Grilled Sea Bass with Mango Raita
Ingredients:
* 4 (5 or 7oz.) sea bass fillets (1 inch thick)
* 1/4 tsp. Morton Lite Salt(r)
* 1/4 tsp. freshly ground pepper
* 1/2 tsp. cumin seeds
* 1/4 tsp. mustard seeds
* 2 Tbsp. sweetened shredded coconut
* 3/4 cup chopped mango
* 1/2 cup plain nonfat yogurt
* 1 Tbsp. honey
* 1 Tbsp. finely chopped fresh mint
Preparation:
* Heat grill. Sprinkle sea bass with salt and pepper. Place on gas
grill over medium heat or on charcoal grill 4 to 6 inches from medium
coals; cover grill.
* Grill 8 to 10 minutes or until fish just begins to flake. Place
on platter; cover loosely with foil.
* Meanwhile, in medium skillet, toast cumin seeds and mustard
seeds over medium heat 1 to 2 minutes or until fragrant, stirring
occasionally.
* Cool. Grind in spice grinder or with mortar and pestle.
* In same skillet, toast coconut over medium heat 1 to 2 minutes
or until golden brown.
* Stir in cumin mixture, mango, yogurt and honey. Immediately
remove from heat. Spoon sauce over fish; sprinkle with mint.
Makes: 4 servings
Serving size: 1 filet with 1/4th cup mango raita
