Default Egg Question

Hey Beachers!

I read the South Beach Book but it is a little unclear on some things. I am starting Phase 1. I know it is strict, which is fine. I don't mind that but I am a little confused. Each day for breakfast I plan on having turkey bacon and eggs. Is there a particular amount of eggs I can eat per day or per week. I would like to keep it simple. 2 eggs and 2 slices of turkey bacon each morning. Is this too much?

add a can of v8 and you have what i ate for breakfast every day in phase 1 and the first 3 weeks of phase 2!

You can add more eggs if you find that you are hungry again earlier than you should be. I found at first I was was hungry again a couple of hours later..so I added another egg. (I've backed off to 2 again now). And if you get bored, add some herbs to the eggs..parsley, chives, whatever. I also add a sprinkle of grated mozzarella to mine. I got sick of turkey bacon and switched to canadian bacon (the kind that is small and marketed as "pizza size")...

I also have a glass of V8 like Nessa (I don't drink it with my eggs, but about 20 minutes after I eat right before I leave for work) After that glass of V8 I'm stuffed. Never liked the stuff before, but now I really look forward to it as my breakfast "dessert"

Now, usually I am still full at "snack time" and don't even want my first snack, but eat it anyway so I don't grab something bad when I hit the door when I come home for lunch.

Eggs for Breakfast is also a good way to sneak in some veggies if you have problems getting them in. I sometimes nuke some frozen peppers and onions, or my favorite zuccini and onions then throw them in a skillet with some PAM... then add eggs or egg beaters.... Most DELISH!

I think I had eggs for breakfast every day in phase one...and for the first week or two of phase 2. They are easy to change up if you get bored...adding different veggies...good luck and welcome!!

I almost always do eggs for breakfast. Sometimes two other times three. It really depends on my mood. It really is a great way to get in veggies. I like sauteing some diced onion and chopped spinach or broccoli or even frozen stir fry veggies and then adding the eggs. Makes breakfast that much more flavorful and filling.

I still have 2 eggs for breakfast every day since i've started. I alternate between tukey bacon and canadian bacon
