LOL Robin I was going to say cauliflower too!! I never knew I even liked the stuff until I started on this, but now a day hardly goes by that I don't eat at least a cup or so of it! (raw, I don't really like it cooked yet).

I love grapefruit too but I don't eat it very often due to reactions it has with various medications.

One of my fairly recent loves is Kale. I love Kale and I get excited when I see it on sale at the store.

Liz, I eat 3 cups of cauliflower at a time. 3 cups, 84 calories and 12 gms of fiber. I eat it at least 5 times a week, cooked in a little chicken broth. Firm, not mushy

I'm not a lover of grapefruit. I've yet to try kale. It's in the spinach family isn't it? I DO love spinach and eat it often.

Kale is a green. I like spinach but I think kale has a much better flavor and texture.

I bought some cauliflower today but not sure how I'm going to cook it yet. Maybe roasted in the oven.

For all of you kale lovers out there, here is a terrific and easy recipe to try (you can also substitute spinach):

Sauteed Kale w/ Garlic and Lemon

Bring large pot of water to boil over high heat. Add 1 Tbsp salt and 2 lb fresh kale, rinsed. Stir until kale is just wilted, about 2 min, then drain and rinse thoroughly with cold water. Drain well, pressing as much liquid out as possible. Transfer kale to cutting board and coarsely chop. Heat a large skillet over medium heat, then add either 1 Tbsp olive oil or 1/4 c chicken broth. Saute 4 cloves of thinly sliced garlic for 1-2 minutes until golden. Add chopped kale and gently toss with garlic until heated through (about 2-3 min). Season with juice from one lemon and salt/pepper if desired. (Serves 4)

I just discovered fresh spinach. It's delicious! I don't like the cooked variety... yet.

Its almost summertime and my favorite veggie will be in abundant supply...yellow squash...*sigh*...yummy! I cook it with an onion and sometimes add mushrooms and/or zucchini.

I can't wait to get back to the states and get the prodcue I love and yogurt I love fresh and right off the truck so to speak. I also will grow feathers and gills from all the chicken and fish I eat. (They have warnings here about the bird flu so we conly get frozen chicken from the states.)

The food I miss the most is fage yogurt. They tried to get it in the commissary for me but no deal. I love the yogurt with fresh blueberries and oats. Healthy and just a great way to start the day.

Dolly, why don't you make your own greek yogurt? I've made it before with a coffee filter and plain nonfat yogurt. All you need to do is let it strain overnight in the fridge.

Do you just pin it over another bowl? Would cheesecloth work just as well? I think you and I have discussed this before and I have never gotten around to trying to because I was looking for cheese cloth which is another non-exsistanct item here.

Cheesecloth or coffee filter. I put a strainer on top of a bowl and put the coffee filter inside the strainer. You then dump the yogurt into the strainer/coffee filter thing and let it sit overnight in the fridge.
