all, and they just seem to come out when I'm in the sun. My whole family is covered with them. Mom has so many that they're connected and she looks tan all the time. :)

My younger sister is covered in freckles and she had melanoma (caught before it spread due to regular checks by the dermatologist). I just worry. Must be the mom in me!

Barb, can never have too many moms! I must admit.... I've got about a million moles on my back that should probably come off. I don't know why I put things off like I do, but heck. It took me a year and a half to do something about my shoulder, and it turns out I was dislocating it all the time. Not the brightest bulb sometimes. My mom's an RN so I hear about it all the time. One step at a time, right? I finally quit smoking, it only took Mom 10 years to get me to do that.....

Barb YUM! I am taking your advice and paying attention to my dairy intake, which I typically neglect. I am eating the nf plain yogurt with Spendla and cinnamon. It is so good!
Anyhow, Meg is down for her nap, which for right now means she is chatting away in her crib. Fortunately, it is sunny out, so the kids have been having fun being outside.

I need to stop going to this one grocery store near my work. I could buy out the whole store and learn to be a gourmet! They have such neat stuff and a whole aisle of bins of all different kinds of seeds and flours- most of which are SB friendly. I grabbed a bit of amaranth flour just to try it out and throw into my falafel. Anyone else had it before?
They also have quinoa pasta! I've kind of lost my taste for pasta but it could be interesting! And I finally found hemp milk. It was almost $5 for one little container so it BETTER be good. :P

Quinoa pasta is OK but DO NOT FREEZE IT. I am not sure if that goes for any pasta, but I tried it with quinoa and it turns to mush!

Jesse - I can't speak for freezing the quinoa pasta but I freeze whole wheat pasta all the time. As long as it is thawed before I reheat it, it tastes great!

I've never frozen pasta. I try desperately to avoid eating in the office so I keep my meals in the fridge and by lunch time it's warmed up because the office isn't air conditioned. :P
Amaranth flour is kind of gross. :\ I'm disappointed.

Hi everyone. My name is Laura, and while I'm not really new to the boards, I am new to SBD. I started dieting (again) in June, and did really well on Atkins for about 2.5 weeks. I also picked up some other WL books, SBD was one of them. I've been off Atkins for for about 3 days, due to a lot of stress creeping up in my life, but now I am ready to recommit. I have been evaluating my Atkins programs, and I am having a hard time going back to it. The physical cravings for junk foods were gone, but the emotional cravings were still there. I think I may be emotionally better off on the beach. Can anyone out there give me some pointers, advice or similar experiences? I know lo-carb is the way to go for me, but I sure could use some help getting started up on this new to me program.

Hey there Laura welcome to the beach. SBD is not a low carb diet but a good carb way of life. You really should read the book before getting started. Ask any questions that you have there is always a vault of information among the chicks here. Good luck. I tried Atkins but did not really like it, just did not work for me.

I don't. but when i do start treating too much and being 'the girl who can't say no" I tend to pull back to a tight phase 2 or even once i did a full phase 1 to get back in control.
if you do phase 1 properly the cravings (which we mean HUNGER) dissipates. the problem you refer to are EMOTIONAL cravings and NO plan can fix those.

Good Morning all! I'm feeling better after a good nights sleep. I just had too much going on yesterday to chit chat. I'm starting day 13 of phase 1 and feeling pretty good. I pulled out the SBD Book and drooled over all the selections available in the west...riccotta cheese, asparagus, lowfat spreads fresh fish to name a few. I don't have those options here so I just do without. A chef friend of mine made me some mayonaise with egg, olive oil, splenda, salt and pepper yesterday. It is so YUM! A teaspoon of that on my salad put me in heaven!
Hi Laura, WELCOME! The first 2-3 days are the hardest. My cravings have never been physical I don't think. Mostly mental/emotional patterns.
I don't have cravings right now. I start phase 2 in a few days and I know I will have to introduce foods carefully to avoid my trigger foods.
As Little Chick says, take time to read the whole book to get a sense of how South Beach Diet works. We are here for support and questions you may have.
Well I have a nice quiet morning, I'm going to try and make mock riccotta cheese by cracking and straining some skim milk I have. Then making a dessert from it. Hope it turns out.

Hi Laura, Welcome to the beach forums!! I have been on the beach off and on for about 2 years. Good news is when I follow the plan the weight comes off, and stays off. Bad news; like any other successful weight loss program it HAS to be a life change. The greatest news is the chemical changes. In one month my blood pressure went from being high enough to be medicated to being in the normal range. I was able to go from 275 to 232 the first time around without any strenuous excercise added in. Then I strayed and I gained much of my weight back. Now I am back on the beach and this time I am recording everything I eat on Fitday.com which is very helpful. Anyway, hope this helps. The beach really is a way of life and does a body GOOD!!:carrot:
