I used to work for Whole Foods Market and this was one of my favorite dishes. I tweaked it a little bit to not be so fatty but it's SOOOO delish! Try it..you'll love it!

Cook your orzo according to package directions

4 Cups cooked orzo
1/2 lb. bag of spinach (or more to liking) Chopped
1 Cup slized kalamata olives
1 Cup cubed light cows milk feta cheese
1/3 cup Balsamic Vinegar
2 TB Olive oil
Salt & Pepper to taste

Again, this is very easy to work with so you can add more of something or put less in. I LOVE feta so this is a great recipe for me.

thanks. :) It is awesome....so awesome that I can't make it cause I'll eat the whole bowl. lol..last year I made it for my reunion and it was GONE!

Sheila,

You might want to try the Veggie and Orzo recipe I posted below. It has tons of veggies in it, plus feta, fresh basil and pine nuts. It's delicious and very low-cal.
