I had a raging headache and didn't feel like eating much, but it's finally starting to go away. Breakfast: kashi oatmeal Lunch: tomatoes and cheese on half a tortilla (just like pizza!) Snack: a couple pistachios, a couple grapes, and a package of O'CoCo's (so good, taste like teddy grahams but better) Dinner: A cup of vegetable soup (I know its 90 degrees out, I'm a freak) and half a chicken breast Ill probably have some chocolate tonight or one of those Clif Zbars. I bought them at whole foods yesterday and I really can't wait to try it. I hope its good! RosieKate 06-20-2007, 09:28 AM Well, I deviated AGAIN! Ugh. I am working at the kids' VBS this week and it is just throwing me off. I had a small "s'more" at VBS and my afternoon snack was a WW bagel with cream cheese. I also sampled my son's first big baking project: cinnamon rolls. They were good - the kid's got potential. :) The rest of the day stayed on track. Great if I were trying to maintain; not so great for trying to lose. I am off to the gym and am resolved to stick to the plan today. I am taking an apple to VBS, so I don't get tempted to eat the cra**y snacks. D- Chicken, refried beans and rice wrapped up in a flour tortilla and then half a brownie Oh well.. can't win them all. My goal for this week is to eat all my meals at the table - and no reading! ssmiley23 06-22-2007, 06:31 PM so far: B - kashi oatmeal L - bunch of random stuff.. a cup of grapes, some melon, some pistachios, and a slice of turkey on some bread D - going to have tuna steak on the grill with shrimp and corn and some pasta salad. lots of food. zenor77 06-22-2007, 11:09 PM Today~ B~ 1/2c Uncle Sam Cereal, 1/4c "lower" fat homemade granola, 1/2c soy milk, & coffee S~ 2 apricots & 1/2 apple (it was mealy so I only ate half) L~ Went to a BBQ~ 1 veggie dog on a ww bun (brought it with me), potato salad, 1 pickle spear, 4 strawberries, 3 cubes of watermelon, & 1 beer S~ Pumpkin/ww/flax muffin D~ Spicy Kim Chi Soup, 1c steamed snow peas, 1/2c brown rice, nori, & a small salad with sesame dressing I figured I would eat more than my usual lunch at the BBQ so I compensated with a lighter than usual dinner. It worked pretty well. I like to put it in my yogurt and I am usually looking for a crunchy snack. Thanks, Love Yes, I made the Matta Alu Kari at home. :D I love Indian food, but it seems to be a bit healthier when made at home versus restaurants. You sound like such a fantastic, and healthy cook. If you like ethnic food this is a great cookbook to pick up, it has recipes from all over the world. Mattar Alu Kari (Curried Potatoes & Peas) Serves 4 In medium saucepan, heat: 2T ghee or oil I used 1T canola Add and saute: 2 1/2t ginger root, chopped 2 1/2t garlic, chopped 1/2c onion, chopped 1/4t salt When onions are brown, add: 1t ground cumin 1/2t ground tumeric 1/8-1/4t cayenne pepper I used 1/2t Stir in: 3 medium tomatoes, chopped I used 2c canned 1 1/2t ground coriander or chopped cilantro Cook 5 minutes, until liquid evaporates. Add: 1 large potato, cubed 3/4c water Use a bit less if you use canned tomatoes Stir well. Bring to a boil. Simmer, covered, 10 minutes. Add: 3c frozen peas Simmer 5 minutes, or until potatoes and peas are tender. Garnish with chopped cilantro. Serve over rice. According to my calculations it comes to approx. 200 calories per serving without rice. zenor77 06-24-2007, 03:42 AM Okay, so this one I tweaked a lot. This is the original recipe and I'll try to note what I did differently. I made it awhile ago, so this may not be exact. This recipe is really easy to play with, so don't be afraid to experiment! Granola 3/4c brown sugar I believe I used 1/4c 1/3c vegetable oil I used 2T of canola 1/3c honey I used 1/4c I also added approx 1/3c orange juice to the liquids to help cut the fat 5 cups oatmeal I used oatmeal, plus barley & rye flakes 1/2c raisins 1/2c dry milk I didn't use this 3/4t cinnamon Used a combo of cinnamon, cloves, & allspice pinch of salt Mix brown sugar, oil, and honey (plus juice if using) in a saucepan. Heat until the sugar is dissolved. Combine dry ingredients in a large cake pan (9x13".) Pour sugar mixture over dry mixture and mix well. Bake at 375 for 10 mins (I had to bake it longer due to there being less oil.) Let cool in pan. Add raisins after cooking. Store in airtight container. Even with all my adjustments a 1/2c is still 231 calories, so use sparingly unless you have calories to spend. B~ 1pc hf oat bran toast, 1 large fried egg, 2 apricots, & coffee L~ Lentil-barley stew S~ Small banana Appetizer~ 6oz champagne, 3 multi-grain crackers, 1/2oz goat cheese, & 1T mushroom pate Dinner~ 1 salmon cake, 1T low-fat mayo sauce (with horseradish & capers), 1/4c zucchini, 1/3c grain medley, salad with 1t balsamic dressing, & 8oz red wine Dessert~ Brownie sundae (1 small crumbled brownie, 1/3c vanilla ice cream, & 1T organic chocolate syrup) & coffee Aside from too much wine and dessert I did okay. I too cook them at home to make them healthier. :o Here's my day of organic food: 1 cup coffee (fairtrade Sumatran!) with agave nectar and soy milk 3 cups of salad with: beets, carrots, spinach, red leaf lettuce, romaine, chickpeas, tempeh "bacon" crumbles, green olive slices and a garlic/sunflower seed/herb dressing 1/2 cup homemade potato salad with corn, celery, onion, green onion, shredded carrot, spices and "Vegenaise" 1/2 cup marinara sauce and 2 breadsticks 16 oz.
